Coming home dinner😂🌱 Stir-fried broccoli with juicy sticky tofu and baked mashed potatoes😋 Tofu Torn in small chunks, marinated w soy sauce and sriracha. Covered w cornstarch and fried ( pan or oven) Broccoli florets are cooked for some minutes i salt water to get tender then fried w spring onions in a pan. Season w salt& pepper Sauce Soy sauce, rice vinegar, brown sugar, sriracha if you like it spicier, 1 cup water and cornstarch. Whisk well together and pour it over the broccoli. Let simmer till the sauce thickens, then add the fried tofu chunks. Easy quick home office lunch - Miso Ramen soup w vegetable mix and beans🌱😋 Super delicious, quick and healthy...just perfect combination protein, carbs having enough energy to still work the afternoon, but not heavy you re just falling asleep after😂 Fry spring onions, garlic, ginger and all kind of vegetable you like or you have in your fridge (cut in small pieces)..here red bell pepper, zucchini&eggplant ( however eggplants are not the best fit). Add 1 Tbsp Miso paste, a pinch of curcuma and let absorb the flavour. Then pour about 500/600ml water and let cook till the veggies are almost tender. Add beans ( protein), I had also some baby spinach leaves and add the noodles. Cook for some more min ( 5ish) and ready. Season w some soy sauce and sriracha ( if you like it spicier) to taste. White beans vegetable stew w rice - easy comfort dinner🤤👏🌱 High protein, low fat and carbs! Two portions 1 onion, or 2-3 spring onions 1/2 red bell pepper 1/2 zucchini 1tomatoe 1 can white beans 2 gloves garlic 1thumb size ginger piece Tomatoe puree or canned tomatoes Small packet coconu cream/ milk( 150-200 ml) Fry the onions, garlic and ginger ( all finely chopped or grated), add some curcuma let absorb the flavor and add the chopped other vegetables. Stir fry for some minutes. Pour the beans, 1 cup of water, a vegan broth cube, tomatoe puree and let all simmer on medium heat till the veggies are soft ( about 10-15min). Season if needed w soy sauce, pepper or some sriratcha (if you like it hot) to taste. Stir in the coconut cream and springle some coriander ( optional) Ready is a creamy, healthy and conforting stew. Monday dinner - BRAISED BASIL AUBERGINE🤗🌱 By @the_foodiediaries Soft and juicy chunks of aubergine braised in a sticky garlicky sauce w fresh basil and roasted cashews Just mouthwatering🤤🥰 Start by slicing a large aubergine into cubes. Salt generously and leave them to rest for 20-30 minutes to draw out the excess moisture. In the meanwhile, mix together a quick sauce with: -1 tbsp dark soy sauce 2 tbsp light soy sauce 1.5-2 tbsp rice vinegar - 2-3 tsp brown sugar - 3 tbsp water + 1/2 tbsp corn flour Completely pat-dry the aubergine slices with paper towels. Optional: lightly coat the slices with corn flour Lightly pan-fry the aubergine slices in 1-2 tbsp oil, stirring regularly to ensure that the slices cookthrough evenly. Once the pieces are golden-brown and butter soft in the middle (test with a fork plunged in the centre), stir in: - 3-4 cloves of minced garlic - 3-4 tsp gochugaru/ chilli flakes Cook for a few minutes until fragrant. Then pour in the sauce, gently mixing to ensure that the pieces are evenly coated. Let the sauce come to a lively simmer. Then drop in toasted cashews and fresh basil (measured with your soul). Thursday dinner Vegan Kung Pao Tofu🌱🤤spicy, juicy and so delicicious & easy to make Idea ( a bit altered) by @frommybowl Firm tofu torn i chunks Add some soysauce, sriracha and cover w cornstarch Fry in a pan or in the oven Veggies, in principal you can use any. I used red bell pepper and broccoli ( pre- cooked it some minutes to have it more tender, but optional), handful peanuts or alternatively cashews Sauce Soy sauce, vegan oyster sauce ( optional), rice vinegar, agave siroup, chilli or sriracha, water, corn starch. Whisk all well together. Fry in a pan 2 garlic cloves, 1 spring onion and a good thumb size piece ginger - all finely chopped pressed or grated) for some minutes Add the vegetables, and peanuts/ cashews and fry some more minutes. Add the sauce and let cook and simmer for some minutes. Add the fried tofu and mix all carefully. Season w some sesame oil - gives this special twist. Serve with rice or noodles. Quick mixed lunch of left over lentils w pasta and freshly cooked sticky sesame tofu👍unusual mix, but tasted amazing🌱🫶💚 Had not much time for cooking today, second last working day before a little lovely Easter break🤗☀️🌸 Sticky sesame tofu: Tear a firm tofu in mouth size chunks, marinate w soy sauce, sriracha a siroup ( any, here agave) Coat with cornstarch and fry in a pan till crispy. Place it in a paper towel to absorb the oil and i the meantime just add 2-3 Tbsp soy sauce, 1/2 a cup water, 1 tbps rice vinegar, 1 tbsp sesame oil and some agave siroup to taste in the pan. Let it boil and add cornstarch to thicken the sauce. Add the tofu chunks and some sesame seeds ans ready👍 you can combine this w everything here I used my left overs fm the night before. Light Saturday lunch - creamy asparagus soup w toast🤗🌱🤤 soooo good and healthy..yes, I did it again😂 I had fresh white asparagus for dinner last night😊 After cooking the aparagus I let all the peelings and and end stems simmer in my asparagus water for some hours and used this broth as a basis for the soup. You could even drink it like that, it is very healthy and cleansing. For the soup I melted vegan butter and added 2 Tbsp all purpose flour to obtain a thick paste. Here I poured the asparagus water by stiring firmly with a whisk to avoid little lumps. Season with vegan broth cube, pepper, nutmeg and salt for taste. Tuesday dinner- my all favorite tofu in the moment🤗🤤sticky pineappple tofu by @vegan_punks Here with white rice and bok choy Healthy, easy and soooo yummy💯🌱💚 Here again thecrecipe for the tofu Ingredients (serves 2) 400g super-firm tofu 4 garlic cloves 1 tbsp ginger 2 spring onions 1/2 cup pineapple juice 1 tsp rice vinegar 2 tbsp soy sauce tsp cornflour + water Sesame or any other oil Instructions 1.Tear up your tofu, toss it with soy sauce and cornstarch and fry or bake it until crispy 2. Take out of the pan and add some more oil and heat and fry off the garlic, ginger and spring onions at medium heat for some minutes 3. Pour in the pineapple juice, rice vinegar and soy sauce (+ optional msg), bring to a simmer 4. Mix the cornflour with a splash of water then pour into the sauce and stir well. 5. Throw in the fried tofu and coat in the sauce. Sunday dinner-fried eggplant ("eggplant- Schnitzel") w crispy mashed potatoes and creamy broccoli🌱🤤🫶 Again my crispy mashed potatoes🤭, they are sooo good and this time as a side dish ( recipe i my previous post) This fried eggplant is amazing and easy to make Recipe by @herbifoods 1-2 eggplants oil salt flour 1 tin of chickpeas/aquafaba breadcrumbs 1Pick the eggplants with a fork, rub with a little oil and bake at 220°C for about 25-40 minutes until very dark on the outside. 2 Place the eggplants in a bowl, cover with a plate and leave to steam for 5-10 minutes 3 Remove the skin and carefully flatten with a fork. Salt both sides and then pat dry with a kitchen towe Coat with flour, aquafaba (as an egg substitute) and breadcrumbs 6 Heat the oil to 170°C and fry on both sides until crispy and golden-brown. Then place briefly on kitchen paperl to soak up the excess fat. Ready, here served w creamy broccoli and crispy mashed potatotes. Crispy mashed potatoes💯🤤this is just wooaw...so crispy, crunchy, yummy🌱🤤💚 And super easy...idea by @fitgreenmind Cook the potatoes in saltwater until forktender. Meanwhile prepare a marinate by combining olive oil, salt, pepper and paprika powder ( or any spices you like) Once the potatoes are ready, place then on a baking tray w baking paper ( here aluminium, I didn't have paper, but it s ok too) Mash them with a glass and coat after w your marinate. Zucchini fritters w creamy herbal dip🌱💚 Just mouthwatering🤤🤗 by @weareveganuary I posted the recipe in a former post, but it s so good I repost it😁😋 Courgette mix 1-2 courgette 2 tsp salt Flax egg: 1 tbsp ground flax 3-4 tbsp water Remaining courgette mix: 2 spring onions 1 tbsp each of chopped fresh parsley and mint Dash of nutmeg 1/2 tsp each of black pepper and salt 25g plain flour 50g golden breadcrumbs 35g vegan feta ( optional) Method: 1.Start by releasing the liquid from the courgette by grating into a bowl and stirring with salt. Set aside for 10 mins. 2. Create your flax egg combining flax with water and set aside for 10 mins. 3. In a bowl, combine your spring onion, fresh herbs, seasoning, flour, breadcrumbs and vegan feta. 4. Strain all of the liquid out from the courgette using a sieve your hands a cheese cloth, just make sure all the liquid is gone 5. Combine your courgette and flax egg into the mixture. Be careful not to over-stir as this could create more liquid from the courgette 6. Thursday dinner - typical German dish but veganised🌱😊 Soooo yummy🤗🫶 "Spaetzle" w red cabbage and vegan nuggests ( bought) Spaetzle ( kind of pasta or dumpling) Flour Semolina Salt Plantbased milk ( here soy) and lukewarm water A pinch curcuma ( for the color) Vegetable oil Mix all together to obtain a sticky wet batter. Drip the batter either with a knife from a kitchen board, small stripes (or with a special "Spaetzle tool) into boiling water where their shape is formed as soon as they hit the hot water. This is what makes spaetzle so unique. It is a side dish you can serve like pasta w vegetables and a protein source which is mostly meat in german kitchen. Tuesday dinner🌱🤗 Creamy lemon pasta without cream...fantastic yummy, quick and easy Recipe by @foodie_lilly Ingredients Silken tofu 2-3 garlic cloves 1 tsp of dijon mustard and miso paste Juice of 1 lemon and zest Chilli flakes Pasta of choice, I used paccheri (250g) Salt + black pepper Fresh basil Method 1. Blitz together silken tofu, garlic, miso paste mustard, chilli flakes and lemon juice. 2. Cook pasta is salted boiling water until al dente. Reserve a mug of pasta water. 3. Heat the creamy lemon sauce in a pan over nedium heat for approx 5 mins while pasta is cooking. 4. Add the cooked pasta te to sho the couce. sauce, mix mix until until fully coated. Add a little pasta water to create a silky texture, keep adding pasta water until you get your desired consistency. (the pasta absorbs a lot of the water) 5. Soulfood pur🫠🤗sticky pineapple tofu w rice and green beans...so full of flavour, just mouthwatering🤤💚 Recipe by @vegan_punks Ingredients (serves 2) 400g super-firm tofu 4 garlic cloves 1 tbsp ginger 2 spring onions 1/2 cup pineapple juice 1 tsp rice vinegar 2 tbsp soy sauce tsp cornflour + water Sesame or any other oil Instructions 1. Tear up your tofu, toss it with soy sauce and cornstarch and fry or bake it until crispy. 2. Take out of the pan and add some more oil and heat and fry off the garlic, ginger and spring onions at medium heat for some minutes 3. Pour in the pineapple juice, rice vinegar and soy sauce (+ optional msg), bring to a simmer 4. Mix the cornflour with a splash of water then pour into the sauce and stir well. 5. Throw in the fried tofu and coat in the sauce. Broccoli Pasta - quick and healthy recipe by @fitgreenmind - super yummy veganuary recipe🤗🌱🫶 RECIPE (3 servings, 20min prep time): -1 broccoli -250g pasta Boil the broccoli l in salted water for about 20 min ( easier to mash) and use the water for the pasta after -3 cloves garlic Fry in oil for a minute then add the broccoli. Easy Friday comfort dinner💯🌱 Mashed potatoes, veggie burger with fried onions gratinated w vegan cheese and white cabbage...sooo yummy and good after a looong week - "me-time and evening"🤗🫠 Mashed potatoes: Peel and cook 3-4 potatoes i salt water ( I quarter them) till soft. Mash them with a fork, add 1 cup warm vegan milk (I used soy, but you can use any you like), 1-2 Tbsp vegan butter, season with salt, pepper & nutmeg to taste. Veggie burger bought from garden gourmet, cover with fried onions and vegan cheese and bake for some minutes till the cheese has melted Cabbage: I used a quarter of a whole cabbage...gives already a good portion for 1-2 people. Cut it in small slices or grate it. Fry 1onion sliced in rings until crispy ( add a pinch of salt and a tbsp water to acoid burning) Add the cabbage, fry some minutes then add 3-4 cups of vegan broth and 1 tbsp cumin. Let cook for about 1hour to get it soft. Add 100 ml vegan cream and season with salt& pepper to taste. Simple & Delicious Turnip Rutabaga Nimono! 西洋カブ、ターニップとルタバガの煮物 I love CSA, getting organic vegetables from a local farm @goldenearthworm . One of the interesting things about CSA is that you receive vegetables that are unfamiliar to you. In this case, I got a lot of turnips and rutabagas. Although these are not typical Japanese vegetables, I decided to cook them in a traditional Japanese way called ‘Nimono’—a simmered vegetable dish. I loved how this turned out; discovering a new vegetable dish that tastes like home! How to: 1. Peel and chop turnips and rutabagas. 2. Simmer turnips and rutabagas in konbu and water with sliced ginger. 3. Add soy sauce, sea salt, mirin, sake, and maple syrup to taste. 4. Cook on medium heat until the veggies are tender. 5. Thai curry noodle soup🌱🔥perfect and warming for these winterly days... By @joysplantbasedkitchen 1-2 package of rice noodles 1/2 onion diced 2 cloves garlic minced Small nub ginger minced 3 stalks of large bok choy or 2-3 baby bok choy separate leaves from stems) stems cut on diagonal and leaves sliced - I had none, so dud it without, also perfectly fine 1 medium carrot julienned 1 bell pepper cut into bite sized chunks 3 heaping tablespoons of Thai red curry paste 6 cups veggie stock or water with a tablespoon of better than Boullion vegetable paste 1 can coconut milk or 2 cups of soy milk. Sriracha to taste/ I added a red chilli for the spice instead, and got really hot🔥😅 Juice of of 1 lime In a hot wok or a large saucepan, add the onions and stir around for a few seconds. Then add the garlic and ginger. Add a little water so it doesn't burn. Stir in the red curry paste and coat everything in the pan Pour in all 6 cups of water or vegetable broth. lf using water, also add the boullion. Then, pour in can of coconut milk or soy milk. Add your ,carrots and bell pepper to the broth, cover and allowto come to a boil. Turn the flame down to medium/low and add noodles. Coverand allow the noodles to cook. They don't take long ( 3-5 min). Add soy sauce to taste and lime juice and green onions (optional). Clean the vegetables ( carrot, bell pepper, leek, fennel bulb, courgette) and cut them into stripes/rings/dice, put them into a rectangular oven dish and mix a marinade from olive oil, agave syrup, salt, pepper, oregano and thyme and mix veggies with the marinade. Place in oven at 180°C (ventilation) for 30 minutes. While veggies are baking, clean Portobello mushrooms, take out the stem, place them in another rectangular oven dish and squash and mix tofu (I freeze tofu, then thaw it in the fridge and press it, to get rid of excess liquid and it will take on flavour easier) chopped cherry tomatoes, pepper, salt and some oregano with a fork then place some of the mass into each mushroom. Sprinkle with vegan pizza cheese. Add Portobello dish and frozen fries to the half baked vegetables and bake all for another 15-20 minutes. Friday dinner🌱🫶 vegan "Schnitzel" wiith roasted onions and carrot-leek- potatoe stew🤤 Quick, easy and super yummy💯 Cut 1 big onion in cubes or rings and roast on medium heat till golden and crispy. Add a pinch of salt and sugar and 1-2 Tbsp water to avoid burning. Saturday night almost Xmas dinner🤗🌱🫶 Finally red cabbage...as I didn't find it here in France I prepared it myself and it wasn t that much work and the taste is amazing💯💥 1 red cabbage ( I used only half - and got enough still for today and tomorrow😂) 1 apple 1 big onion Veggie stock (~500 ml) Red wine ~ 500 ml Vegan butter 4-5 bay leaves 3-4 cloves Use a big pot..roast the cut onions in a generous amount of vegan butter, add the apple ( small slices) and roast some more minutes. In the meantime grate the cabbage ( or cut very thinly) and add to the onions Pour the wine, vegan broth, add the bay leaves and cloves and let cook for a minimum 90 min or longer, depending how soft you like the cabbage. For me the longer the better, plus all the flavours unfold stronger after a long cooking time. Hot peanut cream- coconut soup w spinach and rice noodles🙏🤤Obsessed with soup in the moment😂🫶so cold and nasty outside and this is the perfect comfortfood...looove it 🌱💚 1/2 onion 1 garlic glove 1 thumb piece ginger 2-3 cups vegan broth 200 ml coconut milk 1 big Tbsp peanut butter/creme 1 carrot, 1-2 mushrooms Rice noodles Spinach ( baby leaves) Soy sauce, miso paste, sriracha, curcuma, curry Fry the onion ( small cubes) for some minutes, add the garlic, ginger, miso paste, 1tsp curcuma and curry. Roast some minutes to let all flavours unfold. Vegan "meatloaf" 🌱(Hackbraten) w mashed potaoes... just amazing good 💯💥recipe by @veganekraft Saturday night cookig....after lots of work the last weeks and traveling, enjoying finally a cozy evening at home and trying new recipes - loving it🤗💚 "Meatloaf" 200g lentils - 1 onion - 1 can red beans - 1-2 carrots - 3- 4 mushrooms - 3 Tbsp Tahini 60g bread crumbs - 2 Tbsp tomato paste - 2-3 EL soy sauce - 1 Tbsp mustard - 1 Tbsp oregano - 2 Tbsp Ketchup Sauce: - 1/2 an onion - 1 Tbsp tomatoe paste - 2 Tbsp soy sauce 250ml Wasser - 1 Tbsp garlic powder, oregano, thym - 1/2 Tbsp cinnamon Cook the lentils as ususl till soft. Cut the carottes, onions & mushrooms in small cubes and roast all in a pan. Add tomatoe paste and some red wine and let simmer for some minutes Smash the beans w a fork, then mix the lentils and cooked vegetables together in a bowl. Add the other ingrediants and mingle all well to obtain a thick mixture. Place in an oven form and spread a thin layer of ketchup or BbQ sauce. Let bake for 35-40 min ( 200 C°) Meanwhile prepare the sauce- Fry the onion ( I also fried another mushroom) in the pan we used before for the veggies. Another Yay or Nay, where we rate off-the-shelf plant based items and this one is in between. This Trader Joes Vegetable Pad Thai has a good taste, but not outstanding or Yay worthy, so we rated it OK. It is a microwaveable item and in a pinch would be perfectly good to grab and go. The portion isn't generous but it isn't small. Overall I might keep in the freezer for one of those hectic nights, but I'm not going out of my way for it. Easy mid week dinner 🤗 sweet- spicy sticky tofu, oven roasted eggplant- onions in olive oil w black rice🌱💯 😋 Roasted eggplant- onions: Cut the eggpplants and onions in cubes, place in a baking dish, drizzle generously with olive oil and season with salt, pepper, paprika powder and cumin. Roas in the oven for about 40 min (210 C) till soft Tofu: Dry pat the tofu and part in small chunks, marinate w 3-4 Tbsp soy and 1-2 agave siroup for 15 min. Add 2 Tbsp cornstarch shake to get thr pieces well covered. Fry in a pan for some minutes till golden crispy. Thai Cashew Tofu Stir-Fry🌱💯 by @veganezer Spicy, full of flavour, just yuuummmy💚 --1 block tofu, torn into chunky pieces -80g raw cashews -4 garlic cloves, roughly chopped -1 small onion, chunky diced -3-5 fried chilies, seeds removed and cut into big pieces -1 small zucchini ( original mushrooms, but altered it as I had no mushrooms🤦‍♀️) - 1/2 red bell pepper - 4-5 spring onions, cut into pieces, I used 2 carrots instead Tofu Marinade: - 1 tbsp soy sauce - 1 tsp sugar - 2 tbsp cornflour Stir-Fry Sauce - 1 tbsp soy sauce - 1 tbsp vegan fish sauce - 2 tbsp vegan oyster sauce - 1 tsp sesame oil - 2 tsp sugar - 1 tsp cornflour Some tbs water to thin if necessary 1.In a bowl, combine the torn tofu with the soy sauce, sugar, and cornflour for the marinade. Mix well to coat the tofu. Set aside for 10 minutes to marinate 2. Heat 2 tablespoons of oil in a wok or large skillet over medium heat. Stir-fry the marinated tofu for 5-7 minutes until golden brown and crispy. Remove the tofu from the wok and set it aside. Toast the cashews in the same wok until browned, then remove and set them aside. 3. In the same wok, add the remaining tablespoon of oil. Stir-fry the garlic, onion, and dried chilies for 2 minutes until fragrant 4. Add the zucchini, red bell pepper, and carrots to the wok. Stir-fry for an additional 2-3 minutes until slightly tender. 5. In a small bowl, whisk together all the ingredients for the stir-fry sauce: soy sauce, vegan fish sauce, vegan oyster sauce, sesame oil, sugar, and cornflour 6. Pour the stir-fry sauce into the wok and mix well with the vegetables. Cook for another minute until the sauce thickens 7. Add the cooked tofu and toasted cashews to the wok. Stir-fry for 2 minutes to heat through and combine the flavours. 3. ZAALOUK a moroccan naturally vegan salad/ dip...just amazing flavourful and easy to prepare🤤🤗🌱 By @recipesandplaces Ingredients (serves 4 as a side or one big dip to share) 2 aubergines/ eggplants 3 tomatoes 2 green pepper (long variety) 2 tsp paprika 1 tsp cumin Black pepper to taste Salt to taste A bunch of fresh coriander A bunch of fresh parsley Prepare the aubergines and peppers on a baking tray. Poke the aubergine with a foro on all sides. Brush the vegetables with olive oil and cook at the highest temperature (250 C) for about 20/25 minutes until charred on both sides. In the meantime bring some water to the boil, make a cross cut in the tomatoes on the top and add the tomatoes to the water, wait for 30/40 minutes and remove from the water. Now peel the tomatoes, and cut them into small cubes. n a pan heat up some olive oil, add grated garlic, then add the tomatoes, salt, the spices and the fresh herbs. and cook until the tomatoes are very soft. When the vegetables are done, cover them for a few minutes (to create steam) to make it easier to peel Peel both aubergines and peppers, cut the aubergines very finely and the peppers in small pieces. Add them to the pan with the tomatoes and mix to combine and cook for a few more minutes. German dinner "veganised"😂🙏🌱 Potatoe salad, cucumber salad and a vegan "Schnitzel" Childhood memory😊 my german friend was visiting and cooking🤗 Potatoe salad dressing Oil Vinegar Onions (roasted- optional... I don t like raw onions😂) 1 cup vegegetable broth Salt & pepper to taste Chive (optinal) Whisk all ingrediants together (except for the onions) and pour over the cut potatoes.
