Did the private chef thing for 12 wonderful humans at @itsmechocky ‘s beautiful house in New Paltz, New York this weekend. Everyone was so genuine, patient, and appreciative of my creations–this was really the first time I got to be a full-blown weirdo and make a bunch of “my” food for others. It’s still early spring so the wild goodies were small, but I was psyched to prepare and serve stacks of things from my brain to a bunch of brewers, restauranteurs, and musicians–such a thoughtful (and hilarious!) group of people who “get it.” Dandelion fritters | rhubarb + dandelion leaf + broadleaf dock and plantain + Serrano salsa | Korean marinated jammy egg | violet flower + yarrow leaf Crispy soba noodle nests | cold soba noodle salad with snap peas + ramps + cherry peppers + sesame | trout lily leaf Handmade pappardelle | beef short rib ragù Toasted hazelnut + flax seed bread | pea purée | smoky ham steak | radish micro green (not pictured) “Sam and Mom’s Apple Crumble” (yes, the one I did on @masterchefonfox) | apples + orange zest + thyme + whiskey | oat + butter topping | stabilized whipped cream | fresh apple salad with lime + maple + thyme Everybody kept asking me if I was “ok?” Didn’t I want to sit down and have a cocktail? Was I sure I wanted to keep cooking?? That face you see there in the video of me making the fresh pasta–that is the face of focus. Of inspired creation. Of truly being “in the zone.” I get it, it looks serious. But I promise, it is other-worldly. Thank you, Marci, for giving me the space to do my thing. Syrad ramslök! 🌿🌿 Här kommer ett litet how to, för att syra ramslök. Börja med att väga upp ramslöken du ska använda, i mitt fall 350g. Häll över 3% salt över ramslöken, jag kryddade även upp mina med chiliflakes eftersom att vi gillar när det är lite sting i maten. Knåda knåda och knåda. När ramslöken börjat vätska packar du detta hårt i en steriliserad och tätförsluten burk. För att hindra att så lite luft som möjligt kommer i kontakt samt att ramslöken ska hålla sig nere under den vätska som bildas, lägger jag en vattenfylld plastpåse som tyngd. Ställ undan burken i ca 2 veckor till den är klar att ätas. Enklast att räkna ut 3% av den totala vikten är... Den är faktiskt släkt med broccolin och påminner väldigt mycket om den i smaken, eftersmaken är något stark då det samtidigt tillhör senapsfamiljen. B L U E B E L L F O L K L O R E. It's nearly my favourite time of year in the woodland. There's something so magical about a carpet of bluebells. Especially since they often grow in the most ancient parts of a forest. Take care though, as walking through a bluebell wood could be dangerous! There is a chance you might be spirited away by the fae to the faery realm of the Otherworld. It is known to be particularly dangerous at twilight. You have been warned... Bluebells are known as Ring O'Bells or Faery Bells since the wee folk are said to ring them to summon their kin. But beware, if a human hears their otherworldly ringing, it predicts their certain death. This is the reason for one of their more sinister folk names, Dead Man's Bells. They're very similar to harebells which grow in Scotland, known also as Witches Thimbles. In North East Scotland it was believed that witches supped the milk white sap to transform themselves into hares. Bluebells usually grow in Spring, so they're starting to appear now. Harebells tend to bloom later in the summer. But this association witches over time meant that both bluebells and harebells came to be called Devil's Bells, or in Scotland Aul' Man's Bells... as is usually the case.

Tales of the Goddess and watery places... 💧 There probably would have been a time when all of our rivers were connected to a deity, although only a few stories remain. There are many tales to be uncovered in the landscape, and in the Gaelic place names. It is said that the Cailleach, the winter Goddess, let loose many rivers and formed many lochs. Sometimes intentionally creating them, and sometimes not! There was once a well on Ben Cruachan, in Argyll, from which the Cailleach drew water every morning. She would lift off the slab, remembering each evening to it to cover it again. But one evening she forgot to cover the well. The righful order of things was disturbed. As soon as the sun set that evening, otherworldly waters began to bubble up from the well, spilling out onto the land. It grew stronger, roaring like an ocean, until it had filled the glen. When the Cailleach returned in the morning, she replaced the slab but it was too late. This is how Loch Awe came to be. There was another magical well near Inverness. The Cailleach bestowed the duty of caring for it on her servant girl, Nessa. Each morning she would draw water from the well. In the evening she would cover it again. One evening Nessa was late to the well, and arrived to find water rushing up out of it. She turned and ran in terror. The Cailleach was watching her from the nearby mountain. She scolded Nessa, saying 'For neglecting your duty, now you'll run forever!' And turned her into a river. This is how the river Ness and Loch Ness came to be. Once a year, on the same night on which she was transformed, Nessa rises out of the river in her female form, and it's said you can hear her singing a beautiful but sad song in the moonlight. Stories like this explain that if we neglect to play our part in the delicate balance within nature, then as we know all too well the natural order of things can be upset. You can hear more about how the Cailleach created the landscape in my conversation with Marisa last year on @knotworkpodcast 🙏🏼 I'll share some more folklore surrounding rivers and lochs in my stories on @katy.swift.storytelling over the next few days.
