Don’t let their sleek, light-filled dining room fool you - Jackson Boxer at The Corner is WILD. Unlike what the general first impression is, the menu is a far cry from being reserved; It’s filled with familiar classics done indulgently, with Boxer’s signature takes on them. Kicked off the meal with the deceivingly understated cornbread (buttery with a dab of ikura) and potato cake. The latter has Boxer written all over it, with the chives + whipped cod roe combination (as previously experienced at Orasay) draped over julienned potato matchsticks, compacted into a block. Clearly a recipe for success and they know it. Moved on to having the ricotta + beetroot + herbs in an effort to balance out the meal with something lighter. Said effort failed miserably as it was chased down with pumpkin ravioli, a monster of a fried chicken sandwich, and my favorite: grilled peppers and fried eggs blanketed with more of that crispy julienned potato. A resounding kick of saltiness added by anchovies to what is honestly a timeless combination of egg, smoky peppers and potato. I think about that dish a lot. Can’t leave without having dessert. We had the almond sorbet and muscat grape granita, alongside warm madeleines. I think they’ll be launching a brunch menu soon. Charles Dickens, Great Expectations The past few weeks were filled with unforgettable experiences shared with loved ones. From exploring tiny seaside villages along the coast of California to island hopping from Kauai (a first time visit for me) to the island of Hawaii where several of our family members live. It was all so lovely and of course hard to say goodbye. Pictured is my beautiful niece on her family’s farm. They live communally with their extended family. It’s earthy, simple living at its finest. They are wonderful cooks and equally wonderful hosts. Our times together are always cherished!

Friday, also know as a pastor family’s Saturday. And also the day that hubs works so hard and does bills, the budget, yard work, while I try to catch up from the week. Someone asked me this week if I could go back in time to a historical event, what would it be. And I asked if it could be my own life and if so I choose college. Like pretty much responsibility-free and you get to hang out with friends all the time and your metabolism still works great, your time is your own, and the little work you have is studying something you’re interested in. 👏🏼😉 But THIS is hard and holy work, and I’d choose the sanctifying moments and the joyful noises and cuddles over and over again to be living in my answered prayers of those carefree years. 🙏🏼

So- what are you currently reading? I finished Circe by Madeline Miller and it was SO good! Greek mythology with some added storylines and details. Now I’m back on my suspense/thriller kick with The Last to Vanish, and then I’ll move onto The Summer We Started Over about sisters and family and life on Nantucket Island. Vacation countdown is go, two more weeks before my work laptop will collect dust. Planning my spring break project by selecting warm yarns in autumn colours, simple design in my head and, believe it or not, I even have spare needles in the right size. Weather here has been windy, chilly and rainy lately, a typical April in Europe and while I can feel the strength of the sun, the windchill is freezing. Still time for woollies for a while longer, especially when you live close to the sea and vacation on an island. I can hear the seagulls from here and see them sailing by my window. The girls shared room reveal! I’m so excited to finally share with you Faith and Esther’s shared room. The girls were continuously asking us if they could have a sleep over in each others room most nights. Creating a shared room seemed like the best idea and it has meant that they are now both sleeping a lot better at night. They do take a little longer to fall asleep because they are often busy chatting and giggling before actually going to sleep but I love that they are creating memories together.
