I love long city walks, but under one important condition. Berlin's gastronomic scene starts hitting a new level. Not because of the difficulties and actual circumstances, but because people care. Many do care about the origins of food and sustainability, therefore we are witnessing a constantly growing landscape of pop-up restaurants and shops, which are taking this way of thinking and consuming as a mandate. Of course, there is a long way to go, but now I´m trying to see the bigger picture. Talking about the picture: In today's long bike ride to work, I imagined an interactive map of Berlin with my favorite food and coffee spots, shops, and markets. Those, which I love showing friends when they come to visit or which I put on my very personal Sunday gastronomic walk in a chosen neighborhood. Do you know whether those maps exist? What do you need to get some nice probiotics into your body? Vegetables, salt and water. Lacto fermentation transforms your vegetable into a source of good bacteria (lactobacillus) and minerals, which are important for your immune system. Fermentation helps to preserve the produce and unlock essential vitamins and nutrients, which aren’t available in the original raw form. Since we are also very much of hedonists, the aspect of discovering new flavors throughout the fermentation process cannot be ignored! Please take into consideration 3 main factors 1. Proportion. You need to calculate the right amount of salt. Use this simple equation: vegetable weight + water weight x 0,025 = salt weight (check the video for the example) 2. No oxygen. For lacto fermentation it is important to create an anaerobic environment: We need to seal the jars and use little weights to keep vegetables under the water. We used simple plastic bags filled with water and placed them on top of the vegetables. You can also use another type of weight like a glass or ceramic plate (no metal!). If the vegetables touch the surface and therefore are in contact with the oxygen, bad bacteria (mold) might develop. 3. Temperature: Try to find a dark place at home with the range of 15-23 degrees Celsius. You can apply the principles to many different kinds of vegetables. Check the pictures and videos to know the combinations we have chosen. Let´s start: 1. Wash your vegetables 2. Zero out your scale with the jar 3. Add the vegetables 4. Add water 5. Note the weight of the vegetables and water and multiply with 0,025. You will get the amount of salt in grams. 6. Take the water out and shake with the calculated amount of salt to dissolve. 7. Put the salty water back into the jar with vegetables, add some herbs. 8. Choose a weight to keep your vegetables under the water. 9. Seal the glass and leave at least for 3-4 days. Try. If you feel like the taste can develop more let the fermentation happen for another 3 days. 10. Storage fermented vegetable in the fridge. The fermentation process will slow down significantly. ⬇️

Probably the most powerful memory from our trip to Spain was to meet a wonderful chef and woman Santos. We had the pleasure to try the food in her restaurant La Llar de Santos in Altea, which has the the concept of natural cuisine since almost 30 years. The fish comes from the local bay and vegetables are organically grown by the owner of the restaurant. We had the opportunity to see the farm with our own eyes and were astonished by the variety of fruits and vegetables are growing there. LET’S DO SOMETHING - THE FIRST TPF-FOREST IS HERE After a long research and some effort we finally made it! We founded with our amazing partner PRIMAKLIMA e.V. our very own TPf-forest. We will plant over the next year 4500 trees on a former agricultural land in Saxony turning it into a forest. This is our little effort to keep the world habitable as we know it. Many of us do already a lot to help our environment and for those who don’t: please start taking action to help and preserve our wonderful and beautiful planet. As filmmakers we are working in a privileged industry going places most people can’t. We of all people should know the beauty and the vulnerability of our world as we know it. We already see first hand changes all year long by shooting in the most amazing, most rural or most exciting places. Places that change more and more from what we’ve known and that are endangered by climate change. Let’s face it: shooting a film is not eco friendly. So we all have the obligation to give back and help where we can and not just take advantage of that beauty called earth - as long as we still can. From now on we plan to plant a forest every year. And we hope we can grow those even bigger with more trees and more places and the people living there like in Nicaragua that are heavily affected already by climate change. What’s even more shocking - though 4500 trees sound a lot - it is NOTHING compared to the damage we do traveling through the world to find the right place for our films. We feel obliged to use our position and our resources to change that. It’s not even close to compensate, but it’s a start - hopefully of something bigger. Hectarium, is a research and creation media arts project tracking and visualizing the global use of agricultural land combining data, design and storytelling. The project contains a linear documentary and a 2D mobile game project where you are given the mission to survive and improve your food consumption by living of exactly your share of global farmland. All the statistics and farmer stories feeding the gameplay are based on validated research and real-life encounters and feedback in the field. We are making a unique game that is fun and meaningful at the same time. Easy to understand but difficult to fully succeed. Happy Easter everybody ☺️🐇🌿 We love spending holidays trying new food. Therefore easter bunny brought us gluten-free and plant based bread made by the recipe from @urbanfoodblog. We are glad to share it with you! 1 glas of sunflower seeds 1/2 glas of pumpkin seeds 2/3 glas of nuts 1/2 of flax seeds 1 glas oat flakes 2 tbs chia seeds 1 ts of salt 🧂 Blend half of the ingredients, combine with the whole ones. Add 300 ml (1 1/2 glas) of warm water 3 tbs of melted coconut oil 4 dates or 1 tbs of a natural sweetener like marple sirup Blend, than combine with the rest of the ingredients. Let it chill for 1-2 hrs or over a night. Bake for 1 hr in 175 C.
