Was thrilled to be part of this piece for #sonomamagazine pondering the importance and implications of home kitchens that serve the public.. Referred to as MEHKOs (micro enterprise home kitchen) these operations are in a legal transitional period as more counties explore and (potentially) adopt the State Of California standard. Right now there is a licensing gray zone and making the jump to a brick and mortar can be justifiably intimidating. There’s more factors than you want to hear about (don’t get me started) opening and maintaining any form of sound restaurant operation. The pressures are enormous and profits generally low. The food writer in me was excited to be on the “other side of the pen” as it were and it brought back a lot of memories crafting culinary wisdom and tomfoolery for @ocweeklyfood over the years. Food is fascinating but the culture side of The Biz is where humanity slams into the equation. This was an excellent deep dive into what makes MEHKOs work and the outside perceptions around the folks behind them. I don’t think they are any kind of real financial threat to the traditional restaurant model and at the very least keeps the brick and mortar competition on its toes. Shops can oftentimes rest on their laurels and believe their own hype which causes complacency. And in this business complacency kills. Upstarts? Oh yes, and that is what makes the culinary world go ‘round in every sense.
