Finally, the debut of my butterfly tarts (and strudel). I’ve learned so much through this journey. It’s a complicated design (intentional), and I really wanted to stretch myself in techniques, flavors and overall design. Key learnings: - Freeform tarts are time consuming and hard to keep upright, even with pie weights. - Most are made with short crust/pate sucree. I had tried American pie crust, but it wasn’t sturdy enough, and had to remake it. - American vs European style butter reacts differently in this dough. My recipe is based on Julie Jones’s short crust recipe, so 82% butterfat butter was the way to go. - Always use a spatula to lift, never your hands!!!! 3 tarts broke when lifting, - 1 tart broke in the oven-I’ve no idea why. And there were a bunch of 4 letter words expressed when that occurred. - I had to remake 4 tarts. King Arthur flour and Domino owe me some love. ;-) - OTOH, broken tarts are still yummy. So the flavors are: 1. apple/cinnamon/salted caramel 2. blueberry/mascarpone 3. blackberry ganache in a black cocoa shell 4. raspberry mousse in a chocolate shell, with a touch of ground almonds, 5. strawberries with a strawberry mousse including valhrona strawberry chocolate layer in a strawberry shell 6. lemon meringue 7. key lime with royal icing and feathering via green icing 8. pumpkin with lots of spice 9. passion fruit with caramel dots in a tart shell made with ground macadamia nuts, 10. peach curls in a peach puree/mascarpone/balsamic vinegar/cardamom 11. And for the “body” of the butterfly chocolate/coconut strudel. My initial drawing (done in parchment paper) shows what I was going for. Key lime tarts take 2! They went so much better this time. I did a swiss meringue instead of a french baked meringue this time, just to change it up, and it was so fun! Crusts were also so much better baked in proper mini tart pans. I used Paul hollywoods sweet crust pastry as the tart shell, and the filling was pretty basic key lime filling. Ingredients: Tart shell: Paul hollywood recipe from ‘how to bake’ Filling: 14 oz can sweet condensed milk 3/4 cup key lime juice 4 egg yolks Swiss meringue: 4 large egg whites 200g sugar Pinch salt 2 tsp lime juice Recipe: Make sweetcrust pastry as instructed Preheat oven to 350° Cut out into tart shells, and put fork holes in bottom Put into fridge for 30 minutes Put parchment paper and baking beans in tart shells and bake 15 minutes Take out baking beans and parchment paper, bake an additional 5 minutes While tart shell bakes prep filling Juice key limes Add egg yolks to mixer and put on high for 4 minutes till thickened and lighter in color. Add sweetened condensed milk to yolks and continue mixing till thickened once more, about 4 minutes. Add in lime juice till mixed in, mixture should be thickened and full Pour filling into baked tart shells, put back into the oven for 15-18 minutes Take out and let cool, must be cooled to add meringue Meringue instructions: Combine egg, sugar, and salt in metal bowl over simmering water pot Continue to stir mixture till warm to touch and all sugar is dissolved Beat the meringue in a stand mixture on low speed till foaming, 2-4 minutes Continue to beat gradually going higher till you achieve stiff peaks Add in lime juice and beat to mix in Pipe or spoon meringue onto cooled tarts Optional: blowtorch or broil tops of meringue to brown for color #keylime #keylimetart #baking #pastry #homebaking
