Turkey Stuffed Peppers Healthy Turkey Stuffed Peppers Ingredients: 4 large bell peppers, any color 1 pound lean ground turkey 1 onion, diced 2 cloves garlic, minced 1 cup cooked quinoa 1 (14.5 ounce) can diced tomatoes, drained 1 cup shredded mozzarella cheese 1 teaspoon dried oregano 1 teaspoon dried basil Salt and pepper to taste Fresh parsley, chopped (for garnish) Directions: Preheat your oven to 375°F (190°C). Grease a baking dish large enough to hold the peppers upright. Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in the prepared baking dish. Family Favorite: PASTA OF ANY KIND I want to share 3 ways you can improve the nutritional quality of this family favorite in ways that don’t affect the flavor quality. 1: I used half whole wheat pasta and half regular pasta to increase both whole grains and fiber content of the meal. I boil both for the same amount of time so the wheat was softer (wheat called for 3 minutes less, so it cooked a bit longer) and by mixing the two, no one noticed! And it helps meet the goal to have half of your grain intake coming from whole grains, which helps reduce cholesterol and manage blood sugars❤️ 2: Add veggies to your meat/sauce mix. This adds bulk without adding empty calories, not to mention all the vitamins and minerals you gain. It’s an easy way to sneak veggies into your diet ❤️ 3: Use ground poultry or lean ground beef to reduce saturated fat content and empty calories. 🍗Turkey Meatballs & Sweet Potatoes 🍠 So my coworker convinced me to join this 8 week challenge with her & here I am. I’m doing bootcamp classes 5x a week and following a weekly macro plan, using whole foods and carb cycling for meal preps. I’ve been so busy 😵‍💫. This week we get to have one post workout meal per day with carbs, and I chose sweet potatoes 😋 Ingredients 2 lbs 99% lean ground turkey 1 package diced baby bella mushrooms 2 large handfuls of spinach, diced 5 cloves garlic, diced Onion powder, paprika, salt & pepper 1 sweet potato Cinnamon 1 Tbsp butter 1. In a large bowl, mix together all ingredients except for the sweet potato, cinnamon & butter. Mix well. 2. Measure each meatball into 3 oz of the mixture before rolling into shape. They’ll lose water and weigh a little less after. I was able to make 14 of them with the mixture, plus a small 1 oz one to share with my dogs 🥰🐾 3. Arrange in your air fryer, then cook for 12 mins on 400. Once done, hit them with the broiler for about 5 mins, just to get a slight crust on top. 4. While your meatballs are cooking, poke holes in your sweet potato with a fork. Wrap in a wet paper towel, and use the potato option on your microwave. (It be like that sometimes 🤷🏻‍♀️) 5. Once done, weigh out a 6.3 oz portion, then slice open & mash. Remove the skin before weighing if you don’t plan on eating it. I like it, so I keep it on 🙈. Top with cinnamon, a tiny dash of salt, and 1 tbsp butter. Minimal ingredients but highly nutritious, simple & delicious! I think these meatballs are gunna be on rotation.
