In Saturday’s @the.australian I’m talking morning tea; the time of day to come together for a cup of something hot and a bite of something baked. And this prosciutto and bitter greens flat pie is an excellent savoury accompaniment for your morning break. It takes inspiration from Mattonella Palermitana, a rustic puff pastry pie from Paloma in Sicily. Mattonella means tile which, when baked, this pastry is thought to resemble. Typically, you’ll find ham, mozzarella or provolone, and a little tomato sauce all enveloped in puff pastry dusted with sesame seeds. Whilst I have enjoyed it this way, one day I found myself with an abundance of bitter greens needing a home. Together with drapes of prosciutto, they found their way into this flaky, flat pie. Ας την ονομάσουμε λοιπόν Εύκολη κολοκυθόπιτα κι ό,τι γίνει 😄 Εύκολη κολοκυθόπιτα Υλικά 🔸150 γρ. κολοκυθάκια τριμμένα (δύο μέτρια) 🔸1 αυγό 🔸 180 γρ. αλεύρι για 🔸30ml ελαιόλαδο 🔸 30 γρ πεκορινο Αμφιλοχίας τριμμένο 🔸 300ml νερό 🔸 Αλάτι - πιπέρι 🔸 άνηθο (προαιρετικά) Εκτέλεση Τρίβουμε τα κολοκύθια στη χοντρή μεριά. Ρίχνουμε το αυγό, το ελαιόλαδο, το πεκορινο & το νερό. Αν θέλουμε βάζουμε κι άνηθο. Αλατοπιπερο & ανακατεύουμε καλά. Στο ρηχό ταψί της κουζίνας βάζουμε χαρτί ψησίματος κι απλώνουμε το μείγμα να πάει παντού. Ψήνουμε σε προθερμασμενο φούρνο στους 190 C (πάνω- κάτω αντιστάσεις) για περίπου 35 λεπτά ή μέχρι να πάρει χρώμα και να γίνουν τραγανές οι άκρες. Another new dish, made from scratch. Apple galette this time, which I've never made or eaten before. It's like a folded flat pie, where the pastry dough is wrapped over a fruit filling in the center. One of those recipes which look easier to make than it actually is. This one needs practice and skills! But even if it didn't look perfect, it baked perfectly and tasted divine. Savoury flat pie with spinach and egg 🌱🍳 I love puff pastry! I could even eat it without filling 😅 Fillings of course make it even better. Puff pastry isn’t only a great base for desserts, though, but also for savoury dishes like this tasty and filling vegetarian savoury flat pie 😊 Recipe (2 servings): - 1 sheet of puff pastry - 300gr spinach - 4 eggs - 25gr grated old cheese - 25gr panko breadcrumbs - 100gr creme fraiche - 1 clove of garlic - pinch of nutmeg - salt and pepper 1) Preheat the oven on 210•C. Bring 1l of water to a boil. 2) Grate the nutmeg. Cut the garlic finely. Tear the spinach into pieces into a colander. 3) Roll out the puff pastry on a baking try. Roll the sides over for 1cm. Spread the panko breadcrumbs over the pastry and poke holes into it using a fork. 4) Pour the boiling water over the spinach and wring it out. Stir together the creme fraiche, old cheese, garlic, spinach, nutmeg and some salt and pepper. 5) Spread the mixture over the puff pastry. Leave small spaces for the eggs. Put into the oven for 10 min. 5) After 10 min., put the eggs into the provided spaces.
