jumping into May with this simply amazing plant-based plate🌱 breaded tofu, asparagus, brown rice tofu is one of my go-to vegan proteins to cook and eat as it’s so versatile and can be made in so many different ways. if you’re not a fan of tofu or you don’t know how to prepare it, I’m sure you will like this recipe! (2 servings) breaded tofu: - 180g tofu - 40g soya milk - 40g corn flour - 10g soya sauce - curry, paprika - 1 tbsp olive oil slice the tofu, pat dry with a paper towel and set aside. whisk together milk and soya sauce. combine the flour and spices. take your tofu slices and submerge them in the milk mixture, then place in the flour mixture. repeat until well coated. sprinkle with the oil and bake or fry or use air fryer. sides: cooked brown rice and asparagus + olive oil

10-Minute Chilli Oil Noodles 🌶 By @thrivingonplants Serves: 1 Ingredients 1 serving of noodles (I used fresh wheat noodles) Protein & veg of choice The Sauce Base: Light soy sauce Dark soy sauce (optional, see method 3) Sweetener of choice eg. brown sugar Sesame oil Chinese chilli oil Optional add-ins: Fresh minced garlic and/or ginger Sesame paste if you want it to be creamy A splash of black vinegar for an extra kick of flavour + tartness A few toasted sichuan peppercorns, ground up finely 1. Bring a small pot of water to the boil. How did your noodles and cook according to packet instructions. In the last minute I add in the bokchoy. Drain, rinse with cold water and set aside. 2. In the meantime, fry up your tofu or protein of choice. You can also just add thinly sliced pieces of firm tofu to the boiling noodles instead (even quicker!). 3. In a large bowl, add in about 1 tbsp light soy sauce, a tiny splash of dark soy sauce (for colour), sweetener to taste (around 1-2 tsp), sesame oil (1/2-1 tsp) and a as much chilli oil as you’d like. Here you can also use any of the recommended add-ins as mentioned in the ingredients list above. Whisk well until combined. 4. Add in the noodles, greens and tofu and mix until well coated. Garnish with sesame seeds, green onions, and cucumber. Creamy Chickpea Bowl By @veganfoodcrazy INGREDIENTS: 1 tbsp oil 1 tbsp red pepper flakes 2 cloves garlic sliced thinly 2 boxes chickpeas, drained & rinsed 1 cup marinara sauce 8 oz vegan Greek yogurt 1 tbsp dried oregano 1 tbsp sumac Salt & pepper to taste METHOD Start by heating your oil over medium heat, add the garlic and red pepper and sauté for about a minute. Add the rest of the ingredients and bring to a boil. Lower the heat and simmer for about 5 minutes. The longer you simmer the more the it will dry out . 🥦Following a plant-based diet for CKD? Make sure you are getting vitamin B12! 🫑Plant-food does NOT contain vitamin B12 naturally. Although the body can store B12 for 2-5 years, it's important to be getting adequate amounts of this vitamin as deficiency can be dangerous. 💉Vitamin B12 levels can be tested in the blood, but it doesn't always correlate with the vitamin B12 inside the cells which is where the magic happens. Other lab markers that may indicate a B12 deficiency is an increased level of methylmalonic acid (MMA) and an increased homocysteine. Although keep in mind an elevated homocysteine can happen in other situations besides B12 deficiency. 🍎As a dietitian, I do promote a food first approach to meeting nutrient needs. But fortified foods might not be enough in the case of B12. If you plan to follow a plant-based / vegan diet long-term, you should consider taking a supplement. Green Pea Stew with Smoked Tofu by @dragana_dzajevic (Ready in about 40 minutes / Serves 4) Ingredients 1 medium leek, chopped 1 large carrot, sliced 1 parsnip, sliced 2 garlic cloves, minced 2 cups vegetable broth 1 cup tomato sauce 1 pound green peas 4 ounces smoked tofu, cubed Directions Preheat a stockpot over medium-high heat. Once hot, sauté the leek, carrot, and parsnip for about 4 minutes, adding a few tablespoons of water and stirring continuously. Then, sauté the garlic for about 30 seconds, until aromatic. Add the broth to the pot and bring it to a boil; add the tomato sauce and green peas and turn the heat to a simmer. Let it simmer, partially covered, for about 30 minutes. Ladle green pea stew into serving bowls and top them with smoked tofu. 10-Minute Chilli Oil Noodles 🌶 By @thrivingonplants Serves: 1 Ingredients 1 serving of noodles (I used fresh wheat noodles) Protein & veg of choice The Sauce Base: Light soy sauce Dark soy sauce (optional, see method 3) Sweetener of choice eg. brown sugar Sesame oil Chinese chilli oil Optional add-ins: Fresh minced garlic and/or ginger Sesame paste if you want it to be creamy A splash of black vinegar for an extra kick of flavour + tartness A few toasted sichuan peppercorns, ground up finely 1. Bring a small pot of water to the boil. How did your noodles and cook according to packet instructions. In the last minute I add in the bokchoy. Drain, rinse with cold water and set aside. 2. In the meantime, fry up your tofu or protein of choice. You can also just add thinly sliced pieces of firm tofu to the boiling noodles instead (even quicker!). 3. In a large bowl, add in about 1 tbsp light soy sauce, a tiny splash of dark soy sauce (for colour), sweetener to taste (around 1-2 tsp), sesame oil (1/2-1 tsp) and a as much chilli oil as you’d like. Here you can also use any of the recommended add-ins as mentioned in the ingredients list above. Whisk well until combined. 4. Add in the noodles, greens and tofu and mix until well coated. Garnish with sesame seeds, green onions, and cucumber. ✨Based on the recommendation to eat 30 different plants a week, we almost knocked that out in ONE DAY✨ with this dinner!🥙 PITA with homemade hummus (made with some fresh dill), cucumber, red onion, red cabbage, lettuce, vinaigrette, and @morningstarfarms Garden Veggie patties.🔥 The kids LOVED it, it was inexpensive, easy to make and easy to eat! With the weather getting warmer I start craving lighter meals, this is definitely going to be a new go-to. BROCCOLI CAESAR SALAD 🥦🫶🏼 by @healthygirlkitchen ✨ingredients: - 1 head broccoli cut into florets - 1 can rinsed and drained chickpeas - parmesan (I use vegan parmesan) ✨must-have cashew caesar dressing (free recipe from my cookbook!!): - 1 cup raw cashews - 1 tbsp olive oil - 2 tbsp lemon juice - 1 tbsp capers - 1 tbsp caper brine - 1 tsp dijon mustard - 1/2 tsp salt - 3/4 cup water - 1 tsp garlic powder - Pinch of pepper How to: 1. Preheat oven to 425 F. Line a baking sheet with parchment paper. 2. Cut up broccoli and rinse and drain chickpeas. 3. Add the broccoli and chickpeas to a baking sheet. Spray on olive oil and season with a little salt, pepper and garlic powder. Roast for 25-30 minutes. 4. While it roasts, make the dressing by blending all the ingredients in a high speed blender. 5. Add the broccoli, chickpeas, dressing (as much or as little as you’d like), and garnish with vegan parmesan. 6. Enjoy!

Back home! Yakima was great but it is so nice to be able to get back to my normal routine. Rice and zucchini for dinner tonight. I went for a walk in the rain after work and found a gorgeous snail. And there is a pic of my breakfast and lunch that I packed for work, overnight oats and a mushroom lentil soup. The soup is really good, and I made enough for the week. Soup is: 2 carrots 1 onion 1 russet potato 1 lb sliced button mushrooms Sauted in the pressure cooker. Then add: 1 cup lentils Veggie stock Water Italian seasonings with garlic and onion Smoked paprika Parsley Pressure cooked for 8 mins Add a can of diced tomatoes. I added Israeli couscous at the end cause I added too much water. It’s been fun exploring some new vegan restaurant and trying new dishes and ingredients. Featured here is @hummusrepublic in 📍Livermore, CA. They also have multiple locations throughout the bay. I tried the mushroom shawarma and it’s amazing! I do wish they had garlic sauce though! Their wrap and pita bread is vegan and they offer an extensive menu of vegan choices and options. There has been some confusion! Instructions: 1. Preheat oven to 350 F. Add all wet ingredients to a bowl. Then add dry ingredients. Mix then add chocolate chips. Mix. 2. Pour into baking pan and bake for 40 minutes. 3. Enjoy! Store in fridge and reheat when you want to eat! 2️⃣ Bookmark CHICKPEA CHOCOLATE CHIP COOKIES 🍪✨ Ingredients: 1 15 oz can of chickpeas rinsed and drained 5 pitted dates 1/2 cup creamy peanut butter 1/4 cup rolled oats 1/4 cup coconut sugar 1/4 maple syrup 1/2 cup vegan chocolate chips plus extra for topping 1 tsp vanilla 1/2 tsp baking powder 1/2 tsp baking soda sea salt garnish instructions: 1. Preheat oven to 350 degrees F and prep and baking sheet with parchment paper. 2. Blend all ingredients in a food processor except chocolate chips, baking powder and baking powder. 3. Blend until smooth scraping down the sides as necessary. 4. Blend in the baking soda and baking powder. Pour in the chocolate chips and stir with a spoon until combined. Make the cookies about 2 tbsp of cookie dough. Use a spoon because it's sticky to touch. Flatten a bit. Add extra chocolate chips on top. This yields about 14 cookies. 5. Bake for 13-15minutes. They will be soft but they'll firm up. 6. Enjoy besties! . .
