Can’t get enough of @we_are_food One Pan, One Pot, One Planet. While we’re at the end of the month for @rainydaybites #rainydaybitescookbookclub, this one isn’t going back to the bookshelf. Many more to tackle. This one is the Pea, Preserved Lemon, & Herbs Tart (or something like that). I used preserved lemon that I had made earlier this month. I also didn’t have feta so I opted for ricotta on top. Phyllo always seems to be in the freezer. Beans & peas made it packed with protein. Delicious brunch! Lover’s Pasta!   . The very first time that Rebekah and I went to lunch together we were just “friends”.  We both worked at the same TV/film production company in LA and this lunch was “totally professional”. The only problem was that I was insanely in love with her. That was years ago. Time flies when you’re having fun... and raising four kids. We call them the crowded years.  That first lunch was at a sidewalk restaurant on Sunset Blvd was amazing. Maybe it was the company, but with a glass of ice cold Rose, this dish got seared into my memory bank as what lovers should make together. We have now transformed the meal in many ways. Radish and pea (broad bean) salad from @ottolenghi and @sami_tamimi The Cookbook. This was an easy, fast to prepare and super delicious salad for a beautiful spring day. This is also great side for anything from the grill so I see my self cooking this during the whole barbeque season. I made couple of minor changes to the recipe I used peas instead of broad beans and I sliced the radishes instead of cutting them into wedges. First the peas were blanched quickly for 1-2 minutes to keep the beautiful green colour. Next the radishes were thinly sliced and mixed with the peas, thinly sliced red onion, coriander and parsley leaves, finely chopped preserved lemon, lemon juice, olive oil, ground cumin, salt and pepper. The salad was transferred to a serving plate which in my case was this one of my favourite white bowl from @raaka_ra ❤️ The salad was served with green tahini sauce which was made mixing tahini, crushed garlic, lemon juice, water, salt and finely chopped parsley. The green tahini sauce is great addition to grilled veggies and bread too. Delicious! Yo cand find a link to the recipe from my bio! School’s almost out and it’s been too hot to cook but this morning I realised I’ve been living on eggs and takeout for longer than is acceptable. Made some Hyderabadi-style, tamarind-rich khatti dal for the first time, and although I usually have an aversion to anything overtly sour, this was rounded out by a pinch of sugar and a redolent ghee tadka with thinly-sliced garlic chips, curry leaves, mustard seeds, cumin and a pinch of chilli powder. Finished off with a floral spike of green herbaceousness courtesy some finely chopped fresh coriander. Seeing as I’ve never sampled this dish before, I have no clue how true-to-form this recipe is, but the dal tastes great and comes together in under an hour. Last month, I attended a floral styling and photography masterclass with @lucytheflowerhunter, @t.j._mcgrath_design, and guest designer @francespalmer at @jardindebuis. The following week, I attended a quick pickling class at @chocolatesandtomatoes farm. Both experiences encouraged me to give myself permission to play and experiment with new ideas. I decided to create an arrangement of carrots from my garden that pays homage to the beauty of pickled vegetables 🌿🥕🌿 What do you think—do vegetables work in a decorative arrangement? On June 2, Lori Lankford and I will be teaching a floral photography workshop (with bouquet making, still life scenes, and photography in the garden) at the beautiful @glennleighfarms in Frederick, Maryland. 🔸️Green Basil Leaves🔸️ Still in green mood, these are a few of my basil leaves shots I took while making pesto pasta the other day for April @foodartproject Inspired by the incredibly talented @bealubas and her take of photographing raw ingredients like green ingredients and also inspired by my dear friend @charlielovestobake when it comes to finding the mood and shadows. What do you think of the light? How does it change when taking the photography from a different angle? I always use natural light, and here, of course, I used my Macro lens. ISO was automatically adjusting depending on the light at the moment, from 640 to 100 Edited with Lighroom adjusting the green hues and shadows Scroll to see until the pesto was done with those rough textures from the nuts and garlic. Quinoa and wild garlic cakes with salbitxada sauce キヌアと行者にんにくのパティ、サルビチャダ・ソース 添え: recipe from #plentymore by @ottolenghi Recently I’ve been trying to eat more quinoa (because I’ve got a big bag of it to use up) and wild garlic (as it’s in season and I love it. ) This recipe combines the two of them in an interesting way. With the lovely Catalan sauce called salbitxada and some salad leaves, the patties make a delicious complete meal. For the cake, cook the quinoa and mix with sliced wild garlic, chopped red onion, cottage cheese, Cheddar cheese, beaten eggs, green chillies, breadcrumbs and cumin. Shape the mixture into patties, fry them with olive oil and finish off in the oven. The patties may easily crumble but it’s not the end of the world as they are still delicious. Vegan ANZAC Biscuits 🛬🍪🇦🇺⁠ ⁠ A vegan twist on a traditional Aussie biscuit recipe. 👌⁠ ⁠ For my overseas friends who might not know what ANZAC day is about essentially Anzac Day is a national day of remembrance in Australia and New Zealand that broadly commemorates all Australians and New Zealanders who served and died in all wars, conflicts, and peacekeeping operations and the contribution and suffering of all those who have served. Observed on 25 April each year, Anzac Day was originally devised to honour the members of the Australian and New Zealand Army Corps (ANZAC) who served in the Gallipoli campaign, their first engagement in the First World War (1914–1918). 👇⁠ ⁠ It’s a special day for a lot of people and a bit of an Aussie tradition is to eat ANZAC cookies - a cookie with oats and coconut. It has been claimed that these biscuits were sent by wives and women’s groups to soldiers abroad because the ingredients do not spoil easily and the biscuits kept well during naval transportation. 💜 ⁠ ⁠ Alright, history lesson over. Back to the recipe. MAJOR thanks to my friends @mckenzies for this recipe - DELISH!! 👅⁠ ⁠ INGREDIENTS 👇⁠ 1 cup rolled oats⁠ 3/4 cup Fine Desiccated Coconut⁠ 120g plain gluten free flour⁠ 100g caster sugar⁠ 100g vegan butter or coconut oil⁠ 2 tbs maple syrup⁠ 1 tsp Bi-Carb Soda⁠ 2 tbs hot water⁠ ⁠ METHOD 👇⁠ Step 1⁠ Preheat oven to 180°C or 160°C (fan forced). Add the oats, desiccated coconut, flour and sugar into a mixing bowl and stir until well combined.⁠ ⁠ Step 2⁠ Melt the butter in a saucepan over low heat or use coconut oil then add the maple syrup and stir gently until combined.⁠ ⁠ Step 3⁠ In a small bowl, add hot water to the bi-carb soda, mix to dissolve then add this to the melted butter mixture.⁠ ⁠ Step 4⁠ Add the butter mixture to the dry ingredients and stir gently with a wooden spoon until combined well.⁠ ⁠ Step 5⁠ Take a tablespoon of mixture and roll into balls. Place these on a lined baking tray and flatten gently keeping them 2 cm apart.⁠ ⁠ Step 6⁠ Bake for 12-14 minutes until golden and transfer to a wire rack to cool.⁠ ⁠ Lest we forget.

Fennel and red pepper bake from @ottolenghi Guardian food column (23th Mar 2024). Oh my I loved this one! Beatiful pairing roasted fennel and toasted peppers with tasty tomato sauce not forgetting the crispy topping. We had it with smoked trout. Just delicious! First fennel wedges were mixed with olive oil, salt and pepper and roasted in the oven for 30 minutes. Next mix the red pepper strips with olive oil, salt and pepper and put them in the oven and bake alongside the fennel for 25 minutes. Meanwhile the fennel and the peppers were baked in the oven thinly sliced onion and garlic were fried in a pan until caramelised. When ready white wine was poured in to the pan and it was left to simmer for 10 minutes. Next roughly chopped tomatoes, orange peel, salt and pepper were added and left to simmer again for another 10 minutes until the sauce were thickened. When ready roasted fennel and peppers were added together with olives, oregano leaves and some water to the sauce. The mixture was poured into an oven dish and topped with bread crumbs, coarsely grated cheddar, roughly crushed fennel seeds, chopped parsley leaves and olive oil and baked for 30 minutes until the crust were Beautifully golden brown and crispy. 𝘾𝙝𝙖𝙢𝙥𝙨 𝙙’𝙖𝙜𝙧𝙪𝙢𝙚𝙨 🍋 Just when we thought spring was around the corner, we decided to create our own little dose of Vitamin C and some sunshine, using the last of the citrus fruit. We wanted this dessert to taste like what we were visualizing and embodying: relaxing in grand pastures of wild flowers with the scent of oranges and lemons in the air, sunshine filtering through the rustling leaves, ladybugs appearing on the palm of our hands and butterflies and bees dancing around. These were our « welcome to spring » little meringue nests dusted with turmeric, and filled with zesty lemon curd, greek yoghurt whipped chantilly, segments of orange, blood orange, lemon, and lime, slivers of kumquat, ginger jelly, and little airy tufts of a lemon-poppy seed cake, all tied together with a bangin’ herby passionfruit vinaigrette. The sweet crisp meringue, the acidity of the citrus, the soft and smooth lemon curd and chantilly, and just that bit of soft cake, topped with the seasoned vinaigrette made it feel like a party in the mouth and was a true textural delight! We could call it the dessert equivalent of chaat, and we LOVE a good chaat. P.S. We’re still waiting for spring! 🌸
