Sorting through my books and magical cabinet today I came across some forgotten friends - the sun banner was made for a solstice over 20 years ago but I'm going to resurrect it for a Midsommar celebration, the Mjolnir banner made about 10 years ago will do very nicely for some current work with Thor/Thunor, altar cloth for work with Norse and East Anglian traditions and a Holly themed costume from a moot ball over 30 years ago, those who know me know that the Holly is my totem plant and the fox is my totem animal. Cake Number 2 has just gone into the oven - a Swedish soured cream and green cardamom loaf (kardemummakaka) which I have bastardised from the wonderful Magnus Nilsson’s @magnusfaviken’s BEAUTIFUL “Nordic Baking” (2018) [I had dining at Fäviken on my bucket list but alas it cannot be now - I have Slippurinn on Vestmannaeyjar on my list now instead!]. I have used freshly crushed green cardamom seeds rather than the fine ground form they sell in jars in Sweden (as my jar is nearly empty!) and thus reduced it from 1 tbsp to 1 tsp then augmented it with 150 μL of a food-grade green cardamom essential oil (sold with an emulsifier added). Yes I did measure 150 μL with a Gilson micropipettor: I’m a scientist: I use laboratory balances and pipettes etc in the kitchen for precision and tbh, because I’m so used to using them, speed! By rights the tin should be coated in butter and fine soft white breadcrumbs made with my own fair hand but I found a few years ago that Japanese パン粉こ (panko) that are big and crunchy make for a nice texture in the pan-edge of cakes etc once cooked, so I tend to use that now. #kardemummakaka #greencardamum #greencardamon #cardamon #cardamom #cardamoncake #cardamumcake #swedishcake #swedishrecipe #magnusnilsson

Składniki na 1 bochenej: # 250ml letnie mleko lub woda, u mnie mleko # 25g świeże drożdże # 1 łyżeczka sól # 25g miękkie masło # 380g silna mąka, u mnie Manitoba Całość robisz w robocie: do misy wlej mleko, wsyp pokruszone drożdże, mieszaj przy pomocy haka, aż się rozpuszczą. Dodaj pozostałe składniki, mieszaj przez około 10-12 minut, aż ciasto będzie gładkie i lśniące. Przykryj misę i odstaw w ciepłe miejsce na 30-40 minut do wyrośnięcia, ciasto powinno podwoić objętość. Uformuj bochenek na blaszce, przykryj wilgotną ściereczką, zostaw jeszcze na 20-30 minut, aż podwoi objętość. When it comes to the perfect afternoon bite lately I’ve been into these seed crackers from The Clean Plate by Gwyneth Paltrow. The Seed Cracker is Super easy, and storable for up to a week. Dress em up any which way for an afternoon pick me up that’s anything but boring. Seed Cracker 1/2 cup flaxseeds 1 tbsp arrowroot powder 1/4 tsp kosher salt 3 tbsp black sesame seeds 3 tbsp white sesame seeds 3 tbsp hulled pepitas 1 cup boiling water Flaky sea salt Preheat oven to 320 F In a medium bowl, mix together all the ingredients except the flaky salt. Lay a large sheet of parchment paper on your work surface and use a spatula to scrape the seed mixture onto the paper. Top with another piece of parchment and use a rolling pin to roll the mixture into an 8x11, 1/4 inch thick sheet. Transfer to a baking sheet and carefully peel off the top layer of the parchment (go slowly, as a few seeds may stick to it). Sprinkle with flaky salt and bake for 45 minutes. ⭐️⭐️⭐️⭐️⭐️ My favorite read of 2023 was Hanna Pylvainen’s The End of Drum-Time, an incredible novel about the Sami people responding to the clash of cultures with the ruling Nordic class as they impose Christianity and close the borders with Norway to force the Sami people out of their traditional reindeer herding grounds. Much of the history is seen through a tender love story between Willa, the daughter of a Lutheran minister sent to convert the Sami, and Ivvar, the son of one of the most respected Sami herders. Reading The End of Drum-Time inspired me to seek out more literature about the Sami, and how perfect that a new novel in verse, Aednan, about the Sami conflicts from the time of the border closings to present was just published! Linnea Axelsson’s exquisite novel is as good as The End of Drum-Time, if not better. Through three different generations we see the death and rebirth of Sami culture in Sweden. An absolute must read! I’ve been playing with Scandinavian pastries for a few weeks now, using the excellent book The Nordic Baking Book as a guide. These are Swedish cinnamon rolls, using a cardamom infused brioche base. I like that these can all be done in a half day, unlike the brioche recipes I’m used to, this one doesn’t have an overnight proof. This is @magnusfaviken in his astoundingly beautiful orchard and home, Axelstorp in South Sweden. ⁠ ⁠ We had been longing for a visit since we spoke to Magnus in 2021 for our podcast, Transform the Food System. He had just bought Axelstorp — a historic apple orchard on an 18 hectare plot of land on the South West Swedish coast. It’s a rare find, an orchard that produces 250 tonnes of apples, but isn’t trellised. The oldest tree dated back to the 1870s, with most planted from 1942-1961 featuring diverse varieties that matured in succession. Today, Magnus is building on this diversity. These are Icelandic Thick Pancakes/pan fried bread from the Nordic Baking Book by @magnusfaviken . They weren’t terrible but did come out pretty thick and slightly rubbery. Why? Recipe called for soft wheat flour and I figured regular wheat flour would be fine. Actually when books refer to soft flour it’s referring to literally a light flour like cake flour. Probably would have made a huge difference! In a moment of “the slow, drag-y bit between exam marking and exam admin being due in”, I have made a limemåne [leem-mawnuh, kind of: “a lime moon” in Danish] ce soir, for work tomorrow. The picture is minus the glaze (icing sugar, lime juice that I’ve reduced by 75% to intensify the flavour and lime zest). It is my bastardisation of the very traditional Danish citronmåne [“a lemon moon”] in which I swapped lemon for Persian lime but also added lemongrass [citrongræss] and lemonbalm [citronmelisse] for some depth and interest: they both really help Persian lime to show its depths (@nikisegnit makes a lot of good points about using lime as a flavouring in her two Flavour Thesaurus volumes - links in bio if interested). It has a most curious pearlescent batter - second image - it is a fairly normal, dense, low-aeration cake batter at first, into which a second batter made of butter and marzipan creamed together with sugar and eggs to make a thick foam is added. Folded together and straight into the oven, it gives this sort of pearl-y shine on the top in a puffy layer that falls back as it cools and gives a fairy compact cake yet a light texture: the one I did in February for work went down very well, at least! The marzipan dissolves completely and just becomes almond powder, basically. My version is based on that of @magnusfaviken (book is linked in bio, also) but I’ve messed with it quite a bit over the last year - both the base recipe and changing the flavours around. I’ve done citronmåne proper, citrongræssermåne [lemongrass] on its own, this limemåne, appelsinmåne [orange] with a TRACE of cassia, and I’m toying with doing a low-level bergamot one but bergamot behaves badly if you are not careful and becomes violently bitter - may need to play with that one a bit before I inflict it on my esteemed colleagues! #citronmåne #limemåne #lemonmooncake #danishlemoncake #danishrecipe #danishrecipes #danishbaking #denmarkfood #danishfood #danishcakes #lemongrasscake #lemonbalmcake #magnusnilsson #thenordicbakingbook

Today’s bake: Swedish cinnamon rolls with fresh cardamom. Very pleased!! There’s something about them that is just comforting and sits well. Believe or not, cinnamon rolls are not my favorite! These are ‘Danish Birthday Buns,’ from The Nordic Baking Book by @magnusfaviken . Aka Fødselsdagsboller, they are quick to make. They often have raisins baked in and served with Danish flags on someone’s birthday, but I took out the raisins to have some awesome light wheat rolls to go with our soup.
