Growing up, I’d stand on a step-stool and watch my Grandma Elly make caramels from scratch. Then, we’d sit in chairs that were on wheels at the table in the front room and wrap every single caramel individually…usually with big band music playing in the background. So it’s only fitting that the first little dessert I share with all of you is homemade buttery caramels. Before she passed away, Grandma Elly taught me how to make them. I wrote down every detail from “fuzzy bubbles” to “the water test” so I could get them right for years to come. Keep an eye on my stories for when the order form will open for these delectable little squares. #castlerockcolorado #homemadecaramels #coloradobaker #cottagefoodbaker #coloradocottagefoods #alittledessert

I decided this year for Valentine's Day to make my own box of chocolates. 💜 I really dived into how to make my own caramel, temper that chocolate to a nice shine, and then even slurged on some blacked sea salt for the touch. It's been a journey, and now I get to make my favorite type of bonbon truffle caramel goodness anytime I want. 💙 There's a chocolate shop in Boulder that I had grown to love over the years... and since I live in Suburbia South now, I don't get to make that trip often to get these style of truffles! Heartbroken, but now determined to make them at home and put my own love into the treat. 🩵 Excited for this week and more excited to celebrate love the only way I know how: through desserts. Get you something sweet this week. #valentinesday #denverbaking #chocolate #homemadecaramels #bonbon #homebaker #getsomethingsweet

In a medium saucepan, combine heavy cream, corn syrup, sugar, butter, and salt. Bring the mixture to a boil over medium heat, stirring constantly. Once boiling, reduce heat to medium-low and continue to cook without stirring until the mixture reaches 248°F (120°C) on a candy thermometer, about 15-20 minutes. Remove from heat and stir in vanilla extract. Pour the caramel into the prepared pan and let it cool completely at room temperature. Once cooled, use the parchment paper overhangs to lift the caramel out of the pan. Cut into squares or rectangles. Optionally, wrap each caramel in a small piece of wax paper to prevent sticking.
