What recipe do you like the most? by @Plantyou 1️⃣ Chana Masala Inspired Chickpea Coconut Curry Ingredients 1 tbsp olive oil 1 yellow onion, diced 3 cloves garlic, minced 2 tbsp curry powder 1 tsp cumin ½ tsp turmeric ½ tsp paprika ¾ tsp salt 1 can crushed tomatoes, 15 oz 1 can coconut milk, 13.5 oz 1 can chickpeas, drained and rinsed 1 tbsp almond butter, optional 1 handful spinach Instructions In a pan over medium heat, add the onion and olive oil. Stir until fragrant, approximately 3 minutes. Next, add the garlic, curry powder, cumin, turmeric, paprika and salt. Stir until fragrant, approximately 5 minutes. Add the crushed tomatoes, coconut milk, chickpeas and almond butter. Bring to a simmer, then lower the heat, and cook on low for 6 to 8 minutes, until everything is combined and warm. Stir in the spinach until it is wilted. Serve with fresh cilantro and naan bread as desired. 2️⃣ Golden Glow Soup paired with my favorite crackers . 🙏Lends 4 to 6 servings
From start to finish 20 minutes . 1 tbsp olive oil or vegetable broth 1 yellow onion, diced 2 carrots, diced
4 cloves garlic, minced 1 rib celery, diced 1 tsp dried oregano 1/2 tsp black pepper 7 cups vegetable broth 1 can white beans, drained and rinsed 2 lemons, squeezed 1 handful fresh kale 1/4 cup tahini 1 tsp lemon zest 1 cup orzo 1/4 cup fresh dill 1 tsp turmeric . In a pot over medium heat, add the onion, carrot, celery and garlic. Sauté until softened, approximately 5 minutes. . Add the vegetable broth, drained and rinsed can of white beans, lemon juice and lemon zest to the pot. Bring to a boil, then simmer for 10 minutes covered. . Stir in the kale, fresh dill and orzo and cook for another 10 minutes until the orzo is cooked through, keeping the lid off and stirring intermittently to prevent the orzo from sticking. Stir in the tahini and turmeric until combined and heated through. Enjoy!

Vegan BANG BANG CAULIFLOWER By @daria_cooks_vegan Ingredients •1 cauliflower, cut into florets •1 cup / 240 ml plant-based milk (I used full-fat oat milk) •2 tablespoons lemon juice •3/4 cup / 105 g all-purpose flour •1/2 cup / 80 g rice flour (sub in cornstarch) •1 teaspoon paprika powder •1 teaspoon salt •dash of black pepper •1 tablespoon hot sauce •1 cup / 100 g panko crumbs (or more as needed) •vegetable oil for frying 🌱For the sauce: •1/3 cup / 80 g vegan mayonnaise •2 tablespoons chili sauce •2 teaspoon hot sauce Instructions 1️⃣In a bowl whisk together vegan mayonnaise, chili sauce and hot sauce. Put into fridge. 2️⃣In a bowl combine flour, rice flour, oat milk, lemon juice, hot sauce, paprika, salt and pepper. Mix until smooth. Dip cauliflower florets into the batter, then cover them with panko crumbs. 3️⃣In a pot heat vegetable oil until thermometer shows 350 °F / 180 °C. Fluffy Vegan Lemon Blueberry Pancakes By @naturallyzuzu Ingredients: 2 cups of all-purpose flour 1 tbsp of flax meal mixed with 1/3 cup of plant-based milk and 1 tsp of apple cider vinegar 1 tsp baking soda 1 1/2 tsp baking powder 1 tsp kosher salt 3 tbsp of maple syrup 1 1/2 cup of plant-based milk 1 tbsp of melted coconut oil or vegan butter. 1 tsp of pure vanilla extract Juice from 1/2 lemon Zest from 1 lemon 1 cup blueberries washed. Coconut oil or vegan butter for cooking. Method: Combine flour, baking soda, baking powder, salt together in a bowl, add flax meal vinegar mixture, maple syrup, melted coconut oil, vanilla, lemon juice, lemon zest and plant milk. Mix everything to combine to make a pancake batter. Set aside for 10 min. Add the blueberries to the batter. Fold the blueberries gently into the batter. Cook your pancakes in a cast iron pan, with a tsp of coconut oil over a medium heat. Oh Canada! We kept it all-Canadian for #sundayfamilydinner this week. Four new-to-us @canadianliving recipes, and a Canadian wine! The meal centred around the 𝗨𝗹𝘁𝗶𝗺𝗮𝘁𝗲 𝗦𝘁𝗮𝗻𝗱𝗶𝗻𝗴 𝗥𝗶𝗯 𝗥𝗼𝗮𝘀𝘁 (which here is lying down, but whatever). It has a really unique method of cooking, and a 𝗚𝗿𝗲𝗲𝗻 𝗣𝗲𝗽𝗽𝗲𝗿𝗰𝗼𝗿𝗻 𝗛𝗼𝗿𝘀𝗲𝗿𝗮𝗱𝗶𝘀𝗵 𝗦𝗮𝘂𝗰𝗲 that I really liked (and I’m not a horseradish lover). Alongside we had their 𝗕𝗿𝗮𝗶𝘀𝗲𝗱 𝗖𝗮𝗯𝗯𝗮𝗴𝗲 𝗮𝗻𝗱 𝗕𝗲𝗲𝘁𝘀 which was a really neat & different veggie side - it never would’ve occurred to me to combine these two. It’d make a great winter dish too, both of those vegetables being so hearty & not seasonally dependent. The 𝗕𝗮𝗯𝘆 𝗞𝗮𝗹𝗲 𝗖𝗮𝗲𝘀𝗮𝗿 𝗦𝗮𝗹𝗮𝗱 was fun too - I particularly enjoyed the Parmesan crisps on top - but didn’t think the pumpernickel croutons were so different from any others to warrant tracking down a loaf of it to make these specifically. Finally, we made their 𝗚𝗮𝗿𝗹𝗶𝗰 𝗚𝗼𝗮𝘁 𝗖𝗵𝗲𝗲𝘀𝗲 𝗠𝗮𝘀𝗵𝗲𝗱 𝗣𝗼𝘁𝗮𝘁𝗼𝗲𝘀. This was mom’s attempt at being humble, because I’ve said here before that she makes the best mashed potatoes in the world due to her secret ingredient- cream cheese! Still, she decided to commit to an all-CL menu and stuck to it. Still though, her/our cream cheese mashed are better than these were. Oh well, we tried, and there nothing wrong with these - but the cream cheese ones are exceptional. Wine-wise we went with a classic Canadian can’t-fail bottle, the Pinot Noir from @sylranchwinery. Spring vibe♡ 🌸Salted Cherry blossom Sourdough Focaccia🌸 Recipe : 300g Bread Flour 245g Water 60g Levain 6g Salt Method : Mix water with flour, cover, let it rest for 1 hour. Add levain ,Mix on low speed for 3-4 mins. Add salt ,mix on low speed for 2-3 min, or until well incorporated. Mix until well incorporated. Transfer the dough into the container, close the lid and leave to rest 30 minutes at 24-25C. wet your hands and perform 1st ,2nd, 3rd, 4th stretch and fold, 40mins interval. then put the container in the fridge for cold retard (12-48 hours). Remove the dough from the fridge and transfer to the baking tray, (cover with parchment paper and sprinkle with olive oil. ) Spread the dough a little on your baking pan with oiled hands. Cover and let it proof for 2 hours. When the dough seems puffy, oil your hands and sprinkle olive oil on top of the dough. Dimple the dough with your fingers all over the dough surface. Add , salted cherry blossom , paprika , chopped spring onion. There has been some confusion! Instructions: 1. Preheat oven to 350 F. Add all wet ingredients to a bowl. Then add dry ingredients. Mix then add chocolate chips. Mix. 2. Pour into baking pan and bake for 40 minutes. 3. Enjoy! Store in fridge and reheat when you want to eat! 2️⃣ Bookmark CHICKPEA CHOCOLATE CHIP COOKIES 🍪✨ Ingredients: 1 15 oz can of chickpeas rinsed and drained 5 pitted dates 1/2 cup creamy peanut butter 1/4 cup rolled oats 1/4 cup coconut sugar 1/4 maple syrup 1/2 cup vegan chocolate chips plus extra for topping 1 tsp vanilla 1/2 tsp baking powder 1/2 tsp baking soda sea salt garnish instructions: 1. Preheat oven to 350 degrees F and prep and baking sheet with parchment paper. 2. Blend all ingredients in a food processor except chocolate chips, baking powder and baking powder. 3. Blend until smooth scraping down the sides as necessary. 4. Blend in the baking soda and baking powder. Pour in the chocolate chips and stir with a spoon until combined. Make the cookies about 2 tbsp of cookie dough. Use a spoon because it's sticky to touch. Flatten a bit. Add extra chocolate chips on top. This yields about 14 cookies. 5. Bake for 13-15minutes. They will be soft but they'll firm up. 6. Enjoy besties! . .

Tomato, mozzarella gnocchi- infused with a bit of rosemary and garlic, mixed with a bit of pesto and basil ! Was meant to make the pesto which would defo be nicer but I just couldn’t hack that on a Monday evening! Creamy One Pot Lasagna! By @plantbased.traveler Ingredients: 6 lasagna sheets 10 oz vegan mince * 2 heaping tbsp tomato paste 32 oz can crushed tomatoes 32 oz vegetable broth or water (simply use tomato can 👆🏼 to measure) 1 cup unsweetened plant milk (I like extra creamy oat milk) 1 medium sweet onion 3 garlic cloves 1 small carrot 1 celery stalk 1 tbsp olive oil 2 tsp Italian seasoning 1 tsp dried basil 1 tsp paprika 1/2 tsp crushed fennel seeds Salt and pepper to taste Method: Finely dice peeled/washed onion, garlic, carrot and celery. Heat up a small dutch oven (or non stick pot or deep sauté pan), cook vegan mince until browned and crumbled, then set aside. Add olive oil, and sauté diced vegetables for 5-10 minutes until fragrant and softened, then add mince crumbles back to the pot. Add tomato paste, stir for a minute, then add crushed tomatoes, plant milk, broth/water, herbs, and spices. Break lasagna sheets in 2-3 pieces, add them to the pot, and bring everything to a boil. Simmer for 20 minutes, stirring occasionally, or until pasta is al dente. Enjoy! By @Plantyou 1️⃣ SMASHED POTATOES Ingredients 6 Yukon gold potatoes 2 tsp kosher salt ½ tsp garlic powder cracked black pepper, optional, to taste olive oil, a drizzle to taste 6 servings Vegan Green Goddess Dressing Instructions In a large pot, add 6 cups of water and 1 teaspoon of salt. Add the yukon gold potatoes, and bring to a boil. Reduce the heat, and allow the potatoes to cook for 20 to 30 minutes depending on the size of the potatoes, until fork tender. Meanwhile, line a baking sheet with parchment paper, and preheat the oven to 400F. Drain the water, and place the potatoes on the baking sheet dispersed at least 1 inch apart. Using a butter knife, make a soft slice about halfway through each potato. Then, using the bottom of a cup or a mug, smash each of the potatoes down. Season with salt, garlic powder and pepper as desired. At this time, you can drizzle with olive oil if desired for a more crispy potato, but it's not necessary. Place in the oven, and bake for 30 to 40 minutes until the potatoes are crispy. Enjoy! **Everything Green Sauce** Ingredients 1 jalapeno, chopped, seeds remove for mild sauce 1 handful cilantro, large 1 handful spinach, large 1 cup green onions, roughly chopped 1 clove garlic ¾ tsp salt, or more to taste ½ avocado, stone removed ½ cup raw sunflower seeds, soaked overnight or boiled for 10 minutes 1 cup water 1 lemon, juiced Instructions Combine all ingredients in a high speed blender until smooth. Taste and adjust salt as needed. Enjoy immediately.

I filled this beautiful zucchini with onions and diced zucchini and added cream and cheese to its contents then put it in the oven. SAUCY CURRY POTATOES AND CHICKPEAS By @betterfoodguru 👉SAUCY CURRY POTATOES AND CHICKPEAS Ingredients: 1 tsp olive oil 3 large yellow potatoes cut in chunks 1 can chickpeas rinsed and drained 3 cloves garlic minced 1/2 red onion diced 2 inch nub ginger minced 3 compari tomatoes diced 1 tsp black mustard seeds 1 tsp cumin seeds 1/2 tsp garam masala 2 tbsp curry powder 1 tbsp turmeric powder 1 tsp smoked paprika 1 tsp salt 1/2 tsp ground coriander 1/2 tsp ground cumin 2 cups water Black pepper to taste 1/2 tsp Crushed red pepper optional 3 tbsp cilantro Instructions: 1. In a deep non-stick pan heat 1 tsp olive oil over medium heat 2. Add potatoes and cook for 5 minutes stirring only occasionally so potatoes begin browning 3. Move potatoes to the side and add onions, garlic and ginger to the pan and cook for 5 minutes before stirring into the potatoes 4. Cook for 5 more minutes until garlic, onion and ginger are getting very fragrant 5. Make some space in the pan and add the mustard seeds and cumin seeds and cook for 2 minutes before stirring into the aromatic potatoes 6. Add curry powder, garam masala, coriander, turmeric, smoked paprika and salt and mix into the potatoes 7. Add tomatoes and cook for 2-3 minutes until tomatoes release their juices. 8. Add chickpeas, water and tomato paste, cover and simmer until potatoes are fork tender and curry gravy has thickened. 9. Creamy Chickpea Bowl By @veganfoodcrazy INGREDIENTS: 1 tbsp oil 1 tbsp red pepper flakes 2 cloves garlic sliced thinly 2 boxes chickpeas, drained & rinsed 1 cup marinara sauce 8 oz vegan Greek yogurt 1 tbsp dried oregano 1 tbsp sumac Salt & pepper to taste METHOD Start by heating your oil over medium heat, add the garlic and red pepper and sauté for about a minute. SPICY TOFU LEEK STIR FRY & NOODLE SOUP By @sncxkitchen Recipe➡️ 🔹Main Ingredients 🔸2–2½ tbsp grapeseed oil 🔸½” ginger (finely sliced) 🔸5 dried red chili pepper (soaked & cut to ½” slices) 🔸½ tbsp Sichuan peppercorn 🔸1 tbsp fermented black beans/douchi 🔸2 tbsp Pixian doubanjiang 🔸3 garlic cloves (finely minced) 🔸298 gm/10.5 oz. five spiced tofu (sliced) 🔸1 leek (white part only – sliced diagonally) 🔹Seasoning (whisk until well combined) 🔸¼ cup water 🔸1 tsp cooking wine 🔸1 tsp vegan fish sauce 🔸1 tsp sugar 🔸1 tsp salt or to taste ▪️Steps ▫️In a large skillet/non-stick pan on medium heat, add the oil. Once the oil heats up, add the ginger, dried chili pepper, peppercorn, douche & doubanjiang. Sauté stirring frequently until slightly fragrant. ▫️When it’s slightly fragrant, add the garlic. BANANA BREAD I was craving some banana bread the other day, so I turned to the loaf queen Freya Cox! Her pumpkin bread got me through the winter months, so I knew her banana bread would be amazing. I kept it simple and filled this one with chocolate chips and walnuts (and extra sprinkled on top!). It met all of my expectations, and was so delicious when heated up just a little! Tempeh Salad Rolls with Peanut Sauce By @vancouverwithlove Ingredients • 1 240g pack tempeh, sliced into thin strips • 2 tbsp unflavoured cooking oil • Salt to taste • 1 carrot (medium), shredded • ¾ cup shredded cabbage • ½ red pepper, sliced into strips • 4" piece cucumber, sliced into strips • 1 cup shredded collard greens or spinach • 8 rice paper wrappers Peanut Dipping Sauce • 2 tbsp peanut butter • ½ tbsp Braggs or soy sauce • 1 tbsp unflavoured oil • 1 tbsp water Instructions - Add all dipping sauce ingredients to a small bowl and stir to combine. Set aside. - On a medium heat, sauté tempeh in oil until golden on all sides (about 10 mins). Season to taste with salt and set aside. - Pour warm water onto a dinner plate and submerge your first rice wrapper in it. Vegan BANG BANG CAULIFLOWER By @daria_cooks_vegan Ingredients •1 cauliflower, cut into florets •1 cup / 240 ml plant-based milk (I used full-fat oat milk) •2 tablespoons lemon juice •3/4 cup / 105 g all-purpose flour •1/2 cup / 80 g rice flour (sub in cornstarch) •1 teaspoon paprika powder •1 teaspoon salt •dash of black pepper •1 tablespoon hot sauce •1 cup / 100 g panko crumbs (or more as needed) •vegetable oil for frying 🌱For the sauce: •1/3 cup / 80 g vegan mayonnaise •2 tablespoons chili sauce •2 teaspoon hot sauce Instructions 1️⃣In a bowl whisk together vegan mayonnaise, chili sauce and hot sauce. Put into fridge. 2️⃣In a bowl combine flour, rice flour, oat milk, lemon juice, hot sauce, paprika, salt and pepper. Mix until smooth. Dip cauliflower florets into the batter, then cover them with panko crumbs. 3️⃣In a pot heat vegetable oil until thermometer shows 350 °F / 180 °C. Transfer the battered cauliflowers to the pan and fry them until golden brown. Cook in batches. 4️⃣Drain fried cauliflowers on kitchen towels. Serve immediately with mayonnaise sauce. Not to mention how damn easy they are to make. The choc tart shell is nutty and chewy and the raspberry jam is uber gooey and sweet. They are the perfect sweet treat to whip up this Mother’s Day. 🤍 Vegan, refined sugar-free, gluten-free and oil-free. Recipe: Raspberry Chia Jam: - 2 Cups Frozen Raspberries - 2 Tbsp Chia Seeds - 2 Tbsp Rice Malt Syrup - 2 Tbsp Hot Water Choc Tart Shell: - 1 & 1/2 Cups Roasted Almonds - 1 & 1/2 Cups Oats - 7 Large Medjool Dates (Soaked in hot water for 5 minutes and drained) - 3 Tbsp Cacao Powder - 3-4 Tbsp Oat Milk - 1 Tsp Vanilla - Pinch of Salt Garnish: - 5-10g Melted Vegan Dark Choc - 6 Vegan Dark Choc Squares 1. Place all jam ingredients into a bowl and mash until smooth. Be patient with it, the raspberries with eventually melt and become jam-like. 2. Place all tart shell ingredients into a food processor and process until smooth. Push into to a 6-hole silicon tray and use your hands to create a well in each. 3. Fill with the raspberry jam and set in the freezer for 30 minutes. Garnish with chocolate and set in the freezer for 5 minutes. Enjoy! 4. Store in the refrigerator for up to 5 days.
