Cime di rapa AKA rapini, broccoli rabe, friarielli and many many more aliases. No, I’ve not been digging up the weeds in my garden. 🪴 These are our favourite winter greens. 🥬 Cime di rapa is a brassica prized in Rome and southern Italy, especially in Calabria or Campania. Literally translated as turnip tops or turnip greens, these rugged looking greens have an iron rich, sweet and slightly bitter taste. It has spiked leaves and the buds and stem resemble wild broccoli. Indeed, should you struggle to find cime di rapa, then broccoli, cavolo nero or kale would make an adequate substitute. We’ve been using them in salads and on top of home made focaccia recently. Simply slow cooked with loads of olive oil, garlic, chilli & lemon. Traditionally you might find these greens accompanying orecchiette, the little ear shaped pasta with anchovy, dried chilli & garlic. Or in Naples where it’s affectionately know as friarielli, you might find it topping a pizza, wilted down with Italian sausage. In Italian American kitchens they have created some legendary sandwiches using this fine vegetable. Question: Is the Cuban sandwich truly Cuban or a Cuban-American-European fusion dish? 🇨🇺 🇺🇸 🇪🇺 There’s so many theories as to the origins of this mighty sarnie, it’s just impossible to definitively say. Some say that the first Cubano dates back more than 500 years to the Cuban Taino tribe before Europeans arrived. The modern Cuban sandwich is thought to have appeared during the late 1800’s and early 1900’s, when travel between Cuba and Florida was relatively easy. Because of this constant and undocumented movement of people, ideas and culture, it’s impossible to say how this sandwich originated. It’s thought that the Cuban sandwich was a common lunch for the Cuban workers of the many cigar factories and sugar mills. When these workers relocated to America (especially Key West and Tampa), they were seeking a similar lunch food. Once in America they started borrowing other ingredients from the European migrants working in America. Mainly Italian, German and Spanish, you start to see how the current version was formed. In Tampa the addition of salami comes from the Italian influence and the mustard element from Germany. The inclusion of salami like other disputed ingredients can be a sore subject, and I have neither the time nor the cohones to delve deeper. Our kitchen team have been at it again! Our specials for the weekend are some personal favourites of @chefayeshak Rumaniyya- which literally translates to pomegranatey! A sour lentil and aubergine stew, with lashing of pomegranate molasses and warming autumnal spices. Served with chargrilled quail skewers and Jordanian rose petals. Mahshi- a take on traditional stuffed vegetables. This version uses local romano peppers from Avalon organic, stuffed with jewelled freekeh and served with a feta emulsion and crispy kataifi. Vegetarian, rich and delicious, this is a real celebration of amazing local peppers And last but not least, "Llama shawarma kebab and chips." Shawarma spiced llama steaks, Douglas fir toum, Tunisian date and chilli bbq sauce, pickled green Cheddar Vale strawberries, turnips and onions, sesame flatbread, polenta fries with lashings of Jameed.
