When the explorer Matthew Flinders sailed into a South Australian bay in 1802 which named Coffin Bay I doubt if he would have thought it would become one of the great oyster growing areas of the world. It’s just a short drive from Port Lincoln and we went there for lunch a few days ago. Lunch in Coffin Bay means oysters. Most top restaurants in Australia will serve Coffin Bay oysters so we went to the source. Lunch @1802oysterbar was quite delicious and I wish we lived closer to eat there more often. My clothes by comparison were just comfy travel style.

I claimed it yesterday as a treat at the end of the week, with news about what’s happening at #cop26 and our fishing war with France at the forefront of my mind. The October issue of @coastmaguk says it “might be the UK’s most sustainable fish finger sandwich.” It goes on to describe how chef Aarik Persaud supports small-sale local fishermen. I’m a big fan of the classic fish finger sandwich and I can confirm that it tastes even better knowing its local provenance. Thanks to @cormacksseafood in Totnes for championing sustainable, ethical fish caught locally in Brixham and Plymouth. Mussels in Escabeche with rice. Maybe not the best looking plate but bear with me, the rice is bomba (paella rice, pudding) cooked with lots of sauteed onions, tomatoe puree, red pepper puree, pinch of saffron and a tremendous home made chicken broth... eaten aggressively with half a jar of Devonnaise, so moorish... Method: Scrub 1kg mussels in cold water. Discard any that float to the top or that are chipped. Give any open mussels a sharp tap with a knife, and discard any that fail to close (they are dead). Eat as fresh as possible, although they can be kept alive in the fridge covered with a damp tea towel. - 250ml Olive oil 1 Bay leaf 1 Tsp pepper corns 1 Garlic clove On a medium heat add these ingredients in a saucepan and simmer gently to infuse for 30mins.. In a deep pan with lid, add a glass of Cider or white wine and bring to the boil, add your cleaned mussels in and take them off the heat soon as the mussels open. Remove shells and reserve the liquor. Now take your escabeche off the heat, and let it cool a bit before adding a 1tsp full of Pimentón de la vera, sweet, smoked – (la chinata @lachinatasmokedpaprika is best) and 1/2 tsp of hot Pimentón and mix well. The temperature is very important as if its too hot it will burn the pimenton and if too cold it will not infuse. Pan back on the heat, add 50ml Cider vinegar… add the reserved liquor from the mussels and simmer for 2mins. Off the heat again for a min; now combine your de-shelled mussels with the escabeche. They are ready to eat, or keep in the fridge for a day which will taste even better. They can be preserved whiles hot in a Devonnaise mason jar. But eat at at room temp. After a day out fishing in Lyme Regis, I put 15mins prep onto this classic dish to transform any underloved Fish into michelin star status. I introduce you to the simply glorious : Fresh Lyme Bay fish with Devon garden vinaigrette and Devonnaise. A true taste of Devon 💚 METHOD: Devon garden vinaigrette. In a saucepan warm through 1/2 tbsp of cider vinegar / 5tbsp E.Virgin olive oil... after a few mins turn off the heat and add 1x Tomato, skinned, seeds removed, chopped. 20gm Roasted hazelnuts -lightly roasted. 30gm Granny smith apples, diced small. Season with salt & pepper. Cucumber bed: Peel, cut longways and using a spoon deseed and cut into 10mm slices. Pan fry in butter till golden. Good with all: sea bass, black bream, red mullet, mackerel... Pan fry fish fillets in a seasoned pan with plenty of olive oil and butter to cover the pan... fillets skin side down and dont touch them till the filets come off the pan by themselves... you want the skin crispy! take off the heat and turn the filets for last 1min cooking. plate your cucumber, filet on top, warm Devon garden vinaigrette on top of the fish, a few rocket leaves and a dollop of Devonnaise. Done. 😬 Land, Sea & Devonnaise* TASTE the land... in the apples, cucumber, hazelnuts ... all grown in the gardens of Devon. TASTE the Sea... in the fresh fish. Wild about food Mackerel is just the perfect fish to cook outside over fire. Seasoned the cavity with sea salt, freshly ground pepper, stuffed with parsley and fennel tops. Then onto the white hot coals until its skin is crisped and the flesh just cooked. Served with hand stretched bread dough flatbreads. Courgettes, whole onion in there till soft, then marinated together with a little olive oil and lemon juice or vinegar. Served with a dollop of Devo… Dios mio. Another fantastic dish from our tasting menu. We were tasked to come up with a different style of fish dish. So here we have Bajan style red mullet, dressed local leaves, Carribbean salsa, scallop roe taramasalata! - There was so many great elements to this spicy and fresh dish. @kajchef made a fantastic marinade with scotch bonnets and other Bahamas flavours for the mullet. The salsa was so vibrant and fruity. The taramasalata used up the roe from the previous scallop dish and was such a fun new thing we had never tried before! - We love being given challenges to overcome.
