🖤 Black sesame tofu 🖤 In Japan, sesame tofu is usually a tofu-like dish made with ground sesame paste and kuzu (kudzu) flour, not using soybeans like regular tofu. Some dishes in Japan looks and has a tofu-like texture, but are not tofu in the traditional sense, which can be quite confusing for some people.😆 This black sesame tofu is regular soybean tofu, but with black sesame added! Its a bit of an unusual tofu and definitely something you can’t find in Sydney. It has a very silky and smooth texture, and has a soybean and sesame flavour!😍😍 I had it with wasabi and soy sauce. Sooo yumm!😋 We got this from a tofu truck that comes every Tuesday from a traditional tofu shop in Osaka. In my parents' area, there are no traditional tofu shops that sell freshly made tofu everyday. We can get various types of tofu at the supermarkets and department stores, but I miss traditional tofu shops so this truck was just amazing!🤩

Finally - desserts. First is a dish marked as "Sustainability" on the menu. Notably, the peas used in the imperador dish were freshly shelled. Chef Taka uses the pods left behind as the main ingredient for this interlude. This dish was on the chef's table menu from two years ago, and it's fantastic to see an improved version return for this menu. The pods, together with sorrel for acidity, are blended and chilled down into a smooth granita and garnished with grated lime zest. It's simple but effective. The fresh acidity revitalises the palate for the desserts. The first main dessert makes use of the classic chocolate and coffee pairing. Though a classic idea, Kuro constantly produces varied manifestations of this combinations for its menus. The current rendition is a refined duo of an Amazonian cacao mousse and a single origin Bolivian coffee sauce courtesy of sister venue @kahiisydney. The final dessert is tofu made from comte cheese, milk and black sesame, paired with a simple vanilla ice cream, topped with a kuromitsu black sugar syrup. The tofu has bite that contrasts texturally with its creamier vanilla accompaniment. Both desserts avoid the trap of being too sweet. Test passed. To finish is another serve of the gyokuro tea served as the first item on the menu. It's a nice poetic finish to the meal, whilst also acting to pare back and smooth over any residual sweetness from the dessert courses. To round off, this was a highly anticipated experience, and easily ended up being a contender for the best meal of 2022. Innovation and technique collide in the best possible ways at this chef's table. Yes, even sometimes I don't bother plating up my food, and will eat straight out of the tupperware box ☺️ But what I really want to talk about is my amazing black sesame silken tofu overnight oats! #tofuovernightoats #blacksesameovernightoats #asianovernightoats #blacksesamedessert has always been a favourite of mine growing up in Hong Kong, whether in steamed buns or in hot mochi, and my absolute favourite while living in Japan was their #blacksesametofu So I decided to make a super healthy breakfast inspired by fusing this with #tofufa - a specialty of the island I came from. Tofu Fa is a cold dessert served on a hot day with sliced chunks of silken tofu floating in a bowl of watered down syrup, and topped with grainy brown sugar. The usual oat and bran mix was topped with ground black sesame, ground flaxseed, erythritol, collagen powder, whole chunks of silken tofu, unsweetened soy milk, and some maple syrup to replicate some of the brown sugar flavour. The ground sesame and flaxseed provided the texture contrast whilst injecting a huge amount of nutrients to this breakfast, which provides about half of the vitamin D, B1, B2, magnesium, calcium, iron and even 90% of the vitamin B12 that you need. #healthybreakfast #heatwavefood #nutrientdense Dinner was a lighter version of a naughty treat dish - it was a #tonkatsu sandwich made with very lean pork and cooked in just 1/2 tbsp oil per serving. When I heard this book is based on English boarding school, I was immediately intrigued because half of my childhood was spent in a British (relatively strict Convent) boarding school. My school was located in a small village, far away from big cities - literally in the middle of nowhere... I relate to the begining of the book where the kids were talking after lightouts and the life of a boarder. But damn! This book exceeded my expectations. The story is based on a boarding school - Hailsham. All students were treated with great support and encouragement on arts and literature. However, they were not taught much about the outside world and had very little contact with it. I got a real feel for the friendship and love development throughout the book. Learning their journey from children at Hailsham to grow-ups in the outside world, it makes my heart feel warm but pain at the same time. "Because somewhere underneath, a part of us stayed like that: fearful of the world around us, and - no matter how much we despised ourselves for it - unable quite to let each other go." Very much enjoyed this game home menu from #kurobaranddining Very good but a bit of finesse here and there would have enhanced the dishes even more! . Lightest smoked Tasmanian salmon with kohlrabi, fennel, yuzu film, crème fraîche and a salsa verde. So delicate and the flavours were really nice. I loved the hint of sweetness from the yuzu film, creaminess and slight sourness from the crème fraîche, and the moistness from salsa verde. Perfect start, and a perfect portion to whet the appetite . Duck breast with parsnip puree, plum sauce, confit carrots, roasted Brussels sprouts with bacon, and a black sesame tofu emulsion. The flavours are there and the duck breast was cooked to perfection. The sides were great. I loved the black sesame tofu emulsion on its own but wasn’t quite sure how it tied to the rest of the course, unless it was intended to be a bread accompaniment which would be perfect. . Caramelised places apple, white chocolate mousse, burnt white chocolate, various roasted nuts, finished with a butterscotch sauce. The flavour combination was delicious, though a bit less of the chocolate mousse would have been perfect. .
