Just got my silkie eggs and put them in the incubator today! I have never incubated and hatched eggs before, so this will be a new adventure that I am so ready and excited for. Are you wondering why I want to hatch eggs for chick? Well there are a few reasons... 1. I couldn't find many people selling silkie eggs and then I found a local woman that sells hatching eggs. I did a little research and realized it seemed easy enough and would be fun to try. 2. I think being able to do the whole process of something is very important even if just for the knowledge. No better plan than to know how to do something even if you don't do it all the time or every year. But now that we will likely have roosters and the breeds we want, I can add to our flock when needed without having to order from outside. 3. I think it will be fun! 4. I want to teach my son how to hatch eggs. 5. I like it too when it’s fresh but don’t crave it like he does. We pay $7 for a medium size loaf of delicious Bahamian bread here. It’s very good but we aren’t always in a place where we can purchase some. 🏝️ I made a few sourdough loaves previously that didn’t brown so well as our boat oven doesn’t quite heat up high enough to get that beautiful crust! 🥖 I found a recipe for same day sourdough sandwich bread that bakes at 350 and looked like something I could make on our boat. I took out my sourdough starter from fridge and fed it the night before. Let it sit out on counter to double rise to use in the morning. ☀️ Put it all together to rise in time to bake same day. It did take a bit of effort to knead the dough by hand. 💪🏼 Otherwise it was pretty simple to make and tasted great! I always love when I get an update from a fellow poultry lover. Olivia has gotten hatching eggs from us last year and has been showing them. They even placed at the fair she took them too. Even though our flock isn't 💯 up to standard yet, I do think it's wonderful being able to raise awareness about this breed. We love this marmalade and our lime tree is cranking again asking me to make more. Making marmalade is a very different process to jam. Usually only fruit and sugar is used to make jam- it’s quite easy and quick. Marmalades take a little longer and more preparation, but is not difficult either: Fruit is peeled. Peel and flesh are chopped and even seeds are an essential part to use. They contain pectin and make the marmalade set. I like to refer to it as being finished when mixture resembles a glassy, frozen lake. Limes don’t usually have seeds so I collected seeds previously from my mandarins. Any citrus seeds will do. Lime and Ginger Marmalade: 1100g limes 1-2 tbsp citrus seeds 8 centimetre (40g) piece fresh ginger, peeled 8 cup (2l) water 1 teaspoon tartaric acid or citric 1.5 kilogram white sugar 1 cup (180g) finely chopped glacé ginger Peel limes with potato peeler and coarsely chop rind and flesh separately, reserving any juice. Tie previously collected seeds, 1/2 lime rind and fresh grated ginger in muslin cloth and tie up. 2 Combine chopped lime flesh, juice, tied up muslin bag, water and tartaric acid in a large saucepan. Bring to the boil. Boil, uncovered, about 1½ hours or until rind is soft and mixture is reduced by about half. Squeeze and discard muslin bag. 3 Add sugar to pan; stir over high heat, without boiling, until sugar dissolves. Add chopped glacé ginger, bring to the boil. Boil, uncovered, about 20 minutes or until marmalade jells when tested. 4 Pour hot marmalade into hot sterilised jars; seal immediately.
