Delectable Bacon-Stuffed Mushroom Delight! 🥓🍄 INGREDIANTS:- 1 cup diced bacon (OR 3/4 cup real bacon bits) 1 pound whole button mushrooms (I used brown ones) 1/4 cup butter OR stick margarine 1 small onion (finely chopped) 2/3 cup breadcrumbs 1/2 teaspoon garlic powder 1 teaspoon dried parsley 1/2 cup shredded cheddar cheese Salt and black pepper (to taste) INSTRUCTIONS:- Remove stems from mushrooms. Set caps aside and chop stems finely. Cook bacon in a wide skillet over medium-high heat until turning crispy. (If using bacon bits, skip this step and stir bacon bits into filling when adding cheese.) Add chopped mushroom stems, diced onion and butter to the skillet. Cook over medium heat until softened, about 5 minutes. Take skillet off the heat. Stir through breadcrumbs, garlic powder, dried parsley and cheddar. Season with salt and pepper to taste. Heat oven to 350°F. Spoon filling into mushroom caps, pressing down to make sure it doesn’t fall out. Score the cut side of the zucchini, similar to how you would dice an avocado, and carefully scoop out the insides into a bowl, keeping the scooped zucchini aside for later use. 2️⃣Arrange the zucchini halves in a 9”-x-13” baking dish, then drizzle them with 1 tablespoon of oil. Bake for 12 to 15 minutes, or until they are mostly tender. Once done, remove them from the oven. 3️⃣While the zucchini is baking, heat the remaining 2 tablespoons of oil in a large skillet over medium-high heat. One Skillet, Endless Flavor! 🔥😋 INGREDIANTS - 1/2 lb ground beef 80/20 ½ lb ground pork ½ lb ground veal 3/4 cup grated parmesan cheese 1/3 cup blanched almond flour 2 eggs large 2 Tablespoons fresh parsley chopped 1 teaspoon kosher salt 1/4 teaspoon ground black pepper 1/4 teaspoon garlic powder 1 teaspoon Italian seasoning ⅓ cup warm water optional SKILLET :- 2 Tablespoons bacon fat or olive oil 1 cup keto marinara sauce 4 slices of mozzarella cheese approx 4 ounces Fresh parsley garnish INSTRUCTIONS:- Preheat oven to 350 degrees F. Combine the meatball ingredients in a large bowl and use a spoon to mix well. Mix in a little but of warm water if needed to help the meatball mixture stick together. Once mixed, divide the meat mixture into 16 even sized balls, (about 2 tablespoons of meatball mixture) Meatballs should be about 2 inches. Pan fry the meatballs 5-6 at a time in a large oven safe skillet or oven-safe fry pan with bacon grease. Browning them on all sides. Once all have been browned, place the partially cooked meatballs into the skillet, and pour the marinara over the top. Cut each slice of mozzarella into 4 even sized pieces, and gently place one over each meatball. Easiest way to enjoy keto chicken & waffles...Made in less than 30 minutes with just a few ingredients, this recipe is going to make your day if you are missing crispy fried chicken and waffles dredged in maple syrup. CHICKEN CHAFFLE 1 egg 2 oz canned cooked chicken ¼ cup shredded mozzarella cheese 2 tablespoons almond flour 1 tablespoon sugar free maple syrup BREADING 1 egg 1 tablespoon water 1/2 cup pork panko 1. In a small bowl, add 1 egg, canned chicken, cheese, almond flour and sugar free maple syrup. Mix until combined. Break up the chicken chunks with your fork so it's smaller pieces. 2. Pour your chicken waffle batter into the waffle maker. Close it and let cook for 3-5 minutes or until the waffle is set and can be removed easily from the waffle iron. Repeat with remaining batter. Should make two small waffles. 3. In two separate bowls, mix 1 egg and tablespoon of water in one bowl and pork panko in another bowl. 4. Dip your chicken waffle into the egg wash. Then dip it into the ground pork rinds to coat completely. Complete with other waffles. 5. To a skillet, heat avocado oil over medium heat. Add enough oil to cover about halfway the thickness of the waffle. Once the oil is hot enough to sizzle a piece of pork panko, place each waffle in the oil and fry until golden brown. Flip over and fry the other side until golden brown. Remove from heat and place the waffle on a paper towel to catch excess oil. 🔥 One-Pan Keto Pollo Con Queso INGREDIANTS - 1-2 tablespoons of olive oil 1 1/2 pounds chicken breast cut into bite sized cubes 1 teaspoon chili powder 1 teaspoon paprika 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon cumin 1/2 teaspoon oregano 1/2 teaspoon salt and pepper Keto Queso 1 4 ounce can mild green chiles 1/4 cup heavy cream + more for thinning if needed. 2 ounces cream cheese softened 1 1/2 cup shredded pepper jack cheese 1/2 cup white American Cheese INSTRUCTIONS :- Combine all of the spices in a small bowl and set aside. Heat the olive oil in a large skillet to medium heat. Add the cubed chicken to the hot skillet and sprinkle with the spices. Toss to coat the chicken evenly on all sides. Brown the chicken 3-4 minutes on each side until cooked through. Remove from the skillet and set aside. Reduce the heat to low. Add the green chiles, cream cheese, heavy cream, add the shredded cheese in small increments (about 1/2 cup at a time). Continuously stir the queso as the cheese melts until all the cheese has been used. Add additional heavy cream or milk until it reaches your preferred consistency. When you don't feel like making keto pizza but have that pizza craving, try this easy keto pizza casserole without cauliflower or ground beef! Loaded with layers of cheese, sauce, pepperoni and pull-apart keto dough 4 cups shredded mozzarella cheese, divided 16 oz cream cheese, softened 1/2 cup grated parmesan cheese 1 tablespoon Italian Seasoning 1 teaspoon red pepper flakes 3/4 cup low carb marinara sauce 3 oz pepperoni slices Pull Apart Buns 2 cups almond flour 1/2 cup unflavored low carb protein powder 2 1/2 teaspoons baking powder 2 teaspoons xanthan gum 1 teaspoon salt 1 egg 1/2 cup shredded mozzarella cheese, melted 1/2 cup unsalted butter, melted 2 tablespoons sour cream 1. To a large bowl, mix together 2 cups shredded mozzarella cheese, cream cheese, grated parmesan cheese, Italian seasoning and red pepper flakes using an electric mixer until creamy and smooth. 2. Spread cheese mixture evenly into the casserole dish. 3. Pour pizza sauce on top of the cheese layer and spread using the back of a spoon. 4. Sprinkle 2 cups shredded mozzarella cheese on top of sauce in an even layer. 5. Evenly lay down sliced pepperoni on top of the shredded cheese layer. Set aside. 6. In a food processor, pulse together almond flour, protein powder, baking powder, xanthan gum and salt until combined. Add egg, melted cheese, butter and sour cream. Pulse until the dough ball forms. NOTE: You can also mix the dough using an electric mixer. It will take longer to evenly combine. 7. Pinch off keto dough and roll in between the palm of your hands into 1/2 - 3/4 inch balls and layer on top of the pepperoni layer. Make sure the balls are touching or close to touching each other. 8. In a small bowl, mix together melted butter, minced garlic and chopped parsley. Brush on top of the keto dough. 9. Bake in a 350 degree oven for 15-20 minutes or until pull apart keto rolls are golden brown. Easy Keto Philly Cheesesteak Casserole! 🧀🥩 INGREDIANTS:- 2 pounds shaved steak Salt and pepper 1 tablespoon avocado oil 1 chopped onion 1 bell pepper cut into ½ inch strips (red, green, or yellow) 1 teaspoon garlic powder 1 tablespoon butter ¾ cup beef broth 4 ounces cream cheese cubed 16 ounces grated provolone divided INSTRUCTIONS :- Preheat oven to 350° F. Season the steak with salt and pepper to taste. Heat the avocado oil in a large skillet over medium-high heat. Add the steak and cook until browned, about 2 minutes per side. Remove from the heat. Allow to cool slightly and chop. Add the onion and peppers to the skillet and cook for 6 minutes, until softened. Add the garlic powder and season to taste with salt and pepper. Return the chopped steak to the skillet and stir to combine. Remove from heat. Meanwhile, melt the butter in a saucepan and add the beef broth. Bring to a simmer over medium-high heat. Reduce heat to medium and add the cream cheese. Cook, whisking often until the cream cheese is melted. Reduce heat to low and add in 8 ounces of the provolone cheese. Cook until the cheese is melted. Add the cheese sauce to the steak mixture and stir to combine. Transfer to a casserole dish and top with the remaining cheese. Bake for 25 to 30 minutes until bubbly and heated through.
