It's delicious as a single-serving, or you can make this ahead and it's party-perfect!⁠ ⁠ Prep Time: 10 minutes Cook Time: 10 minutes Servings: 1⁠ ⁠ INGREDIENTS⁠ Quick Lemony Italian Dressing⁠ • 1/2 cup olive oil extra virgin⁠ • 1/4 cup lemon juice fresh⁠ • 1/4 cup red wine vinegar⁠ • 1 tsp Dijon mustard⁠ • 2 tsps ITALIAN Spice Blend⁠ ⁠ For the salad⁠ • 1/4 cup red onions thinly sliced⁠ • 2 cups baby kale, arugula, or other leafy green⁠ • 2 oz salami chopped⁠ • 2 oz turkey chopped⁠ • 2 oz ham chopped⁠ • 1/2 oz gouda or parmesean cheese shaved⁠ • 1/4 cup pepperoncini, chopped⁠ • 1 pinch oregano, as garnish⁠ • 1 pinch black pepper, as garnish⁠ ⁠ INSTRUCTIONS⁠ ⁠ Whisk or blend together all dressing ingredients.⁠ ⁠ Place the sliced onions into a small, flat dish and pour 2 to 3 tablespoons of the dressing over them to allow them to quickly marinate while you make the salad.⁠ ⁠ Assemble the rest of the salad, then pour the onions and dressing over the top - enjoy!⁠ ⁠ #easysalad #dianessaladmadness #balancedbites #nocookrecipe #italiansalad ⁠ ⁠

Channeling #dianessaladmadness for my lunch today and added her delicious @balancedbites Greek Seasoning. Spring mix, turkey, blueberries, feta, garbanzo beans and some Parmesan chips all drizzled with red wine vinegar and olive oil. ❤️ It was maybe 5 min of work, DELICIOUS AF and an act of caring for myself during a hectic day when all I wanted was to inhale Reese’s peanut butter cups. @reeses it’s almost cruel how good your PB cups are, especially the holiday shape ones 😍😝

ITALIAN HOAGIE SALAD!🇮🇹🥖🥗 Have you tried this yet? It’s been a go-to meal lately when I feel like there’s nothing to eat, but we do have deli meat! The great thing is, you can adjust the ingredients based on what you have on-hand. Some elements I always like to include: 🥗 some kind of cured meat like salami or pepperoni 🥗 ham and/or Turkey 🥗 something sour/tart like pepperoncini and/or pickled onions 🥗 cheese: either sliced, crumbled, or shredded 🥗 croutons nuts, or seeds for extra crunch 🥗 Italian dressing made with red wine vinegar, EVOO, mustard, and seasoning that includes garlic & oregano, of course, @balancedbites GREEK blend works perfectly. REMEMBER CROUTONS?!😱🍞🧄✨When was the last time you had them on a salad?🥗✨ I’ve been making fresh croutons lately for salads and I’m truly impressed with myself 😂🤪. How I make them: - chop bread into cubes (I use @newcascadia farm house but use whatever you’ve got) - toss with @balancedbites SUPER GARLIC, EVOO, and a bit of grated pecorino Romano or parmigiano reggiano - air fry for 5-7 minutes at 375 or until your desired doneness In my giant bowl: Baby kale dressed with my own balsamic vinaigrette, green beans (cooked with garlic, ghee, and TRIFECTA - warm), the aforementioned croutons, steak we grilled yesterday (warm), fresh strawberries, @cypressgrovers Humboldt fog cheese, and some fresh cracked pepper on top! PICO + SALAD SEASON!🥗🍅If you’ve got Pico and want to make a salad, use it as a dressing along with a touch of EVOO and lemon or lime juice. Also, here’s a tip, we grill chicken thighs with @balancedbites COFFEE BBQ and they’re awesome in taco applications like this or actual tacos. Try it! SUMMER SALAD INSPO! In the form of a photo dump of salads I’ve been eating. I’ve heard from several folks recently that they don’t know how to make salads that are exciting or interesting or yummy. This is how we do it 🎶 🥗Base of GREENS (we often do a mix of romaine and some type of kale or arugula or baby kale lately) 🥩PROTEIN that’s been seasoned well, I prefer mine to be warmed up, too. It adds variety in a bite when the protein is warm, plus it helps to wilt the kale if you’re having it. 🍓Something SWEET and/or TART: on his salad are strawberries and on mine are pickled onions - either flavor profile adds depth and variation to the salad. 🧀 CHEESE! If you can do dairy, add some cheese. We love chèvre or feta because they spread around the bites most evenly, but chopping or shredding any kind you like works! We are going for umami here, so you could also add chopped anchovies or even leftover caramelized onions or mushrooms, too. 🍞CRUNCHY/SAVORY - this can be nuts (preferably seasoned like our @balancedbites mixed nuts - I used the SUPER GARLIC RANCH here and he has the SMOKY MAPLE BBQ) and/or something like croutons. I made croutons in our air fryer for these salads with leftover heels of @newcascadia farmhouse bread, evoo, and SUPER GARLIC plus some pecorino Romano cheese. It was a step above and beyond what we normally do for a salads but it was epic! I’ll definitely do that again! 🍇 GREAT DRESSING! We both have homemade versions on our salads - I used my red wine vinaigrette Italian dressing and he used my balsamic vinaigrette. I’m working on some formulas and I’m not 100% sure which will move forward but I AM making dressings for @balancedbites with EVOO that’s on its way right now from Italy 😱✨♥️🇮🇹 What’s your favorite surprise ingredient or topping for a great salad? Inspired by my friend @zenbelly, I used kale that I massaged (it helps breakdown the tough nature of the leaves) and half a mango in this salad and it was epic! Easy Kale Salad with Salmon - with Mexican Inspired Flavors🥗🐟 Base: chopped curly kale that’s been massaged (or use any greens you like) with some nuts or seeds. Ideally I’d have used pepitas but we are out, so I used some sprouted sunflower seeds. Dressing: fresh lime juice, a bit of Dijon mustard, EVOO, and SUPER TRIFECTA spice blend, shaken in a jar or whisked. For protein, use my 6-Minute Salmon Recipe (a google search will find it!) and season it with TEX MEX & TACO & FAJITA @balancedbites spice blends (or just use one or the other if you prefer). Fancy topper: an avocado & tomato salsa (because I only had a tiny bit of tomato left). Cube some avocado, tomato, and red onion and toss with SUPER TRIFECTA spice blend, lime juice, and cilantro. Our meals are sometimes really slick looking, but usually they’re more like this: a bowl with random greens for a salad and a whatever protein we’ve got, and then toppings. In this bowl: leftover salad greens from takeout we had recently, romaine, a feta & pesto chicken burger I made (similar to the Ranch chicken burger recipe in @keto.quick.start, I start with b/l s/l chicken thighs and use my food processor to get them ground up), some extra feta, homemade lemon dressing, and a BUNCH of chopped @balancedbites SUPER GARLIC RANCH nuts. Are you on any kind of food kick lately? Does this happen to you? Or are you good at getting lots of variety? To be honest, I find the monotony of being on a kale salad kick to be soothing while also providing a great template upon which to build. I change up my dressings between vinaigrettes and creamy/ranch style options (all homemade on the fly, recipes in my books), and I also change up the mix-ins. My general template: 🥬 kale 🍊some kind of fresh or dried fruit 🥜 some kind of nuts for crunch and flavor (clearly I’m using my @balancedbites seasoned nut mixes lately because they are crunchy flavor parties!!) 🧀 often, but not always some cheese like feta or chèvre 🥓 sometimes there’s no cheese, so bacon is a good add-in for umami and fat 🍅extra chopped fresh or roasted veggies (tomatoes, sometimes cucumber, roasted squash, etc.) 🥗 and dressing (pro tip: massage your chopped kale and toss in the dressing first, then prep the rest of your add ins while it softens the kale a bit) - in which I have lately been using SUPER TRIFECTA blend the most (it’s sold out ATM but we are hoping to restock by early February at the latest) 🥩 protein - always from an animal, always seasoned with a BB spice blend. THIS SALAD + the fact that there was daylight until almost 9pm last night = SUMMER. Am I right?! 🤷🏼‍♀️😂 Bookmark this post to come back to the pesto recipe later!🌿🧄🧀🍋 . In my bowl: arugula, heirloom tomato, peach, prosciutto, burrata (this is cow and I’ll pay for that, but unfortunately my grocery delivery service, @goodeggs doesn’t yet carry @bufcreamery brand 😱), then topped with balsamic. . In the center? A fresh basil pesto I made today. Here’s how... . In a food processor: 1 small bunch of Basil (remove the hard stems) 1 large clove of garlic Juice of 1/2 a lemon A small handful of cashews A couple of tablespoons of freshly grated Pecorino Romano Nice pinch of flake sea salt As much EVOO as it takes to get the texture you want. 3-4 tablespoons is usually about right for this small batch of basil. . Process until smooth. . Do you make summery salads? Have you ever tried them with a fresh pesto on top? I didn’t add extra oil to this salad since the pesto has oil and the cheese is fatty enough. Watch me build my Italian Hoagie Salad!🇮🇹🥖🥗You can change up the ingredients a bit, like swap out the base greens for others, use whatever deli meat you like (ideally including some sort of ham and salami or pepperoni helps the flavors be right), and then some onions and peppers for sure, marinated and pepperoncini make it nice. Yes, I’m making a RHONY reference there. If you’re Italian and from NJ, this salad tastes like sandwiches of your youth and you’ll love it. We will get the onion recipe on the @balancedbites blog soon, but until then, just slice red onion thinly, cover in red wine vinegar and spices until soft. Add a little EVOO to them if you want but it isn’t critical. Refrigerate them after they’ve been out for a little bit (I let them sit out for a few hours when I first make them to speed up the process which slows a lot in the fridge). I added sunflower seeds to this after the video because I realized I needed more texture! Have you made this salad yet? Happy Taco Tuesday! 🌮I’m often asked how we eat the meat we make each week in our #proteinprep - this is one common way: in a BIG SALAD.🥗🍗 I’m pretty sure there’s COFFEE BBQ chicken under there somewhere 😂. Where are my lettuce wrap lovers?!🙋🏼‍♀️🥬♥️ The Thai style meatballs from @keto.quick.start that I didn’t feel like forming turned out to be a great idea! I’ve also been using the @maryschicken ground chicken a lot lately, and it’s about as tasty as ground poultry can be! I’m a big fan. A few tips to make great lettuce wraps: 1) Choose a lettuce you love. I will go for butter lettuce, romaine, or iceberg because I love them all. Iceberg works great and is the least expensive but trickiest to get leaves in-tact off of the head... so maybe chopping into a salad is a good idea then. 2) SEASON YOUR PROTEIN WELL! Don’t skimp on seasonings! Whether you’re using spices, sauces, garlic/onions/peppers, etc. go all in! 3) Add crunch and freshness with other veggies - here I used some diced cucumber. Perfecto! 4) SAUCE IS LIFE. Seriously you need sauce. Whether it’s just a few dashes or hot sauce or you gonna all in with peanut sauce (which I did, though I added it to each wrap as I ate so it isn’t pictured here). Sauce keeps a lettuce wrap really exciting! . Are you a wedge salad fan?!🙋🏼‍♀️I’m crushing on wedge salad combinations since our trip to Tahoe last week.♥️🙌🏻🥗🥓I love that you can mix and match toppings a bit and get the fresh, crunchy lettuce as well as the creamy, tangy dressing in each bite. To make it more nutrient-dense, I took a tip from @alimillerrd and added cilantro. I am a major cilantro lover and I could eat it as lettuce within a mixed salad if I had enough of it on hand, but at this moment I was finishing a bunch off. I also added some Pico because why not?! Well, wrapping up 2019, this top 9 seems about right! Admittedly I’m glad to see only 2 memes/reposts, since in the past I think those were far over-shared by me. SALAD INSPO // One of my favorite ways to make a winter salad is with a combination of dark and light greens, sliced fruit (like apple, pear, or in this case, persimmon), some crunchy nuts (I used some homemade candied pecans leftover from Thanksgiving), and pomegranate seeds for both color/shape and the tart/tangy flavor pop. I tossed this all with my cranberry vinaigrette (recipe is in Healthy for the Holidays, an ebook we give to all Balanced Bites Insiders!), and served it alongside a big frittata to #teambalancedbites this week for one of our working breakfasts at my house. Some words about nutrition dogma (and some things I’ve eaten in the past week or so). I cycle through different approaches to my nutrition for a variety of reasons. Sometimes it’s for energy. Sometimes it’s because things feel out of balance. Sometimes I gain the same 10 pounds I gain and lose every couple of years (which I don’t think is problematic, by the way, it’s just life). Sometimes I don’t feel like eating as many veggies. Sometimes I don’t feel like eating as many carbs. Sometimes I eat more keto or more #paleo. Sometimes I count #macros and follow a more #iifym style approach. I am not defined by the way I eat. AND I HAVE WRITTEN LIKE 6 BOOKS ON DIFFERENT WAYS TO EAT. It’s okay! I don’t need a label. And, guess what? If I don’t... neither do you. I HERBY GIVE YOU PERMISSION to remove your nutrition label (and to change your mind about how you’re eating at any given time)! Eat what feels good for you, what nourishes you and what supports your health and your goals. Your food does not need to be a label or a religion. It doesn’t need to be good or bad. The problem with nutritional dogma? One day you may realize you were wrong. Or you may change your mind. Or your body is no longer responding in positive ways that it may have before. Your body may tell you it wants or needs more or less of something. If you’ve created dogma around food, you’re going to end up being more stressed out than is necessary. This is lunch for the next couple of days. I plan ahead so I don’t have to figure something out in the morning. This is the Hoagie Salad from @dianesanfilippo. This makes a great lunch and it’s easy to put together. But a salad can be any combo of veggies. You don’t need a recipe. And if you don’t want to bring an extra container for dressing you can put the dressing in the bottom of the container with the salad on top. Then when you’re ready to eat, just shake it up. Then the salad doesn’t get soggy! A little dining out customization lesson below... 🥗 Lunch date with @fullbodyfix at @littlegem.restaurant - a usual spot for us. . Here’s a tip when dining out: order your dressing on the side. I know this isn’t a major news flash to most of you. And, sure, many of us may not be scaling back fat intake all the time, but I want to remind you how invisible salad dressing quantities used can be. I was going for a higher protein and fat meal here either way, but I truly didn’t want the dressing pre-mixed in, since the salmon, feta, and cashews are all great sources of nutrient-dense fats. . When the dressing *did* come on the side, it was almost all oil, so I then asked for an extra container of *just* vinegar so I could use a tiny bit of the oil but mostly I used the vinegar on this salad. Not only did it taste better (one consistent point of feedback I’ve had about the food at LG since day 1 is that I find it majorly lacks acid), but it also was then not a salad with an unnecessary layer of extra oil all over it. . I could also have asked for the cashews and/or feta on the side but I find that what they add to the salad is more *worth it* than a bunch of extra oil would have been. . Again, this isn’t about not eating fat, but I already had three great sources of fat in this meal - especially with the double salmon - so I didn’t need what would have been about 3 extra tablespoons of oil all over it! How I do Sunday Funday: leg day at the gym with all. The. Squats. Then brunch at @littlegem.restaurant and shopping at @thesill and @rothys. I didn’t get anything at either shop today, sigh, but I did try on the newest Rothys mid top sneaker style, which ultimately are not for me though I loved them on @livefablifewithnaomi. . 🥗My order: The Marina Salad (sometimes I get dressing on the side but today I didn’t) with two orders of steelhead (it is THE BEST) and Naomi gave me the egg off of one of her dishes. I didn’t finish all of this, I ended up taking some home and finished it off a few hours later. . 🥞NOT PICTURED: almond & quinoa flour pancakes (I actually thought I took a photo of them but I guess not) of which I ate part and took most home. I then finished more of them when I ate leftovers. I left some of them for Scott or maybe myself again later if I want them. (I think @livefablifewithnaomi snapped a pic.) . I’m in a season with my food where I’m working on eating more protein and carbs and a bit less fat. It doesn’t always happen perfectly. Many days I track food because it truly is a helpful tool for me. I never limit myself if I’m hungry after hitting *my macros*, but I find I’m better able to listen to my true appetite when I can see that I gave my body great nourishment all day and if hunger is still there, it’s there and I eat. . I don’t tell you what I’m doing because I think it’s what you should do. I share to provide context to my plate (because I promised I’d share more of my food), and so that you start to learn the background of ways to eat that may feel good for you - or not - physically and/or emotionally. . Tracking isn’t for everyone - for many it’s damaging. For me it’s helpful but I can’t / don’t want to do it 24/7/365 or it feels too binding. So I don’t. Okay, so this combination with the #groundturkeygate taco meat I made earlier this week was fairly enjoyable (FOR GROUND TURKEY). I ran out of pico so I made a quick mango salsa to have on top and I really liked the sweetness with the turkey. The lime yogurt sauce here was made with 3 @balancedbites spices! See that previous manicure? That’s how you know I was holding back with this photo 😭 . So, recently I started having oral allergy reactions to raw tomatoes and it SUCKS. 🍅As far as I know, it’s related to ragweed and is seasonal and will pass BUT, LIKE, SO ARE THE GOOD HEIRLOOM TOMATOES. . What’s a girl to do? PIV-OT! Thankfully, tomato season is ALSO PEACH SEASON.🍑 . And the peaches have been 🙌🏻🔥🙌🏻 this year. Holy cow. . I AM DONE FIGHTING IT.🙅🏼‍♀️🔥You guys. For MONTHS (maybe longer?!) I’ve been so, so, so torn on what I wanted to share from this page/account/feed. This recipe is one of @dianesanfilippo's most popular (and go-to) recipes! It's so easy and completely #21dsdfriendly! Check it out: ⁣ ⁣ - 2 pounds rib eye, hanger steak, or skirt steak⁣ - 2 to 3 tablespoons coconut aminos⁣ - 1 tablespoon @balancedbites TRIFECTA blend ⁣ - 6 cups fresh arugula⁣ - 1/4 cup pumpkin seeds, pine nuts, or sunflower seeds⁣ - 4 ounces blue cheese, goat cheese, or feta (optional)⁣ - 1/2 cup Balsamic Vinaigrette (recipe below)⁣ - Coarse sea salt, for garnish⁣ ⁣ Marinate the steak: In a large baking dish, coat the steak evenly in the coconut aminos and the spice blend. Cover and place in the refrigerator to marinate for at least 20 minutes or up to 4 hours.⁣ ⁣ When you’re ready to grill the steak, preheat a grill or grill pan to high heat. Cook the steak for 3 to 5 minutes per side, depending on the thickness and desired level of doneness. Set the cooked steak aside to rest for 10 minutes, then slice it against the grain into thin strips.⁣ ⁣ While the steak is resting, assemble the rest of the ingredients in large bowls for the salad.⁣ ⁣ Add the sliced steak on top of the salad and serve while the steak is still warm. Garnish with coarse sea salt.⁣ ⁣ Balsamic Vinaigrette⁣ - 2/3 cup extra−virgin olive oil⁣ - 1/3 cup balsamic vinegar⁣ - 1 teaspoon gluten−free Dijon mustard⁣ - 1/2 teaspoon anchovy paste⁣ - Sea salt and ground black pepper ⁣ ⁣ Place all of the ingredients, except the salt and pepper, in a blender and blend on low for 10 to 20seconds. You can also whisk the ingredients together, but the dressing will not be as smooth. Taste the dressing, add salt and pepper to taste, and adjust the other seasonings to your liking. The pepperoncini I use in my #italianhoagiesalad - I buy it at @wholefoods - made by the same company who also makes the unhealthy version pictured second. 😱 I spotted the second jar at @worldmarket yesterday and was totally bummed out that while the better version is possible, the other is still made. What a bummer for those buying the one with food coloring and synthetic preservatives that may be harmful to health. Please always read your labels!
