Been wanting to start a food blog for a while. As I always say, “a girl’s gotta eat!” Friday someone told me that I looked too skinny and that I need to eat more. Initially, I laughed, but now after reflecting, I can see that was self-defense to mask my anger. I did speak up and say that I had an eating disorder for 17 years, and that I eat more food and my husband, which is true.😹 As my family and skating coach would attest, I eat more than any person they know. But why did I feel the need to defend myself? Looking back, I wish I would have I told them not to comment on someone else’s body. You don’t know my habits. You barely know me. I say this from a place of concern not from a place of judgement (another battle I’m still fighting), commenting on someone else’s body in front your young impressionable daughters, think about what are you teaching them. We are more than our bodies, a number on a scale, a size.… Numbers are just numbers. Sizes change like season. The only constant in life is change. There are seasons of busyness. Seasons of rest. Seasons of joy. Seasons of loss. Our movement and energy, change with every season. How do you feel in your body? How does your body feel when you move it? So Garlic • 2 Tbsp. Cheesy Bacon & Chive Seasoning Mix • 1 1/2 cups Gruyère or Swiss cheese, shredded • Salt and pepper, to taste Preheat oven to 375°F. Butter an oven-proof baking dish and set aside. Slice potatoes in 1/8" thin slices and set aside. Add butter to saucepan, and heat over medium heat. Turn to low and add ½ of the cheese, stir until cheese is melted; add more milk if sauce is too thick. Layer the potatoes and onion slices in baking dish; lightly add salt & pepper on the layers. Pour the sauce over the potato layers. Top with remaining cheese. Spray aluminum foil with cooking spray, then cover the casserole dish (sprayed side down). Bake for 55-60 minutes. Remove foil and bake uncovered an additional 20 minutes. Baked Chicken Legs with Potatoes, Onion and Garlic • 15-20 small potatoes • 1 large red onion, quartered • 4 Tbsp. Fresh Harvest Garlic Olive Oil • 1 tsp. Italian Rustico Seasoning Blend • 1 Tbsp. The Perfect Blend Seasoning • 4 chicken legs, thigh and drumstick piece • 2 garlic heads, peeled and ½" cut off the top • 3 sprigs of rosemary, for garnish (optional) Preheat oven to 375°F and line a large baking sheet with aluminum foil. In a large bowl combine potatoes and onions. In a small bowl combine Fresh Harvest Garlic Olive Oil and seasonings. Brush the chicken legs and garlic with the marinade then add the remaining marinade to the bowl with the potatoes and onions. Mix with a spatula until everything is evenly coated. Place the vegetable and chicken legs in the baking pan. Bake for 45-55 minutes until the chicken is golden brown and crispy and has reached an internal temperature of 165°F, and vegetable are cooked. The first artist I fell in love with was color field painter #MorrisLouis, whose work I encountered at the art museum in #StLouis when I was in university (see stories for the piece that grabbed me then & still does).
