We enjoyed some beautiful aged Bordeaux wines at last week's birthday party. WOTN was clearly the 1988 Chateau Latour from good albeit damp storage (you can barely read the label). Beautiful bouquet of dark fruit (plum), forest floor, and tar. It had nice acidity present, very complex and long finish. The 1982 La Lagune and 1995 Chateau Clinet did not disappoint either this evening! Oh Canada! We kept it all-Canadian for #sundayfamilydinner this week. Four new-to-us @canadianliving recipes, and a Canadian wine! The meal centred around the 𝗨𝗹𝘁𝗶𝗺𝗮𝘁𝗲 𝗦𝘁𝗮𝗻𝗱𝗶𝗻𝗴 𝗥𝗶𝗯 𝗥𝗼𝗮𝘀𝘁 (which here is lying down, but whatever). It has a really unique method of cooking, and a 𝗚𝗿𝗲𝗲𝗻 𝗣𝗲𝗽𝗽𝗲𝗿𝗰𝗼𝗿𝗻 𝗛𝗼𝗿𝘀𝗲𝗿𝗮𝗱𝗶𝘀𝗵 𝗦𝗮𝘂𝗰𝗲 that I really liked (and I’m not a horseradish lover). Alongside we had their 𝗕𝗿𝗮𝗶𝘀𝗲𝗱 𝗖𝗮𝗯𝗯𝗮𝗴𝗲 𝗮𝗻𝗱 𝗕𝗲𝗲𝘁𝘀 which was a really neat & different veggie side - it never would’ve occurred to me to combine these two. It’d make a great winter dish too, both of those vegetables being so hearty & not seasonally dependent. The 𝗕𝗮𝗯𝘆 𝗞𝗮𝗹𝗲 𝗖𝗮𝗲𝘀𝗮𝗿 𝗦𝗮𝗹𝗮𝗱 was fun too - I particularly enjoyed the Parmesan crisps on top - but didn’t think the pumpernickel croutons were so different from any others to warrant tracking down a loaf of it to make these specifically. Finally, we made their 𝗚𝗮𝗿𝗹𝗶𝗰 𝗚𝗼𝗮𝘁 𝗖𝗵𝗲𝗲𝘀𝗲 𝗠𝗮𝘀𝗵𝗲𝗱 𝗣𝗼𝘁𝗮𝘁𝗼𝗲𝘀. This was mom’s attempt at being humble, because I’ve said here before that she makes the best mashed potatoes in the world due to her secret ingredient- cream cheese! Still, she decided to commit to an all-CL menu and stuck to it. Still though, her/our cream cheese mashed are better than these were. Oh well, we tried, and there nothing wrong with these - but the cream cheese ones are exceptional. Wine-wise we went with a classic Canadian can’t-fail bottle, the Pinot Noir from @sylranchwinery. Ora King Salmon and Sorrel. Moreau Naudet Chablis "Pargues" 2021 Last weekend, I found sorrel at the farmers market. I know that those garlicky ramps are all the rage in the spring, but I am more excited about this lemony sour leaves more than overhyped wild garlics.😆 So sour, even when wilted, sorrel leaves give an interesting tang to the creamy sauce, and are a perfect pair with rich salmon. This famous "Salmon and Sorrel" by La Maison Troigros in Roanne, may not win the beauty award, with the bleak, wilted leaves, but it sure is one of the most delicious salmon dishes. Oh yes, I like my salmon barely cooked, and of course it has to be sashimi-grade fresh... So tasty with lazor-precise, beautiful old vine Chablis "Pargues" @moreau_naudet , located between Vaillon and Montmains.💚🧡 연어와 소렐소스. Moreau Naudet Chablis "Pargues" 2021 지난주 파머스마켓에 갔다가 소렐을 발견했어요. 생긴건 시금치나 아루굴라와 비슷한 얇은 잎채소인데, 레몬보다 더 쨍하게 신맛이 특징이죠. 봄이 되면 미국 다이닝씬에서는 ramp라고 부르는 야생 명이나물에 열광하는데, 저는 소렐이 더 반갑게 느껴집니다. 이렇게 신맛이 나는 채소는 드물잖아요? ㅎㅎ 이 신맛 나는 이파리를 어떻게 쓰냐..하면 크림 소스에 넣습니다. 연어와 소렐.. 프랑스 Roanne의 오래된 미슐랭 3스타 레스토랑인 La Maison Troisgros의 시그너처 메뉴죠. 샬롯과 화이트와인, 그리고 크림으로 소스를 만드는데 마지막에 소렐 잎을 넣습니다. 신맛나는 소렐이 크림에 산도를 잡아주고, 기름지고 부드러운 연어에 정말 잘 어울리죠. 소렐이 익으면 색깔이 거무틔틔 하니 생긴건 영 별로인 요리인데, 맛만놓고 보면, 연어로 만드는 가장 맛있는 요리 중 하나가 아닐까 싶어요. 저는 연어를 저 정도로 거의 안익히다시피 해서 먹는걸 좋아해요. 😆 남편이 아주 잘 구웠어요..😉 물론 연어가 회로 먹을수 있을 정도로 신선해야 하지요. 연어와 소렐요리엔 응당 미네랄리티와 산도가 쨍한 샤블리나 퓰리니 몽라셰를 마셔줘야 하지않겠어요? The balance between fine tannins and cherry aromas is excellent. It also has a hint of pepper that goes well with the steak. I recommend Pinot Noir over Cabernet Sauvignon for a steak with refined sauce. The @huntandfish in midtown Manhattan is a classic New York steakhouse, but what really won me over was when the sommelier suggested pairing my porterhouse steak with Orleto, from Aia Vecchia in the Bolgheri region of Tuscany, Italy. It’s a Cabernet Franc, one of my favorite grapes, and he suggested decanting it to allow the wine to open up more quickly—he was so right! Decanting helps remove the sediment and aerates the wine. Though I admit I don’t always take the time to do it, it really does allow the more complex flavors and aromas to emerge. To decant, simply pour the bottle very slowly into a decanter. The more you know about wine, the more you realise you don’t know. It was wonderful to visit the @realwinefair on Monday with loads of our team at @glouglou_sy1 and, as well as tasting so many amazing wines and catching up with old friends, a high point was a seminar with two heroes of mine and of wine from Alsace, Christian Binner and Jean-Pierre Frick, in conversation with Christina Rasmussen - “Wine Philosophy in Practice: Idea to Glass. Exploring the interconnections of viticulture and the wine in the glass, as well as cultural perceptions and interpretations of wine.” Which sounds a mouth full but was really interesting, thought provoking and enjoyable. (Especially to a self confessed wine nerd 🧐) Not sure what Jean-Pierre was demonstrating in the photo but there was lots of talk of making wines with no additives, the response of vines to climate change, how wine making needs to respond, and how, as with contemporary art, the unfamiliar can be confusing and difficult to begin with but with time and an open mind becomes exciting and involving. And they showed the results of their work by serving a few of their wonderful wines. 'My husband and I absolutely loved the afternoon we spent participating in the “Taste of Korcula” bike tour hosted by John and Rachael! The bike tour was not too intense—though you should have some experience on a bike and there are some hills. And all of the stops were wonderful—this is a perfect way to learn more about Korcula’s agriculture and foodways, and to see some of its beautiful countryside. We especially enjoyed the time we spent on Ivan’s farm. The entire experience, which included a honey tasting on the outskirts of Korcula and wine tasting in Lumbarda, was wonderful.' FOOD & WINE PAIRING NR. 6 (Recipe in caption) Asparagus cream soup + Pinot Noir Natural Wine Wine: Heinrich - Pinot Noir Freyheit 2022 (Burgenland🇦🇹) The idea is to pair a very light, transparent red wine with fresh green asparagus taste. The striking acidity creates a contrast to the creamy soup. Lively natural wine character is complemented with the spice of rocket. Ingredients for 2 people: 12 green asparagus spears 300 ml vegetable broth 1/2 cup of cream 1 shallot 2 cloves of garlic 60g butter 20 spinach leaves salt pepper arugula to decorate olive oil 1. Set the asparagus tips aside. Cut the rest into small pieces and sauté with finely chopped shallot und 1 garlic clove in the butter for 5 minutes. When the butter starts to color, add stock and cook everything together until the asparagus is cooked. Then add the cream, simmer for another 2-1 minutes. Add fresh spinach leaves and puree finely in the food processor. Season with salt and pepper. 2. Leave the aspragus tips as they are or cut along them. Cut garlic into slices. Fry both in a little oil until golden. 3. Pour the soup into a plate and decorate with asparagus tips and garlic slices.
