Esta receta de seitán queda más dura que el que ya está subido por aquí y en el blog (seitán básico) y es perfecta para meterlo en bocadillos, hacer San Jacobos (como los que nos vamos a comer esta noche 🤤), filetearlo... La textura de la otra receta es más arenosa, se deshace más, y este es más firme 👌🏼 🔸280-290 g gluten (debe quedar blandito pero manejable). 🔸50 g pan rallado. 🔸50 g harina de garbanzos. 🔸50 g levadura de cerveza desamargada. 🔸Pimienta en polvo. 🔸Orégano seco. 🔸2 cucharadas salsa de ostras vegana. 🔸1 cucharada humo líquido. 🔸100 g salsa de soja. 🔸2 vasos de caldo (o agua, saldrá menos sabroso), unos 400 ml. ➡️Mezclar el gluten, pan rallado, harina, levadura, pimienta y orégano. ➡️Mezclar los líquidos en otro bol y añadir a los ingredientes secos. Mezclar, poco, hasta que todos los ingredientes estén bien integrados. Dejar reposar 20-30 minutos. ➡️Dividir el seitán en 3 bolas, envolver en papel film resistente al calor o papel de hornear y poner al vapor durante 1 hora. Dejar enfriar y listo. Das süßliche Aroma des Cumarins fasziniert die Menschen schon lange. Im Mittelalter wurde Maiwein gerne bei Festen getrunken; ein Mönch namens Wandalbertus beschrieb dessen Herstellung bereits im Jahr 854 mit den Worten: "Schütte perlenden Wein auf das Waldmeisterlein." Für eine Maibowle wird ein Dutzend angetrocknete Waldmeisterzweige sowie eine klein geschnittene Bio-Zitrone in einen Liter Weißwein gelegt. Nach einer Stunde Ziehzeit werden die Kräuter herausgenommen und das Ganze mit einer Flasche Sekt aufgegossen. Für eine alkoholfreie Variante verwendet man Apfelsaft und Mineralwasser. Waldmeister wirkt übrigens gefäßerweiternd, entzündungshemmend und krampflösend. Guardate esta receta, para comer riquisimo y sano con este fresco! 👉🏻Estofado de Bifecitos de Seitán y Vegetales 🔸Ingredientes: -4 bifecitos de seitán -2 zanahorias, cortadas en rodajas -1 cebolla grande, cortada en juliana -2 papas medianas, peladas y cortadas en cubos -2 tazas de caldo de verduras -1 lata de pure de tomates -2 dientes de ajo, picados -1 cucharadita de tomillo seco -Sal y pimienta al gusto -Aceite de oliva Instrucciones: 1- En una olla grande, calentá un poco de aceite de oliva a fuego medio-alto. Agregá los bifecitos de seitán y dóralos por ambos lados. Retiralos de la olla y reserva. 2-En la misma olla, agregá un poco más de aceite si es necesario, y sumá la cebolla y el ajo. Cociná hasta que estén dorados y fragantes. 3-Agregá las zanahorias y las papas a la olla y cocina por unos minutos. Sumá el caldo de verduras y los tomates triturados en la olla. Agregá el tomillo seco y sazona con sal y pimienta al gusto. 4-Colocá los bifecitos de seitán dorados nuevamente en la olla, sumergiéndolos en el líquido. 5-Reducí el fuego a medio-bajo, tapa la olla y cocina a fuego lento durante unos 20-25 minutos, o hasta que las verduras estén tiernas y los bifecitos estén bien calientes. My secret to consistently hitting 100g+ of protein every day totally plant-based AND minimizing extra carbs/fats* present in other plant-based protein? SEITAN 🧡 I must be 50% seitan and 50% human at this point. I use it in everything - shredded for enchiladas, chopped up for pasta, pizza, and salads, sliced in tacos or sandwiches, seasoned with greek seasonings on pitas, or seasoned and air fried to eat on its own! Seitan is now your new best friend - especially if you’re someone like me who needs high vegan proteins. Recipe: MAKES 6 SEITAN LOAVES • 240g Vital Wheat Gluten (I’ve used literally all - @bobsredmill @anthonysgoods @/naturtonix_usa) • 45g Nutritional Yeast (literally any y’all @traderjoes @anthonysgoods @bobsredmill) • 1 tbsp Soy Sauce • Go ABSOLUTELY CRAZY with seasonings - salt, pepper, dried herbs, onion powder, garlic powder, lemon pepper, celery salt, cumin, chili powder, cayenne pepper, idk use them all if you want (I do) • 1 tbsp Liquid Smoke (optional) • ~ 2 1/4 cups Water Instructions: • Preheat the oven to 425 degrees F • With cooking spray, grease a 6 hole muffin tin • In a large bowl, mix all ingredients together and then add the water. • Add the water slowly and make a wet, spongy dough. You just don’t want the seitan dough to be sitting in a bath of water because all of your seasonings will go to waste if you do that. • Divide the dough into 6 pieces and put into the muffin tin. • Bake for 30 minutes ✅ 1/6 of the recipe: Carbs 8 - Fats 3 - Protein 35 - Calories 199 To reheat later: • Slice, chop, dice, shred - go crazy & use it like literally any protein. • Air fry until your desired crispiness • Lightly fry it on the stove top until browned or you don’t even have to use any sort of grease - just cook it until browned. Washed flour seitan- basic recipe. ————- Seitan obtinut prin spălarea aluatului- rețeta de bază, folosind 2 kg de făină: Ingrediente: 2 kg de făină de grâu Apă Instrucțiuni: Într-un bol mare, adăugați făina de grâu. Adăugați treptat apă în făină și amestecați până când obțineți un aluat ferm. Continuați adăugarea de apă și amestecarea până când toată făina este incorporată și aluatul este omogen. Acoperiți aluatul cu apă rece și lăsați-l să se odihnească timp de 1-3 ore. Acest proces va ajuta la separarea glutenului de amidon și a altor componente ale făinii. Spălarea aluatului: Umpleți cu apă un vas mare sau un lighean și introduceți aluatul în apă. Frământați și spălați aluatul în apă rece, schimbând apa la fiecare câteva minute. Acest proces va ajuta la eliminarea amidonului și a altor substanțe solubile din aluat, lăsând în urmă glutenul. Continuați să spălați aluatul până când apa devine relativ limpede și aluatul devine mai elastic. Modelarea și gătirea seitanului: După ce ați separat glutenul, puteți modela seitanul sub formă de bucați, chiftele sau orice altă formă dorită. Puteți găti seitanul prin fierbere într-un bulion aromat sau prin coacere la cuptor. Arrosto vegetale proteico senza glutine su Vellutata di Carote con Crema di Tofu di Canapa e Kefir di Soia, rondelle di Ravanelli fermentati, spolverata di cimette di Broccolo essiccate e scaglia di Polenta e Lievito Alimentare, più Quenelle di Hummus di Barbabietola fermentata con striscioline di Carota croccanti. 🤩 Come potete vedere, negli ultimi post ho usato più volte gli stessi alimenti pur ricavandone piatti totalmente diversi grazie a cotture e rielaborazioni differenti: in cucina per me nulla è mai predefinito, rigido e uguale. Al contrario, mi piace giocare con gli ingredienti e trovar loro sempre nuovi impieghi e accostamenti. Una cosa però deve esserci sempre: tanto sapore! 😋 In questo piatto completo, nutriente, sano e divertente grazie ai tanti colori e alle diverse consistenze, tutto è 100% vegetale, senza glutine e preparato da zero in casa.
