Hey FITT Fam! Y'all ready for a delicious plant-based recipe idea that’s great for meal prep?! It’s Quinoa & Black Bean Stuffed Peppers, and it’s PACKED with plant-based protein and fiber to fill you up and keep you feeling satisfied! 😋 Quinoa and Black Bean Stuffed Peppers (Serves 4) INGREDIENTS: 1 cup (190g) quinoa, rinsed 2 cups (480ml) low-sodium vegetable broth 4 large bell peppers, halved and seeded 1 can (15 ounces or 425g) black beans, drained and rinsed 1 cup (150g) frozen corn, thawed 1 tsp (5ml) olive oil Sea salt and pepper, to taste Optional: 3 tsp taco seasoning (adjust to taste) and/or ½ cup (50g) shredded cheese (use dairy-free cheese for vegan option) INSTRUCTIONS: 1. Bring the vegetable broth to a boil in a saucepan. Add the quinoa, reduce the heat to low, cover, and simmer for 15 minutes, or until the liquid is absorbed. Remove from heat, let it sit covered for 5 minutes, then fluff with a fork. 2. While the quinoa is cooking, preheat your oven to 375°F/190°C. Place the bell pepper halves in a baking dish, cut side up. 3. In a large bowl, mix the cooked quinoa, black beans, and thawed corn. Drizzle with olive oil, and season with salt, pepper, and taco seasoning. Stir well to combine all the flavors. 4. Evenly spoon the quinoa mixture into the bell pepper halves. If you're using cheese, sprinkle it over the top. 5. Cover the dish with foil and bake for 30 minutes. Then uncover and continue baking for an additional 10 minutes, or until the peppers are tender and the cheese is melted and slightly browned. 6. Enjoy the stuffed peppers hot, with any additional toppings you like — avocado, plain Greek yogurt, or a sprinkling of cilantro. 7 year 80 pound transformation! I made a post very similar to this last year showing how I've transformed my body over the last 6 years. This year, I did something very different and bulked hard. Picture number 3 is from 2023, and I was around 180, give or take 5 pounds depending on the comps I had at the time. Currently, as of this morning, I'm 199, so basically, 20 pounds up from last year. It's been a hard journey full of discomfort to get here. I chose to do this bulk as clean as I possibly could, which led to nights of eating until I physically hurt. Days of eating so much breakfast I'm still full at 3 pm, but by then, I need to have eaten another meal and had a shake. Weekends of bringing my own food to events and gatherings so I can hit the calorie goals. It's completely backward to what diet culture usually looks like, and many of you may think these are stupid issues to have, but these were my honest struggles the last 6 months. To wrap up this post, I want the last picture, the one I took this morning to be proof to all the other skinny guys out there that it is possible to get big and still look good. It's a mental battle I faced daily. Not having a six-pack has really messed with my mind in some weird body dysmorphia kind of way, but it's getting better. I hated it for a good few months, but I'm beginning to see myself normally again. New member alert 🚨 #1359 This is Zedan. Yes, he is named after the footballer, Zinedine. He is 25 and works in a clothing wholesale company. He was a previous member and had a fantastic result last time, but due to commitments he couldn’t continue. This time we will finish the job off. This will not be a quick fix, it we will be around 6 months minimum potentially a year in total. We will be keeping him fed and taper the weight and calories down slowly. Did you know you can grow your own “crops” from scraps!? 😮 It’s true – you can start a little garden inside your kitchen with some veggies. Some easy ones to get started with are green onions, celery, lettuce, and leafy herbs like basil or cilantro. It even works with sweet potatoes! All you have to do is place the base of the plant – a stalk or bulb – in a cup of water, and it will sprout! Then when it’s time, you can plant it in potting soil inside or in your garden outside. Therefore we shouldn’t have a problem with his food being bland! Credit to him he has already lost a significant amount of weight on his own. However he has never felt he’s been able to push himself and maximise his potential when it comes to physique development. The goal is to build him a physique he can be proud of. We plan on dieting him down over the next 4-6 months while learning the fundamentals of training which should put his physique in a very good place. Why did you join Strength Camp? I was on the hunt for a gym that focused more on strength building as I had previously been more of a HIIT and cardio person and I wanted to try something different. 3. Can you describe your top 3 goals you had before starting? 1. Gain strength 2. Improve my endurance 3. Maintain/improve my mobility while adding muscle 4. Can you list your achievements you've had since beginning at Strength Camp? I’ve had a huge increase in overall strength. But I think my biggest achievement has been going from absolutely HATING strict press (with no weight on the bar) to actually liking strict press and being able to add weight! 5. What is the biggest obstacle you’ve faced in your journey? My biggest obstacle is myself haha. But coach Ruth is really good at knowing what I’m capable of and forcing me, (in a loving way of course😅) out of my comfort zone to do harder things! 6. What kind of compliments have you received since you started training at Strength Camp? My favourite compliment was my kids saying “wow you’re strong mom” when they watched me flip the tire! 7 “BONUSES” OF EATING JUNK FOOD 😬 Normally we talk about the benefits of eating whole foods… 🤔 Well, let’s flip that script and talk about the likely “benefits” that ultra-processed junk foods bring to the table — that really aren’t benefits at all. Ultra-processed foods are manufactured “food products” like snacks, packaged meals, cereals, etc.) 7 “BONUSES” of Eating Too Much Junk Food 1⃣ Added sugars and unhealthy fats that cause inflammation, which is linked with chronic diseases like type 2 diabetes, heart disease, some cancers, and weight gain. 2⃣ Excess sodium, which is linked with higher blood pressure and a higher risk of heart disease and stroke. 3⃣ Gut problems like constipation can happen, because they are low in fiber. 4⃣ Roller-coaster energy and blood sugar levels because of their low fiber content and high amounts of refined carbs/added sugars. 5⃣ Fewer vitamins, minerals, and essential nutrients that your body needs — especially for the high number of calories these foods contain. 6⃣ Cravings, because they are chemically engineered to be super delicious and make you want to eat more of them. 7⃣ A higher carbon footprint because of the manufacturing process.
