Torrontés anyone? ✨ • Made from grapes located at the Alto Valle de Cafayate, in Salta province, at 1850 meters above sea level. Harvested manually at the end of March and, before pressing, they macerate for six hours. The wine ferments in oak barrels, with medium convection toasting for about a month. Once this process is finished, it is left in the barrels for 6 months and in contact with the fine lees. It is then removed from the barrels and placed in stainless steel tanks, where protein stabilization is carried out with bentonite and cold, prior to bottling. • Intense yellow fruit aromas, peach, white flowers and a subtle touch of honey. O guacamole é um ‘molho’ a base de avocado, cebola, tomate, alho, pimenta e limão [há variações na receita original de acordo com o gosto local], simples assim. O uso mais comum é como dip para tortilhas de milho, mas pode ser servido também de inúmeras outras maneiras, até mesmo como acompanhamento para saladas, use a criatividade. A “Chef” que tem verdadeira predileção por avocado, preparou um guacamole e serviu junto com burratas fresquissimas, prosciutto di Parma e grape tomatoes multicor. Na adega fui buscar uma novidade: o espumante indiano Sula Crémant de Nashik Brut Tropicale, um assemblage das uvas Chenin Blanc [70%], Riesling e Syrah [30%] para uma edição especial na versão rosé. A embalagem segue os padrões da cultura indiana, tudo com muita cor. Trabalhar na linha de frente da produção de vinho deu a Rajeev Samant - que fundou a vinícola Sula Vineyards em 1996 -, uma visão interna do mundo vitivinícola. O nome “Sula” veio de sua mãe - “Sulabha” - e simbolizava a rica herança indiana de seus vinhos. Sula é uma das empresas vinícolas mais sustentáveis do mundo, com mais de 2 MW de capacidade solar fotovoltaica instalada, fornecendo-nos mais de 60% das suas necessidades anuais de energia
O peixe chilean sea bass é um “clássico chileno” do mar do Atlântico. Lobo alto, carnudo e que lembra muito o bacalhau porque sua carne vem em forma de escamas sobrepostas. A “Chef” – uma apaixonada por peixe -, preparou um suculento filé de wild chilean sea bass na grelha, acompanhado de tomatoes e spinach baby. Na adega busquei o americano Ferrari-Carano Fumé Blanc 2022, que é um varietal 100% feito de uvas Sauvignon Blanc onde 65% do vinho estagia em tanques de aço inox e outros 35% em barricas francesas usadas por 4 meses, sur lie. O “apelido” Fumé Blan é porque antes dos anos 1970, os vinhos feitos a partir da casta Sauvignon Blanc não eram vistos com bons olhos pelos americanos em geral. Desta maneira, o que se via por lá eram vinhos pobres, diluídos e sem carácter. Isto resultava em um baixo consumo e, no final das contas, em um ciclo vicioso. Mas foi ai que Robert Mondavi conseguiu um lote especial desta casta e buscou atingir outro patamar de qualidade no seu vinho, buscando inspiração nos grandes vinhos do Vale do Loire, na França. E tentando afastar seu vinho da imagem arranhada que os vinhos baseados em Sauvignon Blanc tinham na época, ele escolheu este “apelido” para seu vinho. E até hoje, grandes vinhos são feitos inspirados em Mondavi.
