Tonight is our last gathering before graduation and summer break. They decided to have an all inclusive potluck (potlucks are a favorite event among these students). We’ll celebrate the academic year and say our farewells (for now) to three seniors🎓 who have been serving as ASA student leaders. I cannot be more proud of each student. Lettuce is one of the best things to grow at this time of year. This tray of seedlings was sown about 3 weeks ago and look at all those delicious fresh leaves. I will prick a dozen of these seedlings out and pop them into module trays so they can grow on ready to be planted out in a couple of weeks. The rest of the leaves will be cut and added to my fish finger sandwich later 😋. Zucchini slices are fried (I used avocado oil) and layered between sprinklings of fresh minced garlic and salt and pepper. Red wine vinegar is added once it’s assembled and time is given to it to marinate, for an hour or so. Fresh mint leaves are tucked in for both presentation and taste. You can also finely chiffonade the mint to add it throughout. Not a mint fan? Fresh basil can be substituted. This is a side that can be made ahead and is great the next day too! Hoy en el Día de la Prevención del Cáncer de Mama, cabe recordar que el cáncer de mama, es la primera causa de muerte por cáncer en mujeres colombianas 👩🏼👩🏻👩🏾. Además del auto examen, hay algunas recomendaciones que podemos seguir para la prevención del cáncer, según el Instituto Americano para la Investigación del Cáncer: •Llevar una dieta rica fibra que está presente en cereales integrales, verduras, frutas y granos.🥗 •Limitar el consumo de comida rápida, “chatarra”, ultra-procesada, carnes, refrescos y las bebidas alcohólicas. •Además, realizar actividad física, ojalá lográramos hacer ejercicio, es decir, una actividad fisica ordenada y diaria!! 🧘🏻‍♀️ Buscar tener una alimentación más natural, rica en fibra, vitaminas y minerales se asocia con una mayor posibilidad de supervivencia en los pacientes con cáncer. 👀 No hay dieta anticancerígena ni milagrosa, sin embargo estar bien nutridos nos ayuda a disminuir el riesgo de padecer esta patología.
