The burns are starting to produce a reasonable quantity of morels. This year's abundant rains and warm weather are making the magic happen in the mountains! Last year the rains werent consistent enough to get a good flush in my area but this year seems different so far. Morels are my favorite #mushroom to pick for the sheer enjoyment of the endless perfect spring weather and that feeling of bewilderment and satisfaction at the end of the day. Walking miles in the back country, away from it all and focused on only the thrill of the hunt. What could be a better life?! It may not be the season of abundant gardens just yet but I'll tell you what, one walk through the forest and there is plenty for a nice dish after your walk. On the left *Garlic Mustard. Both edible AND incredibly invasive in my area. So eating it saves biodiversity! That's a win. High in Vitamins A, B, C and E, you can't argue with it's health benefits but it's also everywhere. Prolific and an easy Spring harvest. I love free food. On the right are two separate leaves. In my hand on the left is a pretty popular wild foraged edible* ramps. You may know it by one of its many other popular names * wild garlic, wild onion, wild leek. This makes sense when all of them are part of the Allium family. It's name showcases the acute awareness of the layman's understanding that it fit in that botanical family. The leaf on the right in my hand is a Trout Lily leaf, mottled and a patchwork of colouring, I have only recently found out about it's edible qualities. The leaves remind me of sucking sweet honeysuckle and the jury is still out but I might prefer the flavour to the ramp if I were eating a forest snack. To actually use some of my findings in a meal* I would take a big wack of washed Garlic Mustard and give it a quick go round a pan in some sesame oil. Add some chopped ramps for that oniony burst and then create a well in the center and pop an egg in there. Cheap and easy meal. 💥 The forest is already giving us food. Not long until our gardens do too! (I am not a professional in this area and I would do a lot of research before eating anything in the woods. Locally foraged, sustainably focused. Reishi (Ganoderma Tsugae) and Red Belted Polypore (Fomitopsis Mounceae) ready for the deep freezer. I clean these well, vacuum pack them to keep them as fresh as possible. The freezing also kills any residual pests that may still be in the fruits. The dehydrator does not kill them as it is a slow, low and gentle process that keeps all the focused medicinal compounds intact. These were harvested and flash frozen fresh last fall. I will be using them in extracts and products this year. I have new products coming out, it's a process and it's very hard to get these right. I have to be on the same level as the chai, elevated, unique, one of a kind. You are going to love them. #wildforaged

Dandelion jelly is finished! This delicacy is a labor of love, for sure. The hours that it takes just to collect the flowers and to separate the petals from the greens is way more than I would like to count. This recipe used dandelion petals, sugar, pectin, and lemon juice. I also added a little bit of orange sugar that I made a while ago, and a tiny bit of lemon zest that was strained out before bottling. It truly tastes like sunshine in a jar. [NPD post 2/2] Spent all day Saturday coordinating and shopping and blending and jarring. Every past NPD I’ve processed the nettles the day of, and this time they had to wait 24 hours, but they still looked pretty fresh. I ended up with 1.88 gallons, which is a little less than last year. Divvied up half for myself (to pop in the freezer) and half for landmates and loves. I wanted to give away more but it’s a staple food for me throughout the year, and keeping half feels fair most years. It’s just hard to love so many people! Now I get to be the pesto fairy and drive it around the land today for dropoffs. I hope it nourishes the bodies of the ones I love, and that they can taste the kisses I gave the (hairy but stingless) tops of the leaves. Spending this weekend (and always) just floored with gratitude for this generous earth, which feeds me and sustains my every need. I look forward to eating this fresh, nutrient-dense, and delicious wild food throughout the year once again. The lawn is going to get its first mowing of the season today. Yesterday I collected dandelion flowers to make some lovely dandelion jelly with. Today I decided to collect some dandelion greens before the mower chops them to bits. You can eat every part of a dandelion plant. The greens are highly nutritious, but can be a little too bitter for some. I will be blanching these to cut the bitterness, then fermenting them. @pascalbaudar’s book, Wild Fermentation gave me the inspiration and know how to make this ferment, but in all actuality, it’s easy enough for anyone to do. I will update results in a future post. Benefits of collecting dandelion parts include, but is not limited to: It gets you outside. It puts you in touch with the earth. You get all the benefits of the sun and fresh air. You feel an instant sense of gratitude as you realize how food and medicine are placed everywhere, right below you feet. I thought I might set myself up for a spectacular fail this spring. Why not? The brilliant (😬) idea of picking and arranging a jam-jar, vase, teeny pot of foraged flowers every week for a year. What could go wrong? How many weeks will it last, I wonder, before life gets in the way or inspiration fails? The first cut this spring is ~ Green Alkanet and Forget-me-not ~ Alder and Birch twiggery-pokery ~ Fern fronds, just unfolding ~ wild Garlic flowers ~ Sycamore at its wrinkled, crispy, crunchy best ~ Euphorbia There’s a little shot of the forget-me-not showing its yellow eye to attract pollinators and it’s white eye to let them know that it has been visited and the nectar is gone from that flower “so please move along”. Euphorbia ( that’s one that needs its ends dipped in just boiled water for a few seconds ) lasts ages, in-fact this whole bunch has done so well - I picked it all 5 days before I got around to arranging, and it’s been 3 days since these photos - everything is in beautiful condition still, and there’s a pretty confetti scatter of fallen forget-me-not heads on the table adding to the pleasure. #wildflowers #wildflowersofinstagram #woodlandflowers #wildforaged #forageyourselfhappy #weeklyposychallege

In 1/2 a cup of boiling water (from the kettle is fine) stir in a tablespoon of local honey. I used a local lavender infused honey🪻 Fill a tall class with ice & pour your simple honey syrup over it, follow with your chilled tea & finish with a big squeeze of fresh lemon to taste 🍋 Enjoy! It’s nettle foraging season in Jersey! Pick the tip tops so you can harvest from your favorite wild patch over and over again. Harvesting the young part of the plant is both delicious and allows the plant to regenerate. Be sure to wear gloves - it’s called stinging nettle for a reason!
