Quiche with Bulgarian cheese and Thyme Ingredients: -1 pack of Shortcrust pastry or “Pâte brisée” -200 gm Sheep Bulgarian cheese unsalted, broken into pieces (A.K.A Bulgarian feta) -100 gm grated Emmenthal cheese -100 gm grated Mozzarella cheese -1/2 cup chopped fresh thyme -1/4 tsp ground black pepper -3/4 tsp salt -1 cup fresh cream -2 tbsp of sesame Cooking Directions: Before you cook the crust as instructed here-below, compare it with the directions on the pack. 1. Preheat oven to 180°C. Roll out dough on floured surface to 32cm round. Transfer to 25 diameter tart pan. Press to form double-thick sides. Pierce crust all over with fork. 2. Crumble the Bulgarian cheese on the crust. Put fresh ground pepper and salt. 3. Arrange the fresh thyme over the white cheese, followed by the Emmenthal cheese and Mozzarella. 4. Pour the cream and sprinkle with sesame. 5. Place tart pan on oven rack. 6. Bake quiche until crust is golden about 30 minutes. The homemade tahini dip a.k.a tarator is the perfect accompaniment to this straight forward recipe. Enjoy! Ingredients: -1 kg cauliflower, cut into florets 2-Vegetable Oil for frying For the Dip: -½ cup tahini (tahina or sesame paste) -3 tbsp fresh lemon juice -3 tbsp water -Pinch of salt Preparation: 1.Bring a large saucepan of salted water to boil, and blanch the cauliflower for 8-10 minutes. Remove from water. Drain and set aside. 2.Heat the oil in a frying pan over medium-high heat. Place the cauliflower in and fry for 5-6 minutes or until it turns golden brown. It is said that we spend around the third of our life sleeping; I would love to know how much am I spending mine baking. I love baking. Whether it’s sweet or savory, my pupils just grow larger in front of almost any kind of food coming out of the oven. Yesterday my hubby and I were invited out, So I baked an apple cake for the occasion and I witnessed it coming out my kitchen triumphantly smelling like heaven. I’m always happy when am asked for the recipe, it is a sign of love. APPLE CAKE Ingredients -100g butter (at room temperature) -¾ cup sugar -2 eggs -1tsp vanilla -2 cups flour, sifted -1tsp baking powder -¼ tsp salt -4tbsp milk -3 sweet apples, cored and sliced (skin on) -1 tsp brown sugar -½ tsp cinnamon -1tbsp limoncello Preparation 1. Preheat oven to 180° C. Butter and flour a 22cm round cake pan. 2. In a large bowl, using a hand mixer or stand mixer, beat butter and sugar together until light and fluffy, add eggs, vanilla, flour, baking powder and salt. 3. Pour milk gradually while mixing and scraping down the bowl with a spatula as you go. 4. Pour the batter in the cake pan and decorate with the apple slices arranging them close together and overlapping on top of the batter. 5. Mix brown sugar and cinnamon together and sprinkle this over the apples. Drizzle with limoncello (or lemon juice). 6. Bake for 40-45 minutes. Check early, cake is done when a toothpick inserted in the center comes out clean. 5. Cool the cake in the pan on a wire rack. 6. Chicken Noodles Ingredients 500 grams rice noodles, cooked 1 tbsp cooking oil 1 thumb fresh ginger, minced 4 chicken breasts, thinly sliced 1-2 sprigs of fresh rosemary Juice of 1 lime Salt and pepper 1 cup romain lettuce, slices (green only) 3/4 cup carrot, julienne 3 tablespoons soy sauce 3 tablespoons sesame oil 3 tablespoons olive oil Instructions 1.Heat oil and sauté ginger. Delightful Rose Cakes Some baking pans are worth every penny and this is one of them. Not only the recipe tastes great but my cupcakes look amazing too. Ingredients • 1 1/2 cups sugar • 1 cup butter • 5 eggs • 3 cups flour • 1 1/2 teaspoons baking powder • 1 1/4 cups milk • 2 teaspoons vanilla • 1/3 cup raspberry or strawberry jam, divided in 2 portions. • Icing sugar (optional) Cooking Directions 1. Preheat oven to 325 degrees F / 180 degrees C. 2. Grease and flour pan well. 3. In large mixing bowl, combine sugar and butter and mix well. 4. Add eggs, one at a time, mixing well after each one. 5. Add remaining ingredients except jam and mix well, scraping bowl occasionally. 6. Fill individual cups 2/3 full. 7. Spoon half the jam (this recipe makes 2 batches) on top of the batter, dividing evenly between the cups. 8. Gently swirl jam into the top of the batter, using the tip of a knife. 9. Bake for 20-25 minutes or until toothpick inserted comes out clean; cool 10 minutes in pan; turn out and continue to cool. 10. Bake second batch. 11. Dust with icing sugar if desired. When she first gave it to me, I thought it was too simple to be good, but it turned out to be one of the juiciest and most flavored beef strips recipe, I cook. It’s a family meal! When it’s on the menu: NO complains, everyone is eating happily. This recipe can be done with rice or mashed potatoes, it can also be prepared as a festive dish, trust me, your guests are going to love it. Tenderloin Strips Easy Version Ingredients: 1kg beef tenderloin, cut into strips 1 onion 1 garlic clove 200g mushrooms, sliced ¾ cup Ketchup ¾ cup olive oil ¾ cup soy sauce ¼ tsp salt ¼ tsp pepper 1 tbsp butter 2 cups basmati rice Preparation: Marinate in the refrigerator, beef strips with ketchup sauce, soy sauce and olive oil, overnight. Melt the butter in a large heavy bottomed pot and add the onions and the garlic. Sauté for few minutes or until the onion starts to wilt and the garlic starts to turn golden. Add the meat and cook until it starts to brown on all sides, add the marinade, season with salt and pepper and let it simmer, with the lid on, until the meat is tender and the liquid is reduced and reaches a thick consistency. Finally, add the mushrooms and let it simmer on medium heat for about 5 minutes. Cook the rice according to package instructions and serve hot with beef strips. I love this recipe especially that it’s done in one pot. This shot has been taken during filming recipes for NADA dairy brand, using their tomato paste. My recipe goes as follows: Paella Ingredients • 2 tbsp vegetable oil • 1 onion • 1 chili, sliced •1 bell pepper, chopped • 2 chicken breasts, cut in cubes • 1 tsp salt • ½ tsp paprika -1½ cups uncooked long grain rice -3½ cups hot water • ¼ tsp saffron • 1 tbsp tomato paste • 6 large prawns • 12 clams • 2 tbsp lemon juice • 16 cherry tomatoes, cut in 2 • 1 tbsp fresh or dried rosemary • 1 cup frozen green peas • 2 tbsp olive oil • 2 tbsp parsley, to garnish • 1 lemon, cut into wedges Directions 1. Sauté onions and chili for few minutes then add the bell pepper. 2. Place in chicken, season with salt and paprika and cook on all sides. 3. Pour the rice into the pan and mix it with the other ingredients. Cover with hot water and add saffron. 4. Add tomato paste and let simmer until rice is glazed. 5. Place in shrimps and clams. Drizzle with lemon juice. 6. Add tomatoes, rosemary and peas over the top. Finish with dash of olive oil. 7. Salmon and Avocado Tartare Client: Al Wadi Al Akhdar featuring in 2013 For 4 person Dressing Ingredients: -2 parts Olive Oil -2 parts Balsamic Vinegar -½ part Orange Juice -2 tbsp Lemon Juice -2 tsp Sugar -Salt Ingredients: - 200g fresh salmon fillet, diced - 1 avocado, diced - 2 tbsp lemon juice - 4 tbsp green onions, chopped -4 Cherry tomatoes, halveD - Black sesame seeds, to sprinkle Preparation 1. Marinate the salmon for half an hour in the vinaigrette. 2. In a small bowl, drizzle the avocado with little lemon juice. 3. Coat a ramekin with a cling film. Add avocado and top it with salmon mixture. Chill for 30mn. Before serving, turn the ramekins down on a plate. The cling film should help you detach the tartar from the base. Lemon curd tops my lemon tart to make it epic, and layers my blueberry cake to make it a star dish and spreads over my coconut scone to make it morish. This is how I make it! Ingredients 4 egg yolks 2/3 cup sugar 1 tbsp lemon zest 1/3 cup fresh lemon juice Pinch of salt 85g /6 tbsp unsalted butter, softened to room temperature and diced Preparation This is best done in a double boiler or in “Bain Marie”. Fill a small saucepan with water (about 4 inches) and bring it to boil, reduce the heat to keep the water at a simmer and place a clear Pyrex bowl inside. Make sure the size of the heatproof bowl (i.e. the Pyrex) is not too smaller than the saucepan so the steam is concentrated underneath it. Place egg yolks, sugar, lemon zest, lemon juice, and salt into the Pyrex bowl and whisk until completely blended. As the curd cooks, whisk constantly until the mixture becomes thick, around 10 minutes. Off the heat, add the butter dices and whisk until completely melted. Pour curd into a jar. Leave it open until completely cooled. This is the broad beans season in Lebanon and prices have dropped to less than 1000LBP per kg. In Lebanese currency this is really cheap. So we ate “fül” (broad beans) with beer, we cooked some as a stew with cumin and oil, we put a stack in the freezer. What else? A salad! This salad makes a refreshing side dish. People enjoy most, the combinations of fresh thyme and lemon zest that brings a burst of brightness to the rice. It is done with Basmati rice, but I like to mix my basmati with black forbidden rice, I’m not sure if I do it because of the flavors or because of the name 😊. Forbidden rice or “emperor’s rice” earned its name because it was once reserved for the Chinese emperor to ensure his health and longevity, and forbidden to anyone else. It is gaining popularity for its high levels of antioxidants and superior nutritional value (thank you wiki). I used today a Tilda Basmati Rice & Wild Rice pack, it contains 2 kinds of rice in 1 bag. Like any salad, other ingredients of your choice can be added. “Who knew Rice Salad could be so good!”. Lemon Rice Salad Ingredients -1 cup basmati rice, uncooked -2.5 cups water -Zest of 1 lemon -1/3 cup thyme leaves -3/4 cup fresh broad beans, skinless -1/2 cup unsalted pistachios, soaked in water and peeled Dressing: 1/2 cup olive oil - 1/4 cup lemon juice - Sea salt, to taste Preparation 1.Bring water to boil, then pour in rice. Cook rice until tender and water is all absorbed. (I used a mix of white and black basmati). 2.Place cooled rice in a salad bowl and stir in lemon zest, thyme, beans and pistachios. 3.Combine dressing ingredients together and drizzle over the salad. Garlic Shrimp Pasta From the moment I woke up this morning I knew that spaghetti was going to be for lunch. I’m craving for something fresh and light but not a salad. This recipe uses fresh parsley and spring onions perfect for lazy Sundays! It’s quick and easy to cook, yet so unbelievably tasty! @barillame Garlic Shrimp Pasta Ingredients -1 pack / 500g Linguine or Spaghetti -500g pre-cooked shrimps, deveined and tails removed -1 tbsp grated ginger -4 garlic cloves, pressed -2 tbsp lemon juice -Salt and Pepper, to taste -Olive Oil, to taste -4 sprigs of Spring onions, chopped -Handful of cherry tomatoes, cut in half -¼ cup fresh parsley, roughly chopped Directions 1. Cook spaghetti according to directions on package. I like to add salt, olive oil and oregano in the water. 2. In a large skillet, sauté ginger, garlic and shrimps in oil for about 5-7 minutes or until shrimp turns pink. Add lemon juice and set aside. 3. Spaghetti Bolognese Ingredients -1 pack /500g Spaghetti -2 tbsp vegetable oil -1 large onion, finely chopped -2 garlic cloves, crushed -400g minced beef -¼ cup red wine (optional) -400g fresh tomatoes, peeled and diced -1 tbsp tomato paste -1 tbsp fresh basil, chopped -Salt and pepper -Parmesan Preparation 1. Cook spaghetti in boiled water according to package instructions 2. In a large saucepan, sauté onion and garlic until golden. 3. Add meat and cook for 2-3 minutes, drizzle with wine and continue cooking until browned on all sides. 4. Add tomatoes and cover with water. Add tomato paste. Season with basil, salt and pepper and let simmer for about 30 minutes or until the sauce is thick and rich. 5. Drain cooked spaghetti and add to the pan with the Bolognese sauce. Meatballs, Potatoes and Rice - Daoud Bacha w Riz Ingredients 450g beef ground meat 1 egg 3 tbsp breadcrumb 3 tbsp Parsley Salt and Pepper, to taste 1 tbsp flour Vegetable oil 1 large onion, chopped 2 garlic cloves, minced 2 cups potatoes, diced 4 tomatoes, diced 1 tbsp tomato paste Pine nuts, toasted (optional) Directions In a small bowl, sprinkle the meat with salt, pepper and parsley, add the egg, flour and breadcrumbs and mix. Make small balls. Heat oil in a large pot and add the meatballs to cook until browned on all sides. Remove from pot and set aside. In same pot, add oil and drop in the onions and garlic to fry until golden. Add potatoes and tomatoes and mix gently. Cover with water and let it simmer on medium heat. In a bowl, hand whisk together sifted flour, baking powder, baking soda, cinnamon and orange zest. Add oil into bowl of stand mixer. Add honey, orange juice, sugar, and eggs and mix. Recipe by me 😊 Maya Oryan (Swipe left) Honey Tahini Cookies Makes 30 Ingredients: 1 stick / 100g butter, at room temperature ¾ cup sugar ½ cup tahini 1 tbsp honey 1 tbsp orange blossom water 1 ½ cups all-purpose flour 1 tsp baking soda Pinch of salt Directions: In a stand mixer, beat butter and sugar on medium-high until light and fluffy. Gradually add the tahini, honey and orange blossom water. In a medium size bowl, whisk flour, baking soda and salt together. Reduce the mixer speed to low and slowly add the flour to tahini mixture, combining well until forming a dough. Chill in the refrigerator for about an hour. Preheat oven to 170°C or 350° Line baking sheets with parchment paper. Using your hands, take a walnut size of dough and shape into balls. Arrange them on the cookie sheet at least 2 inches / 5cm apart. Dip the tines of a fork in flour and gently press a crisscross pattern into each ball. Dip fork in flour after every cookie to avoid sticking. Christmas Stollen Ingredients >1 cup dried cranberries >1 cup dried raisins >¼ cup fresh orange juice >1 tbsp cointreau >1 tbsp active dry yeast >¼ cup lukewarm milk >2 tsp honey >½ cup/100g unsalted butter, softened >1/3 cup honey >1 large egg, beaten >1 tbsp grated orange zest >½ cup peeled, slivered almonds >3 to 4 cups all-purpose flour >1 tsp salt >2 tbsp unsalted butter, melted >2 tbsp granulated sugar >2 tsp ground cinnamon Preparation Place the dried fruits in a bowl and drizzle with orange juice and liquor. Stir the mixture to coat and set aside. In another bowl sprinkle the yeast with warm milk and wait until it rises and makes a good head of froth (about 10 minutes). In the mixer bowl, add the cranberries and raisins, the yeast mixture, butter, honey, egg, orange zest, almonds and salt. Start mixing adding the flour gradually, half cup at a time until the dough starts to pull away from the sides of the bowl and is smooth and elastic. Wrap the dough in an oiled plastic film and cover with a damp tea towel. Leave to rise in a warm place for 1 hour, or until doubled in volume. Knock back the dough and divide into 2 portions. Shape each portion into an oval; alternatively roll the dough in one large loaf without dividing it. Glaze with melted butter and sprinkle with the sugar and cinnamon. Line the baking sheet with parchment paper, place carefully the dough, cover with tea towel and leave again to rise for another 45 minutes to 1 hour. Preheat the oven to 185 degrees C/ celsius 365 degrees F for 10 minutes. Place the dough in the middle rack of the oven and bake for 25-30 minutes. If using thermometer the internal temperature of the bread should reach approximately 90 degrees C (190 degrees F). Blueberry Cake Ingredients 1 ½ cup sugar 1 cup / 2 sticks unsalted butter 3 eggs 2 teaspoons vanilla 2 ¾ cups all-purpose-flour ½ teaspoon salt 1 teaspoon baking soda 2 teaspoons baking powder ½ cup milk 3 tablespoons lemon zest 1 cup fresh blueberries For the topping 3 tablespoons icing sugar 1 tablespoon lemon juice 3 tablespoons flour 2 tablespoons dark brown sugar 2 tablespoons oats 2 tablespoons almonds, broken or sliced 2 tablespoons butter, at room temperature. Preparation Preheat the oven to 185 degrees C. Grease and flour a 12-cup pan. In a large bowl, beat butter and sugar together until light and fluffy, about 3 minutes. Beat in eggs, one at a time. Beat in vanilla. Sift flour, salt, baking soda, and baking powder in a large bowl. Add gradually to butter mixture. Beat until well mixed, making sure to scrape down the bowl with a spatula. Fold in lemon zest and blueberries and transfer to pan. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean. Remove the cake from the oven and let it cool on a wire rack for at least ten minutes before trying to remove it from the pan. To make the topping, combine flour, sugar, oat and almonds. Add the butter and rub the mixture with your fingers to make small clumps. Spread the mixture on a baking tray and cook in oven for 7-10 minutes. Let cool. To make the glaze, whisk together icing sugar and lemon juice. Caramel Chocolate Tart For the base: 32 chocolate biscuits, crumbled - 50g butter, melted For the filling: 150g semi-sweet chocolate chips - 2 cups heavy cream - 3 tbsp sugar - 2 tbsp caramel sauce - ½ tsp salt - 25g corn flour - 1/3 cup milk Directions: 1-To make the base Pulse biscuits and butter In a food processor until you have a moist sandy mixture. Press biscuits into a tart tin and refrigerate for 3 hours. 2-To make the filling: In a saucepan, on low-medium heat, pour the chocolate chips and the cream and stir until the chocolate melts. Add sugar, caramel and salt. Stir to well combine. 3-In a small bowl, whisk corn flour and milk together and, off the heat, add to the chocolate mixture and mix. Return sauce over low heat and keep stirring 5-7 minutes or until sauce thickens. Client: @alwadialakhdar Almond Biscotti Ingredients: 1 cup plain flour - ½ tsp baking powder - Pinch of salt - 1 egg - ½ cup sugar - ½ tsp almond extract - 2 tsp Al Wadi Al Akhdar orange blossom - ½ cup almonds, halved Preparation: 1. Preheat the oven to 180°C. Sieve the plain flour into a large mixing bowl and add baking powder and salt. 2. Whisk the egg and sugar until pale and frothy. Beat in the almond extract and the orange blossom. 3. Fold in the flour mixture along with the almonds and work this into a dough. 4. Flour your surface and hands, as the dough might be a bit sticky, and knead it a little to form a log-like oval form, 20cm in length. Pat down ends slightly. Place it on a lined baking tray and bake for about 25-30mn or until it is a pale brown color. 5. Transfer to a wire rack and leave for 5mn to cool. Using a bread knife, cut the log into sticks about 1cm thick. 6. Place them back on the baking tray and cook again for another 5mn on each side or until hard and brown. Ingredients: 2 sticks butter - 1 ½ cups sugar - 1 egg - 1 ½ tsp vanilla - 2 ¾ cups flour - 2 tsp baking powder - 1 tsp salt Preparation: Pre-heat oven to 180°C / 350°F, and place rack in the center of the oven. Line baking trays with parchment paper. Cream butter with sugar until light and fluffy. Beat in egg and vanilla. Add flour, baking powder and salt. Mix until a dough is formed. Divide dough into 2 balls. On a lightly floured surface, roll out each ball to an approximate thickness of 1/4 inch (6 mm). Dip cookie cutter in flour before cutting out shapes and transfer to baking sheets. Bake cookies 10 to 12 minutes (depending on size) or until edges are firm and cookies are dry to the touch. Do not let cookies color. Cool on sheets 1 minute; transfer to a wire rack to cool completely.

ITALIAN APPLE CAKE Ingredients: 100g butter (at room temperature) - ¾ cup sugar - 2 eggs - 1tsp vanilla - 2 cups flour, sifted - 1tsp baking powder - ¼ tsp salt - 4tbsp milk - 1-2 sweet apples such as gala or golden, cored and sliced (skin on) - 1 tsp brown sugar - ½ tsp cinnamon - 1tbsp limoncello Preparation 1. Preheat oven to 180° C. Butter and flour a 22cm round cake pan. 2. In a large bowl, using a hand mixer or stand mixer, beat butter and sugar together until light and fluffy, add eggs, vanilla, flour, baking powder and salt. 3. Pour milk gradually while mixing and scraping down the bowl with a spatula as you go. 4. Pour the batter in the cake pan and decorate with the apple slices arranging them close together and overlapping on top of the batter. 5. Mix brown sugar and cinnamon together and sprinkle this over the apples. Drizzle with limoncello (or lemon juice). 6. Bake for 40-45 minutes. Check early, cake is done when a toothpick inserted in the center comes out clean. 5. Cool the cake in the pan on a wire rack. 6. Take advantage of summer's fresh green beans with this healthy vegetarian recipe. Loubieh Bi Zeit or Green Beans in Oil Ingredients: 1kg flat green beans (a.k.a helda beans), washed - 4 tbsp olive oil - 1 onion, sliced - 7 garlic cloves - 400 g ripe tomatoes, chopped - 1/2 cup tomato sauce - ¼ tsp Lebanese seven spices - ½ tsp salt - Fresh herbs for garnish  Directions: 1. Top and tail the beans and cut into even-sized pieces. 2. Fry the onions over medium-high heat until golden. Add the whole garlic, the flat beans, the pepper and the salt and sauté for 2-3 minutes or until the beans are a vibrant green. 3. Add the chopped tomatoes and stir. 4. Cover with water and simmer on low-medium heat for about 25 minutes. 5. Remove the lid and add the tomato sauce. Continue cooking until the liquid evaporates and the tomatoes form a thick coating around the beans. 6. Lemon Panna Cotta Ingredients: 1 ½ tsp unflavored gelatin - 2 tbsp cold water - 1 cup heavy cream - 1 cup whole milk - 1/2 cup sugar - 
1 tsp vanilla extract - 2 tbsps limoncello - 1 tbsp lemon peel, grated - 1 cup sour cream Strawberry Coulis: 200g fresh strawberries, hulled, chopped small - 10g butter (optional) - 3 tbsp brown sugar - 
1 tbsp lemon juice - 50g fresh strawberries, hulls removed and cut in half to decorate. Preparation To make the strawberry coulis: In a medium saucepan, combine the strawberries, butter, sugar, and lemon juice. Cook over medium-high heat until the sauce becomes like a purée. Remove from the heat. If you like your coulis thin, strain it or blend it swiftly with a stick hand blender. To make the Panna Cotta: Sprinkle the powdered gelatin over the cold water and let soak for 5-10 minutes until soft. Pour the cream and the milk in the saucepan and heat until warm. Stir in the sugar and vanilla until dissolved. Remove from heat and stir in the soaked gelatine, limoncello, lemon peel and sour cream until smooth. Pour into serving glasses (only half of 3/4 way) and refrigerate until firm. The time depends on the size of the glass, but be sure not to take it out too early. When the Panna Cotta has firmed, pour a layer of strawberry sauce over each treat and decorate with fresh strawberries. The ghee traditionally incorporated isn’t something my heart desires, therefore I changed the filling to a healthy version inspired from my dad’s recipe. Ingredients Kibbeh Bowls: 1kg lamb ground meat - 3 cups cracked wheat - 1onion, chopped - 10 fresh basil leaves, minced - 1tsp dried mint - 1tsp salt - ½ tsp sweet pepper - ½ tsp cinnamon - ½ tsp black pepper Maya’s Ingredients Filling: 150g goat labneh, crumbled - 4 tbsp fresh thyme leaves - 1tbsp toasted sesame seeds - 1tsp sumac - 1tsp honey - walnut - Olive oil 1.Combine kibbeh bowls ingredients to get a dough-like consistency. This can be done in a large bowl and wooden spoon or using a food processor. Refrigerate for 15 minutes. 2.Pound the sesame seeds, thyme and sumac in a pestle and mortar. Spoon over crumbled labneh. Drizzle with honey and sprinkle with chunks of walnut. 3.To form the bowls shape kibbeh, wet a plastic sheet (cling film) and place it inside a small bowl. Press the meat dough flat, 1/3 inch / 7mm thick inside to take the shape of the bowl. Repeat, wetting your hands with cold water as you work. 4.Each 2 molds will make one piece of kibbeh. Stuff one half with mixture and place it on the palm of your hand (after pulling away the plastic film), place the second half over it and seal the rims together. Brush with vegetable oil. 5.Spoon the labneh mixture, finish with a drizzle of olive oil, before joining the 2 molds together. 6.Carry carefully the kibbeh bowls and bake over charcoal on both sides until cooked thoroughly.
