Pear & Chocolate Cake (torta di pera e cioccolato) from Torta della Nonna by @emikodavies Inspired by a Florentine bakery's recipe, this flourless chocolate cake was a fudgy delight. I'd never baked with almond meal before (only almond flour), and I loved the slightly grainy, nutty texture it gave the bake. For our final baking challenge from Torta della Nonna, A Collection of the Best Homemade Italian Desserts, we could choose any dessert from the celebrations chapter. I was drawn to the story of the Schiacciata alla Fiorentina, the Florentine cake. In Florence, during Carnevale, pastry shops are filled with this sugar-dusted yeast cake. It's a super simple cake to make, even with the long rising time. I had never made a yeasted cake before and I loved the spongy and light texture. Scented with orange zest and vanilla, this cake goes so well with coffee or dessert wine. It can have a cream filling but I chose to keep it simple. I love the giglio fiorentino dusted in cocoa powder over the powdered sugar topping. This giglio, the Florentine fleur-de-lis, is a symbol of the city of Florence. Today our #rainydaybitescookbookclub is having our final recipe challenge from Torta Della Nonna by @emikodavies. Our group had the choice of any recipe from the celebrations chapter, and I made this beautiful Florentine cake,Schiacciata alla Fiorentina, complete with a Florentine fleur-de-lis on top! This cake is traditionally served every February, around Carnival time. It’s a cake that is perfect for snacking with it’s soft and spongy texture with hints of vanilla and orange zest. The dusting of powdered sugar keeps this dessert light. The fleur-de-lus is made using a stencil and cocoa powder. The hint of chocolate paired perfectly with the bit of orange in this yeasted cake. The author notes that you could fill this cake with whipped cream, but, I left mine plain. I don’t have a slice shot to share as I made this awhile ago for a holiday dinner. This was absolutely delicious and the presentation definitely made this perfect for a celebration. I can’t wait to see what everyone makes today!
