ORZO ALLA NORMA 🍝🧅🫑🍆🫒🥬🧀 Ingrediënten: (2 á 3 porties) - 200g orzo - 1 paprika - 1 ajuin - 1 aubergine - Enkele handjes verse spinazie - Enkele olijven - 1 bol mozzarella - 1 blik tomatenblokjes - 1 liter groentenbouillon (kokend water + bouillonblokje) Bereiding: 1. Snijd de ajuin, paprika, olijven en aubergine in stukjes. 2. Giet een beetje olijfolie in een pot en voeg hier de ajuin en paprika aan toe. Voeg na enkele minuten ook de aubergine toe. Laat de groenten even aanstoven. 3. Voeg de orzo toe aan de pot en roer deze door de groenten. Voeg hierna meteen de tomatenblokjes toe. 4. Laat het geheel sudderen op een laag vuurtje. Voeg groentenbouillon toe als het geheel te ‘vast’ wordt voor de orzo gaar is. (Een volledige liter zal zeker niet nodig zijn.) Roer regelmatig door, zodat de orzo niet aan de pot gaat plakken. 5. Voeg de verse spinazie en olijven toe als de orzo bijna gaar is. 6. Snijd ondertussen de mozzarella in blokjes. Alla norma with a twist Enhance your alla norma with some farmer's sausages, mushrooms and pecorino to create this amazing version. 👉 Swipe for a hungry kitty Ingredients (2 serves) - 1 eggplant - 300g rigatoni pasta - 250g mushrooms - 1 garlic clove - 4 farmer's sausages - 400 g passata - 1/2 bouillon cube - Pecorino cheese - Splash of red wine - Spices: chili flakes and fresh basil Instructions 1. Preheat the oven to 200°C (390°F). 2. Slice the eggplants into thin round slices. Place them on a baking sheet, drizzle with olive oil and sprinkle with salt. Place them in the preheated oven for about 20 minutes, or until they are soft and lightly browned. 3. Bring a large pot of water to a boil with a pinch of salt for the rigatoni. When boiling, cook the rigatoni according to the package instructions. 4. Clean the mushrooms and cut them into quarters. Finely chop the garlic clove. Heat some olive oil in a pan and sauté the garlic and mushrooms for a few minutes. 5. Cut open the farmer's sausages and remove the meat. Cook the meat in a pot until it's browned. 6. Deglaze the meat with a splash of red wine. Add the passata, along with a pinch of chili flakes and half a bouillon cube. Let simmer for 5-10min and season with pepper and salt. 7. Drain the pasta and add it to your pot with the meat and sauce, along with the mushrooms. 8. GNOCCHI ALLA NORMA MET BURRATA In Syracusa heb ik afgelopen zomer de lekkerste gnocchi alla norma zelf gemaakt met ingrediënten van de markt. Je hoeft alleen niet in Italië te zijn om een super lekkere gnocchi alla norma te maken en dit receptje bewijst dat! Bs’jes voor 4🛍️: - 500 gram gnocchi - 800 gram tomatenblokjes - 250 gram cherrytomaatjes - 2 aubergines - 2 teentjes knoflook - 1 ui - 15 gram verse basilicum - 4 kleine of 2 grote bollen burrata - Chilivlokken - 1 Theelepel suiker - Peper en zout - Olijfolie Bak de gnocchi in de pan met olijfolie tot ze goudbruin en knapperig zijn. Snijd de aubergine in blokjes. Verhit een laag olijfolie in een pan en bak de aubergine hierin. Laat uitlekken op keukenpapier. Snijd de cherry tomaten doormidden. Snijd de knoflook en ui fijn en fruit in de pan. Doe de tomatenblokjes in de pan erbij met de cherrytomaten. Doe er een klein kopje water bij. Scheur de blaadjes basilicum (houd wel wat achter ter garnering) en doe ze in de pan. Doe de suiker, een beetje chilivlokken en een snuf peper en zout ebij. Laat dit zo 10 minuten pruttelen op middelhoog vuur. Na 10 minuten kan je de halve cherrytomaatjes in de saus platdrukken met een pollepel. Roer de gnocchi en aubergine door de saus. Verdeel de gnocchi dan over de borden en garneer met de basilicum. Snijd de burrata open en leg dit op de gnocchi. Rigatoni Alla Norma A simple yet flavorful dish. The tomato sauce simmers down with quite some chilli and garlic and is finished with a bit of red wine vinegar (I used balsamic). It's then tossed with the pan fried diced aubergine and pasta and then finished with fresh basil and cheese. I used pecorino, which worked well (recipe says ricotta salata or goats' cheddar; both are not a thing here). I think a bit of fennel would have worked in this sauce too :) Without the cheese or with a plantbased alternative, this dish is vegan. Berenjena + pasta + queso = Receta exquisita y MUY fácil 💥 ¡Qué mejor que el #fiordilatte fresco! Aportará humedad y cremosidad INGREDIENTES: ● 500 grs de pasta corta (penne, fusilli, calamarata...) ● 60 grs de queso Parmigiano Reggiano ● 300 grs de fiordilatte fresco ● 300 grs de salsa de tomate alla norma ● Láminas de berenjenas fritas ● Albahaca En un ramequín (fuentes individuales) disponer las láminas de berenjenas fritas en aceite. Cocinar la pasta en abundante agua salada, y escurrir bien al dente. Condimentar con la salsa de tomate y el queso Parmigiano. Rellenar de pasta por la mitad los potecillos previamente preparados con las berenjenas. Disponer un poco de fiordilatte en el centro y tapar con otra capa de pasta. Terminar con queso parmigiano rallado. Hornear a aprox. 200 grados hasta que la superficie esté crujiente.
