Shrimp Zucchini Burrito Boats We love everything in a giant burrito, and these zucchini boats allow us to indulge in all the best parts without the unnecessary tortilla — think spiced shrimp, beans, corn, and loads of melty cheese🤤 INGREDIENTS: 3 small zucchini, halved lengthwise 3 tbsp. extra-virgin olive oil, divided 1 small onion, finely chopped 2 cloves garlic, minced 1 lb. small shrimp, peeled, deveined, tails removed 1 (1-oz.) package McCormick taco seasoning 3/4 c. frozen corn, thawed 3/4 c. black beans 1/2 c. chopped cherry tomatoes 1/2 c. shredded cheddar 1/2 c. shredded Monterey jack 1 small jalapeño, finely diced, for garnish Freshly chopped cilantro, for garnish INSTRUCTIONS: 1️⃣Begin by preheating the oven to 350°. Score the cut side of the zucchini, similar to how you would dice an avocado, and carefully scoop out the insides into a bowl, keeping the scooped zucchini aside for later use. 2️⃣Arrange the zucchini halves in a 9”-x-13” baking dish, then drizzle them with 1 tablespoon of oil. Bake for 12 to 15 minutes, or until they are mostly tender. Once done, remove them from the oven. 3️⃣While the zucchini is baking, heat the remaining 2 tablespoons of oil in a large skillet over medium-high heat. Add the onion and the scooped zucchini, and cook them, stirring occasionally, until they become soft, approximately 4 minutes. 4️⃣Next, add the garlic to the skillet and cook, stirring occasionally, until it becomes fragrant, about 1 minute. Then, add the shrimp and taco seasoning. Cook, tossing a few times, until the shrimp turns opaque, which usually takes about 2 minutes. 5️⃣Once the shrimp is cooked, stir in the corn, black beans, and tomatoes. Remove the skillet from the heat. Friday Fat Bomb Almond Joy Fat Bomb This makes about 10-12 5 mL (when liquid) fat bombs at about 50-55 kcals each Ratio: 5:1 Ingredients: ·        34 g coconut oil, unrefined ·        25 g almond butter ·        1 g almond extract ·        1 g unsweetened cocoa powder ·        1 small squirt liquid Stevia (optional) ·        *Option to use Choc Zero chocolate syrup for added flavor. ·        6 g unsweetened shredded coconut, divided Directions: 1.      Melt coconut oil in the microwave for 30-45 seconds until completely melted.  Melt almond butter in the microwave for 30-60 seconds until melted.  Combine coconut oil and almond butter.  Add almond extract and cocoa powder.  Mix well.  2.      Using a 5-10 mL medicine syringe, pull out fat bomb and put it into silicone mold.  Continue to mix melted fat bomb each time to ensure the almond butter doesn’t settle on the bottom.  3.      Once the fat bombs are in the molds, divide the shredded coconut evenly between each one and place on top.  4.      Put into the freezer for about 1-2 hours until firm.  These keep well and stay firm in the refrigerator.  At room temp, they hold their shape, but they are soft. WHY DO YOU NEED TO REAPPLY SUNSCREEN? A few years ago I even didn’t know you have to reapply it. I would put it 1 time before I go out and never reapplied. Then I would be wondering why I got sunburned. 😊 I was thinking maybe it is still people left who doesn’t know it still. So here is why 👇 The ideal sunscreen should be invisible and doesn’t leave a trace of white cast, SPF30 or SPF50 Sunscreen Lotion. However, this can make it tricky to tell if your sunscreen is still there after a few hours. If you need a more visual comparison, think of foundation. You can see it on skin as you apply it, but what happens to your make-up after a couple of hours? It’s not as even or flawless as the first application, and you’ve probably transferred some of it to your face mask, fingers, and more. The same goes for sunscreen! Though you might not touch your face that often, the sunscreen on your body can also rub off — on the chairs you sit on, the clothes you wear, and more. So even if you’ve been indoors mostly and the sun hasn’t fully broken down your SPF, general life things can make formula come off and leave you vulnerable to sun damage. Just like showering or swimming, sweat can wash away sunscreen and eliminate its effects. How? Well, physical or mineral sunscreen simply sits on top of the skin and blocks UVA or UVB rays from penetrating skin. Since the formula doesn’t get absorbed by skin, it’s easier for it to be removed. On the other hand, chemical sunscreens do get absorbed by the skin and neutralize UV rays, preventing them from wreaking havoc. Add soybeans and peppers, stir-fry until toasty. Pour in soy sauce, stir until warmed. Remove from heat. 3️⃣Cook Egg Noodles Whisk eggs, yolks, salt. Heat oil in pan, pour in egg mixture to form thin layer. Cook until golden, flip and cook until set. Repeat process. 4️⃣Shape Egg Noodles Stack cooked egg sheets, roll into log. Cut into noodles using sharp knife. 5️⃣Prepare Broth In large pot, bring broth ingredients to boil. Simmer for 5 minutes. 6️⃣Serve Place egg noodles in bowls, ladle broth over. Bacon, Egg, And Cheese Roll-Ups This simple low-carb breakfast is incredibly fulfilling. No bread? No sweat. 🍳🥓 INGREDIENTS: 6 large eggs 2 tbsp. milk 1/4 tsp. garlic powder Kosher salt Freshly ground black pepper 1 tbsp. butter 1 tbsp. finely chopped chives 12 slices bacon 2 c. shredded cheddar INSTRUCTIONS: Step 1️⃣: Get a big bowl and mix up those eggs, milk, and garlic powder. Season it up with some salt and pepper for flavor. Step 2️⃣: Heat up a nonstick skillet over medium heat and melt some butter in there. Toss in your egg mixture and scramble it up for about 3 minutes. Sprinkle in those chives for a little extra kick. Step 3️⃣: Lay out three strips of bacon on a cutting board. Sprinkle some cheddar cheese on the bottom third and spoon on a good amount of scrambled eggs. Roll it up nice and tight. Repeat this process with the rest of your cheese and eggs. Cauliflower Grilled Cheese INGREDIENTS: 1 head cauliflower, (to make about 4 cups processed cauliflower) 2 eggs, lightly beaten 1/2 c. finely grated Parmesan 1/2 tsp. oregano 1 1/2 c. shredded white Cheddar INSTRUCTIONS: ▫️Begin by preparing the cauliflower. Cut it into florets and then either pulse them in a food processor until they resemble rice-like texture or grate them finely. ▫️In a medium-sized bowl, combine the processed cauliflower with eggs, Parmesan cheese, and oregano. Mix thoroughly until all ingredients are evenly incorporated. Season the mixture with salt and pepper to taste. ▫️Next, heat a large nonstick skillet over medium heat. Spray it with cooking spray or use a small amount of oil. Form the cauliflower mixture into small patties on one side of the skillet, resembling slices of bread. Repeat the process to make another patty on the opposite side. Press down gently on each patty with a spatula to flatten slightly. Cook until they turn golden brown underneath, approximately 5 minutes. Flip the patties and cook for an additional 3 minutes or until golden brown on the other side. ▫️Once the cauliflower “bread” slices are cooked, top one slice with cheese and then place the other slice on top to form a sandwich.
