Wild garlic and sea salt butter with crispy roast spuds 🥔 🌱 Sadly, the wild garlic season is soon coming to an end but I’ve been making the most of this springtime treat that pretty much grows on my doorstep! You can easily sub the wild garlic in this recipe for chives or a mix of parsley and crushed garlic - it’ll be just as delicious! 5 or 6 Maris piper potatoes (or another main crop spud) olive oil 50g butter a few wild garlic leaves, finely chopped flaky sea salt Preheat the oven to 200°C fan. Cut the potatoes into 2cm dices, add to a baking tray with a light drizzle of olive oil. Toss to combine and roast in the oven for about 30 minutes, until the potatoes are golden and crispy. Mash the butter with a fork, combine with the wild garlic and a pinch of flaky sea salt. Remove the potatoes from the oven, add a few chunks of the garlic butter and put back in the oven for a couple of minutes more. Alabama and other parts of the southeastern United States offer plenty of edible plants and greens to forage this spring. Some of these edible plants include dandelions, cudweed, wild lettuce, chickweed, and several varieties of sorrel. Lovely foraging day @nativespace_darwen yesterday with @pendleplantcraft & @wholesomehippiechef 🌲 We foraged Herb Robert, common hogweed, ribwort plantain seed heads, cow parsley, ground elder, vetch, rosebay Willowherb & dandelion whilst learning about the plethora of benefits of wild foods. It's recipe time! I like to talk about cultivating uncommon native vegetables but if you don't know tasty ways to eat them, what's the point? This recipe for a (nearly)-all-wild potato leek soup incorporates groundnuts (Apios americana), ramps (Allium tricoccum), stinging nettles (Urtica dioica), and sochan (Rudbeckia laciniata). I will say first off that indigenous cultures should be the starting point for sources of information on how to eat any particular plant. Some plants may require specific preparations to make them edible or nutritious and any cultural or sacred traditions should be respected. But in addition, humans have borrowed food plants from many locales in a syncretistic manner to add to their own cooking traditions since the dawn of time so I believe creating new recipes for modern times is justified. If you'd like to make this vegan, cashew cream and olive oil could replace the cream and bacon. In fact, #rampseason is the only time of year that I purchase bacon but I feel it's justified to make extremely tasty foods from these super healthy plants. (Nearly)-All-Wild Potato Leek Soup 1 lb groundnuts 6 oz ramps (1 bunch) 5 oz nettles, tender tops 1 small bunch young sochan leaves 5 C water 4 oz bacon 1 C heavy cream 1 TBL miso 2 bay leaves 1 tsp salt Black pepper Wash groundnuts and peel at least half of them, cut into 1/4 inch cubes Wash ramps, remove roots, chop finely, reserving some stem bits raw for topping Wash and pre-cook nettles by sautéing for 5 min until wilted, then puree in a blender Chop sochan leaves finely Render fat from bacon in a large pot over medium-low heat. Remove bacon to a plate to cool and crumble later as topping Cook groundnuts, ramps, and sochan in bacon fat for 5-10 minutes over medium-high heat until beginning to brown Add water, pureed nettles, miso, salt, pepper, and bay leaves. Bring to boiling over high heat, then reduce to low and simmer for 30-40 minutes. Taste for salt and add cream and heat gently if needed. Cream can also be added to individual bowls instead. Serve with crumbled bacon, chopped fresh ramps, and (opt. parmesan cheese or crackers) #wildfoods #foraging #permaculture #forestfarming

Trout Lily native to New York area Trout Lily or Fawn Lily grows wild in the woodland, specifically where semi swampy or marshy. This plant participated in a symbiotic relationship with ants who feed on the outer coating of her seeds. Ants then discard the seeds which are then, in essence, planted. Yellow Trout Lily is intelligent and thus this little lady symbolizes friendships and relationships that are harmonious. Used in magic she is folky and wild. Used to treat gout in the 1800’s her flowers and leaves are eatable, as well as her roots used as medicine. The flowers are wild food and you can add them to salads. (Although caution ⚠️ to much can cause vomiting) As a tea of the roots and leaves she is used to treat swollen glands, tumors and ulcers. it has been used to lower fevers. The flowers have been used as a contraception. When I look at her leaves I don’t want to eat them, but the flower is attractive and slightly sweet. I have been munching on her flowers here and there in my travels. Raw vegan swiss cheese sandwich Buckwheat, chia, flax, sesame, coconut, valerian, cucumber, tomato In springtime, valerian is one of the first plants to emerge. The root has a relaxing effect, but also has a unique scent that is reminiscent of Swiss cheese. In this dish, I paired Valerian root with coconut butter and tahini to create a melted cheese! The bread is also very high protein, since buckwheat has all of the essential amino acids. It's dehydrated at low temperature, but remains fluffy and moist. Look for the cheese recipe in my upcoming wildcrafting book, which is based on native and wild plants found in the Pacific Northwest. 🌙 The beginnings of a dead hedge fence for my garden. This season, we are borrowing some free-roaming neighbour cows to clear the land that we can’t get to. Despite what the internet says, I have discovered that cows will happily eat garlic plants (and everything else!) so needless to say, building a fence has been a necessity. Dead hedges are economically and ecologically friendly, because they are made of fallen trees, branches and dead wood that would normally be burned or taken to the dump. They not only create a barrier, but provide habitat for birds, amphibians and small mammals. Once complete, I will grow wildflowers along the border to provide further food and shelter for my animal friends. Already, I’ve seen birds perching on the birch poles. As you can see, I’m nowhere near finished as I’ve also discovered that calves will jump over fences if given the opportunity, so I will need to spend some time over the next couple of days collecting more wood and building the fence higher. As much as I’ve resented having to chase the cows away from my garden and losing a few garlic plants, I’m also grateful that they have given me an excuse to get off the couch and get on the land. While looking for dead wood, I’ve discovered so many little corners of the land that I didn’t see before and it feels SO GOOD to work in harmony with the earth, using natural materials to create something so rustic and beautiful. ❤️

Hey folks, Tim Linehan here. ⁠ ⁠ We've seen some new names around here lately. We welcome you and thank you for giving us a follow. To catch you up, I'll share a little story about the humble beginnings of Linehan Outfitting.⁠ ⁠ In 1989 I decided on a wing and prayer to load up my little Toyota pick-up and move to Montana in hopes of becoming a fly fishing and hunting guide. Prior to starting the truck, I had broken up with Joanne since at the time I felt I wanted to be free from all responsibilities beyond myself and my dreams. The break up lasted until Chicago. I couldn’t find a pay phone fast enough to call Joanne and beg her to join me in Montana.⁠ ⁠ Serendipitously we ended up in the extreme northwest corner of the state in what was, and actually still remains, one of the more remote areas in the lower forty-eight states. This place called Yaak Valley is not typical big sky country. It’s a place of dense, coniferous stands of timber and a place where the Pacific rainforest ecosystem crashes into the spine of the northern Rocky Mountains.⁠ ⁠ In 1992, we sold $900 worth of AT&T stock that my grandfather had left me, borrowed $330 each from my brother and three college friends, bought a drift boat, and incorporated Linehan Outfitting. Humble beginnings.⁠ ⁠ In the early days we lived hand to mouth and immediately realized that a little ambition goes a long way in a place like northwest Montana. There was always work. I guided whenever possible, planted trees for the Forest Service, and did odd jobs whenever I found extra time. Joanne taught at the one room school house, pulled beer at the Red Dog Saloon, and even had a real estate license for a while. Life was simple and we kept our eye on the prize. It has never been our ambition to be the biggest outfitting company in the industry, just one of the best.⁠ ⁠ We’re proud to have been in business this long and to have built our business, our authentic version of the American dream, one step at a time and the old- fashioned way.⁠ ⁠ Looking back, we’d have it no other way. ⁠ ⁠ Thanks so much for reading and for your interest in Montana fishing and hunting! Nettles ma babies! Nettles are one of the best sources of vitamin C you can find. Nettles also contain; Sulphur Zinc Chromium Boron Silicon Selenium Vitamins A, C, D, E, F, and P Iron Nettles kick the ass of spinach in terms of nutritional value, and produces cloth and cordage stronger than hemp or flax. Ive made a nettle and beeswax salve, that is incredible for joint stiffness, which I use on my feet after long runs! Wear gloves- And if you do happen to get stung by those little formic acid containing hairs, grab a dock leaf, macerated in your hand, and rub it on the stingy part! "It is often claimed that crushed dock leaves relieve the pain because their alkaline sap neutralises the nettle's formic acid, but dock leaf sap is acidic too, so this cannot be true. Nevertheless, many find that the dock leaf remedy seems to work, so there may be other reasons for this."
