Cook penne according to packet instructions. Save the pasta water when you drain. 2. In a small saucepan add the pesto paste and a small amount of the pasta water, stir together. Add drained pasta and beans and mix together. 3. Add vegan cream cheese and stir in. Add more of the pasta water as needed. Add chopped spinach last, then season (I used black cracked pepper and Italian herbs) and lemon juice. 10 MINUTE CABBAGE UDON NOODLES 🍜 by You might have spotted we’re going through a bit of a ‘noodle’ moment right now. Noodles are one of our go-to speedy meals - and this cabbage udon dish is total winner with toasted cashews and crunchy cabbage. Enjoy 😋 Serves 2 🌿 40g (1.4oz) cashews, roughly chopped 🌿 vegetable oil 🌿 2 shallots, peeled + sliced 🌿 1/4 cabbage, chopped (see notes) 🌿 3 spring onions, sliced 🌿 3 garlic cloves, peeled + chopped 🌿 300g (10.6oz) udon noodles, we use quick cook noodles (see notes) 🌿 1 tbsp light soy sauce 🌿 1.5 tbsp dark soy sauce 🌿 2 tbsp maple syrup 🌿 1 tsp toasted sesame oil 1️⃣ Heat a wok or pan on a medium-high heat. Throw in the cashews and toast for 2 minutes until golden. Then transfer the cashews to a plate and drizzle a little oil in the wok. 2️⃣ Add the shallots and fry for 2 minutes. 3️⃣ Then add the cabbage and fry for another 2 minutes. 4️⃣ Add the spring onion and garlic and fry for 1 minute. 5️⃣ Now throw in the noodles and cashews from earlier, followed by the light soy sauce, dark soy sauce, maple syrup and sesame oil and stir until combined and hot. Then serve. Enjoy! Roxy + Ben Notes: ✏️ We use straight-to-wok style udon noodles, also known as ‘quick cook’ noodles, which only require minute in a hot pan to cook through. Alternatively you can use dry noodles and cook them separately in a pot of hot water, then drain them and add them to the wok. ✏️ We use regular green cabbage, which is the most common variety you’ll find in supermarkets. But you can also use Chinese cabbage (also known as napa cabbage) or even Savoy cabbage. ✏️ You can always throw in any other veggies you might have lying around. Courgette, carrot and mushrooms will work really well in this recipe too. Mediterranean Farro & Butter Bean Salad! Simple, filling & unbelievably flavorful ~ my favorite food! When I’m cooking, I often prepare extra grains or beans & stick them in freezer for quick meals. This salad comes together quite easily if the farro is already prepared. I used canned butter beans too Mixed greens (baby kale, red lettuce & spinach), chopped fresh herbs (dill & chives), farro, butter beans, artichoke, roasted red & yellow peppers, sun dried tomatoes, red onion, Kalamata olives & sunflower seeds. For me it felt like I was always going back to the drawing board. I became obsessed with looking for the one thing that was causing my eczema flare ups. I knew I had a candida prone gut, and thought the only way to deal with my symptoms was to cut out more more food, use more creams, blame my morning coffee or blame my inability to avoid carbs. If you are vegetarian, vegan or plant-based you'll understand that avoiding carbs is not realistic (nor is it healthy). Things changed for me when I changed my approach. The invisible reason why your cleansing teas, your candida cleanse, your candida diet (that was never meant for vegans), or the numerous anti-fungals you continue to purchase have not worked... Is because none of this nurtures or promotes a healthy gut microbiome. In order to start seeing real results you need to address the root cause which is an imbalance in gut bacteria, not the yeast itself. When you begin to understand that the yeast is supposed to be there, you don't look at it like it's a monster you keep feeding anymore. You begin to see them as playing a role in your microbiome, you begin to listen to see as messengers instead of villains. Vegan Daniel Austin had a fantastic powerlifting meet, breaking his already massive squat record. Last summer he set four records in the 75 kg (165.2 lbs) category for Masters 40-44. He’s just improved his squat record, taking it to 207.5 kg (457.4 lbs). He also holds the records for bench (135 kg or 297.6 lbs), deadlift (232.5 kg or 512.6 lbs) and total (572.5 kg or 1262.1 lb). Daniel has been vegan since age 22 in 2005 out of respect for animals and recognising the cruelty of animal agriculture. He qualified for the US Nationals for the first time in 2018. Since then he’s taken second at the IPL World Championships and won first place at the USPA Nationals in the submasters for three years running. “I’m proud of the records I set as a vegan lifter in a state that people commonly associate with stereotypes that are the antithesis of veganism” he says. “When I first started winning local meets in Texas, back around 2015-2016, fellow lifters and judges often cracked jokes about veganism – sometimes to my face, but mostly within earshot, but these days all I hear at meets is support, respect, and curiosity about how to be strong as a vegan. After 4 years in the making, new documentary ‘I Could Never Go Vegan’ launched last week! I had the honour of being invited by Dr Lyn Barham of @transition_bath to join the Q&A panel at the screening at @picturehouses @littletheatrecinema on Monday (which happened to be Earth Day!) Sitting alongside me on the panel were the hugely inspiring Tom Pickering (Film Director & Producer), Claire Palmer (Founder & Director of the Animal Justice Project) and 86 year old Ultra Marathon Runner Paul Youd. It was wonderful to see so many of the Plant-Based Health Professionals UK featured in the documentary, as well as scientists, environmentalists and vegan athletes, all of whom have inspired me so much! ✨ I’ve watched a lot of vegan documentaries in my time, but I can honestly say this is by far the best I’ve ever seen. It is highly informative, inspiring, engaging, witty, yet also hard hitting. It addresses all the classic arguments against vegan diets in a constructive way using science and facts. Vegane Proteinriegel Zutaten: 1 Tasse gepufftes Quinoa 1/2 Tasse getrocknete Cranberrys 1/4 Tasse Kakaonibs 1/4 Tasse Kürbiskerne 1/2 Tasse Honig oder Ahornsirup 1/4 Tasse Mandelbutter oder Erdnussbutter 1 Teelöffel Vanilleextrakt Eine Prise Salz Optionale Gewürze: Zimt, Ingwer, Muskatnuss Anleitung: In einer großen Schüssel das gepuffte Quinoa, die getrockneten Cranberrys, die Kakaonibs und die Kürbiskerne vermengen. Gegebenenfalls Gewürze hinzufügen und gut mischen.In einem kleinen Topf den Honig oder Ahornsirup bei mittlerer Hitze erwärmen, bis er flüssig wird. Die Mandelbutter oder Erdnussbutter hinzufügen und gut verrühren, bis eine gleichmäßige Masse entsteht. Vom Herd nehmen und den Vanilleextrakt sowie eine Prise Salz unterrühren.Die Honig-Mandelbutter-Mischung über die Trockenmischung in der Schüssel gießen. I’m always going to be a firm tofu girlie but I’m actually loving silken tofu like this lately…straight out of the pack and cut into slices, served on top of spinach and veggie fried rice then topped with warm peanut satay sauce 🤤 tofu has so many health benefits and this meal is a really simple and easy way to incorporate more into your diet. White beans vegetable stew w rice - easy comfort dinner🤤👏🌱 High protein, low fat and carbs! Two portions 1 onion, or 2-3 spring onions 1/2 red bell pepper 1/2 zucchini 1tomatoe 1 can white beans 2 gloves garlic 1thumb size ginger piece Tomatoe puree or canned tomatoes Small packet coconu cream/ milk( 150-200 ml) Fry the onions, garlic and ginger ( all finely chopped or grated), add some curcuma let absorb the flavor and add the chopped other vegetables. Stir fry for some minutes. Pour the beans, 1 cup of water, a vegan broth cube, tomatoe puree and let all simmer on medium heat till the veggies are soft ( about 10-15min). Season if needed w soy sauce, pepper or some sriratcha (if you like it hot) to taste. Stir in the coconut cream and springle some coriander ( optional) Ready is a creamy, healthy and conforting stew. Taking about 2 tbps of the dough at a time, roll the dough into balls. To do this, place the dough in the palm of one hand, and then close your other hand over the dough so that you can use the palms of both hands to gently shape the dough into balls. The balls should be about the size of a large chesnut (a little smaller than a golfball). Pour the coconut onto a plate. Roll the balls in the coconut, making sure to coat all the sides. Use the palms of your hands to reshape the ball, and then roll in the coconut again. The carrot cake bites can be eaten right away, but they are denser if you chill in the refrigerator for an hour before serving. Walnut and Blueberry Oat Bake (serves 2) Aldi Price per serving (w/MyProtein powder): £2.94 Per serving: Cals 1220 Carbs 168g Pro 57g Fat 30g Ingredients 2 scoops protein powder (70g) 110g oats 130g oat flour 1 tsp cinnamon 1 tsp baking powder 2 medium ripe bananas 250ml soy milk 40g walnuts, crushed 160g raisins 150g frozen blueberries 1 tbsp ground chia seeds 1 tbsp ground flax seeds 2 tbsp soya yoghurt (for serving) 70g raspberries and blueberries (for serving) Method Preheat the oven to 180C/155F. Line an 8 x 8-inch baking pan with parchment paper. In a bowl, combine the protein powder, oats, oat flour, cinnamon and baking powder. Mash the bananas in another bowl and combine them with the soya milk. Add this mixture to the bowl of dry ingredients and combine well. Add in crushed walnuts, raisins, blueberries, chia and flax and gently mix one last time. Transfer the mixture to the prepared pan and press down evenly and firmly. Bake in the oven for 20 minutes, or until lightly golden. Allow to cool for 10 minutes and then cut into 2 servings. Thursday Throwback from 2017! Competing equipped in the under 84kg category, she squatted 205.5 kg (452lb) which took the national Icelandic record. She already has the Icelandic benchpress record (120kg). 29 APRIL 2017 This time she benched 92.5 kg and deadlifted 182.5kg. Part of the reason for the lower bench was that her coach had a number of lifters competing and didn’t have time to prepare Hulda for this lift with her bench press shirt. “It was a nice meet” Hulda told us soon afterwards. “Everything went as well as possible. As it is not so long until the European Championships so we didn't want to go full in this time.” Hulda has her sights set on the May competition where she hopes to improve on the excellent 479.5kg total. Coming from a nation known for their dedication to strength sports, many will be keenly watching Hulda’s progress.
