Brotsuppe, das Ex-Arme-Leute-Gericht, hebt Martin Fauster auf Spitzenniveau. In die kraftvolle Ochsenschwanzsuppe gibt er Kalbsbries, Kalbskopf und, neben geröstetem Brot, noch ein pochiertes Wachtelei. Und dann wird ordentlich Périgord-Trüffel darübergehobelt! Aus Christian Mittermairs ausgezeichneter Weinbegleitung: 2018er Chardonnay Mâcon Verzé, der mit seiner großzügigen Fülle und dem leicht salzigen Abgang perfekt passt. Vorher beweist der Chef in der Freiburger Wolfshöhle, dass er immer noch ein so gutes Händchen für Fisch hat, wie früher im Münchner Königshof: Saibling aus der Fischzucht Birnbaum gart er im Ofen nur lauwarm an, so dass er im Kern noch fast roh ist und all die feine Aromatik ausspielen kann. Dazu gibt es Rote Bete und Chioggia-Bete vom Lindenbrunnenhof, angegossen wird Räucherfond auf Saiblingsbasis. Oder Zander, ebenfalls aus dem Lechtal: auf der Haut schön knusprig gebraten ist er mit Artischocke (als Chip und Püree), Petersilie und sizilianischer Zitrone ein Genuss. Und das Dessert? Last week’s tasting with the crew at WCM ⚜️ Over the past few years I’ve really enjoyed white wine and Champagne more so than ever before. We sampled some wonderful Northern Burgundy aka Chablis (which I am a big fan of). I don’t eat oysters and shellfish (because I’m Kosher style) but nevertheless I really enjoy the Chablis region and the super interesting ancient sea bed soil type it’s coming from. My favorite wine of the night was the Bessin-Tremblay from the Grand Cru Climat Valmur. This wine was a bit of sleeper the first half of the night and then … 💥! Rules like not wearing white after Labor Day or drinking cold white wine in the winter (it was like 59-60* F degrees here!!) don’t really apply in Miami even though it felt like more of a summer time event for me. On the palate it’s very easy-going; medium body, good punching acidity, soft and slightly creamy edges, yet very stringent. Lemon, lime, sweet pineapple, nectarine, pear, hints of fudge and butter, Macadamia nuts, mild lemongrass and a fine salinity. It’s a good Chablis without any big surprises. Nice for the price. Very curious about the bigger wines from this producer. Seems promising at this level. Belle découverte du domaine sur son chablis format magnum pour accompagner une tatin de betterave/ chèvre caramélisé sauce soja/ huile de sésame avec topping oignon frit et persil frais. Souvent les chablis ont ce côté pétard, pierre a fusil un peu trop marqué mais sur ce canon on a aussi un joli fruit présent avec toujours cette mineralite et cette salinité de fin de bouche hyper sympa. Go faire une dégustation des premiers crus du domaine dès que j'en trouverais. 2020 Chablis Grand Cru Vaudesir from Romain and Damien Bouchard’s Domaine de l’Enclos. Blinded Loire Chenin for the intensity and sweetness of stone fruits and cutting acidity (rather reminded of a Jacky Blot). Seem recently getting more ripeness in Chablis than accustomed to, thinking to Thomas Pico et al. Actually took an effort even after knowing and only really started to feel like a Chablis to me after a lot of time has lapsed. Maybe it’s just a Grand Cru thing that just takes longer to unwound. Så da fikk jeg jo lyst til å prøve en tredje en til reker hjemme. Også denne var helt nydelig - naturlig, mineralsk, frisk, lang - men den var nok i kraftigste laget til reker. Så... This was my first time trying a chablis from domaine de l’enclos. On appearance the wine was clear, on the nose some excellent intensity of gun flint & salinity. Good days 🙏 Vau de vey '19 de L'enclos a été une de mes bouteilles préférées de l'année à date! Va pas sans dire que j'avais vrm hâte de goûter leur Chablis village. Beaucoup de questions!! Pourquoi du sucre résiduel, mais seulement 12,5°? Est-ce que les levures indigènes avaient terminées leur travail, est-ce qu'on a volontairement arrêté les fermentations à ce stade? Les sels chablisiens sont très loin derrière en sous plan, pas besoin d'être typique pour être bon! mais je ne suis pas certain d'avoir saisi la cuvée 🤔 Reste qu'après bcp d'air, l'arômatique s'équilibre : balsamique blanc, fleurs blanches, miel et soleil; sur une bouche ronde, gourmande soutenue par une tension de volatile. How to describe today’s Chablis in one word? #delicious Premier Cru Vau de Vey 2019, Domaine de l'enclos. One of Chablis’ coolest premier cru plots, ‘Vau de Vey’ sits on a very steep slope and faces east. Green apple, crushed oyster shells, tons of energy. The wine shows an intense yellow fruitiness. Then chalky, linear and marked by a fine, cool minerality. One could also describe this as salty. The acidity kicks in last and gently breaks it up. Without any potential for aggression, the acidity gives the wine space and length. In the aftertaste, the aromas of the nose come to the fore in a similar way.
