Falafel Bowl New to me Vegan product alert!!! Last time that I was at Trader Joe’s, I decided to buy and try their frozen falafel!!! I prepared them in my air fryer and must say that they were absolutely delicious! I have made homemade falafel and have also used box mixes. These little gems are my new at home favorite!! I plan to stock up, next time I shop at Trader Joe’s!! Blackened Chili Lime Tofu 🌿by @realizing_fitness 1 block firm tofu, pressed and cubed 2 tbsp neutral oil of choice, divided 1 tbsp tamari 1 bell pepper, sliced 1 onion, sliced 2 cloves garlic 1 tbsp ancho chili powder, divided 1/2 tsp smoked paprika, divided 1/2 tsp salt (or to taste) 2 limes, juices 2 tbsp maple syrup 1/4-1/2 tsp red chili flakes 1/4 tsp pepper cilantro, chopped jasmine rice In a frying pan, heat 1 tbsp oil. Add tofu and cook on all sides until golden. Season with tamari and add 1/2 both chili powder and paprika. Cook until crispy and slightly blackened. Transfer to a bowl. In the same frying pan, add remaining oil. Heat and add garlic and onions. Cook for a few minutes and then add peppers. In a small bowl, combine salt, pepper, remaining chili powder, smoked paprika, lime juice, maple syrup and red chili flakes. Add tofu back into your frying pan and cook for a few minutes. Pour in sauce ingredients and fry. Add a little water, if necessary and adjust seasoning to suit your preferences. I served mine with more fresh lime and cilantro on a bed of jasmine rice. It is also great as an appetiser or snack served with corn chips! Ingredients: 425g canned corn 2 avocados, diced 1 red onion, thinly sliced 1/2 cup pickles, diced basil leaves, roughly chopped 100g vegan feta, crumbled Dressing: ¼ cup extra virgin olive oil ¼ cup rice vinegar 2 Tbsp Kewpie Vegan Mayo 2 tsp ground sumac Pinch of salt Add everything into a salad bowl. Perfektes Montagessen, wo vielleicht noch das schwere Essen vom Wochenende im Magen liegt 😉 Zutaten: Spargel Brokkoli Olivenöl Salz 1/2 Tasse Buchweizen Champignons Frühlingszwiebel Zitrone Spargel & Brokkoli putzen, zerkleinern und mit Olivenöl & Salz bei 190 °C Ober/Unterhitze für zirka 15 Minuten in den Backofen. Which  #recipe would you try?👇 By @Wholesomehedonista 1️⃣ Vegan Wrap Hack ✨ Make a cut halfway down a large tortilla (I used an almond flour tortilla) Fill each quarter with toppings of choice, I used: - Mediterranean Grilled Portobellos (brushed with olive oil, balsamic, rosemary, salt and thyme) - Pesto (you can make your own but I just used Trader Joe’s vegan kale cashew pesto) - Hummus of choice - Mashed avocado - Caramelized onions (no oil in ones I made- just sliced up a red onion and put it in pan with about 1/2 cup veg broth, cooked on medium until thick and caramelized, keep adding more broth as needed as liquid dries out + add some coconut aminos if you want for flavor!) Fold, starting with cut end first. Grill in pan on stove top or panini press until golden on both sides. Enjoy!! 2️⃣ Hot girl summer rolls Recipe I tried so many different topping combos but I liked these the best and they happened to be the easiest + healthiest too! -sliced cucumber spears -mint and basil leaves (makes it taste so fresh!) - sliced carrots -sliced avocado -fresh cilantro - crisp butter lettuce -sesame seeds on top Other topping ideas: vermicelli noodles, crispy tofu, peppers, sprouts Peanut sauce recipe: 1/4 cup creamy peanut butter 1-2 tablespoons maple syrup 1/2 teaspoon sesame oil 2-3 tablespoons coconut aminos or soy sauce About 1-2 tablespoons fresh lime juice 2 tablespoons canned coconut milk (cream on top of can) Fresh grated ginger and garlic to taste Crushed peanuts for topping if you want Whisk very well until thick creamy and emulsified. Adjust flavors to taste. After whisking add little more peanut butter if too thin, splash of almond milk or water if too thick Tips - Don’t soak the rice paper roll, just dip quickly in warm water then lift so only half is in the water, run your fingers along the edges and turn quickly - it’ll soften as you add toppings -lay onto clean dry plate - To roll, fold up the side closest to you tightly around the filling, tuck under the filling roll a little then fold over each of the sides,then finish rolling to close - Try not to overstuff it so it doesn’t break

This will make it easier for the dates to blend! 🎉Strain and reserve the water then add your dates into a blender with the vanilla and a pinch of salt. 💦 Add water as needed to thin until you’re able to blend. I used a little over a cup of the reserved water. Store and enjoy!!! 🤗 2️⃣ CALLING ALL CHOCOLATE LOVERS!!! 🍫😍 ✨INGREDIENTS✨ 5 cups Hazelnuts 1/4-1/3 cup powdered coconut sugar depending on how sweet you like it - I used 1/3 cup 1/2 cup cacao powder 2 tbsp olive oil 1 tsp vanilla 1/4 tsp salt 🚨IMPORTANT🚨 do not use any water based ingredient such as plant milk, maple syrup or another liquid sweetener. It will cause the nut butter to seize up and will not be smooth and creamy. Even vanilla should be kept to a minimum - just 1 tsp tops! 🔥 First start by roasting your Hazelnuts until golden. 425f for about 10 minutes should do the trick! Watch carefully at the end so they don’t burn!You can also buy them pre roasted! 👌If your Hazelnuts have skins on them rub them off by using a kitchen towel before adding them to your blender or high speed food processor. 😋 Blend until completely smooth - it should take less than 5 minutes. Hazelnuts are very easy to turn into nut butter! 🙌 To make your own powdered coconut sugar simply blend up your coconut sugar until it becomes a fine powder. 😍Once the hazelnut butter is super smooth add in the rest of your ingredients and blend again until fully incorporated. Serve it up and enjoooooy! I know you’ll be as obsessed with this as we are 🤤 😍

Red Lentil Lasagna By @vancouverwithlove Ingredients - Cheese Sauce •2 cups unsweetened soy milk •¼ cup tapioca flour •¼ cup nutritional yeast •1 tbsp onion powder •2 tsp garlic powder •1 tsp smoked paprika •1 tsp sea salt Filling •2 tsp olive oil •1 medium onion, diced •2 cloves garlic, crushed •1 large zucchini/courgette, chopped into 1cm cubes •1 large red bell pepper, chopped into 1cm cubes •3 cups crushed tomatoes •1 cup uncooked red lentils •1½ cup vegetable stock •2 tbsp dried mixed herbs •6 (approx.) gluten free or regular lasagna sheets/noodles Topping •1 cup vegan cheese shreds or slices Instructions - To make cheese sauce - In a medium saucepan on a low heat, combine all sauce ingredients (using a metal whisk to remove lumps). - Heat mixture for about 10 mins, stirring frequently, until it thickens and resembles cheese sauce. - Remove from heat and set aside. To make the filling - Preheat oven to 350°F/175°C. - Heat olive oil in a large saucepan. Add the diced onion and sauté for 5 mins, stirring regularly. - Add garlic, zucchini and red pepper and sauté for a further 5 mins. - Pour in tomatoes, lentils, stock and dried herbs. Bring mixture to a boil, then reduce heat and cover. - Simmer about 20 mins or until lentils are completely soft. We enjoyed returning to Black-owned vegan-friendly @fuelcafepdx, located in the Alberta Arts district for another delicious and healthy meal. This breakfast, brunch, and lunch restaurant serves up “modern comfort” food, scratch-made with lots of organic ingredients. The owners “grew up in the north and northeast neighborhoods way back when”. Their vegan options will satisfy your taste buds and nourish the rest of your body at the same time. Recipe: Raspberry Chia Jam: - 2 Cups Frozen Raspberries - 2 Tbsp Chia Seeds - 2 Tbsp Rice Malt Syrup - 2 Tbsp Hot Water Choc Tart Shell: - 1 & 1/2 Cups Roasted Almonds - 1 & 1/2 Cups Oats - 7 Large Medjool Dates (Soaked in hot water for 5 minutes and drained) - 3 Tbsp Cacao Powder - 3-4 Tbsp Oat Milk - 1 Tsp Vanilla - Pinch of Salt Garnish: - 5-10g Melted Vegan Dark Choc - 6 Vegan Dark Choc Squares 1. Place all jam ingredients into a bowl and mash until smooth. Be patient with it, the raspberries with eventually melt and become jam-like. 2. Place all tart shell ingredients into a food processor and process until smooth. Push into to a 6-hole silicon tray and use your hands to create a well in each. 3. Fill with the raspberry jam and set in the freezer for 30 minutes. Garnish with chocolate and set in the freezer for 5 minutes. Enjoy! 4. Store in the refrigerator for up to 5 days.

Which  #recipe would you try?👇 By @Wholesomehedonista 1️⃣ Vegan Wrap Hack ✨ Make a cut halfway down a large tortilla (I used an almond flour tortilla) Fill each quarter with toppings of choice, I used: - Mediterranean Grilled Portobellos (brushed with olive oil, balsamic, rosemary, salt and thyme) - Pesto (you can make your own but I just used Trader Joe’s vegan kale cashew pesto) - Hummus of choice - Mashed avocado - Caramelized onions (no oil in ones I made- just sliced up a red onion and put it in pan with about 1/2 cup veg broth, cooked on medium until thick and caramelized, keep adding more broth as needed as liquid dries out + add some coconut aminos if you want for flavor!) Fold, starting with cut end first. Grill in pan on stove top or panini press until golden on both sides. Enjoy!!

And I’ve made a few 🙊🌶These cauliflower nuggets are coated in crispy cornflakes and homemade spicy buffalo sauce. 1 cauliflower, 400g. 1 dl. flour 1,5 dl. oat milk (or other plant milk) 2 teaspoons of paprika 100g. cornflakes (not sweetened) 
Chop the cauliflower into bouquets. In a bowl mix flour, milk and paprika. Mash the cornflakes into small pieces in a blender. Dip the cauliflower bouquets in the flour mix + cornflakes afterwards until we’ll coated. Place on a baking tray and bake for 20-25 min. at 200ºC. Buffalo sauce: 
3/4 dl. plant butter, melted 1/2 dl. hot sauce (hot chili sauce or tabasco) 1 teaspoon of apple cider vinegar 1 pinch of garlic/onion powder Mix all the sauce ingredients together and set a side until the cauliflowers are done. Pour on top of the cauliflower or use for dipping. Serve while crispy. 2️⃣ tomato & garlic toast 🍅🧄 toasted on the pan with olive oil until super crunchy, covered with garlic, and then I spread with cream cheese, add the tomatoes, cress, salt, pepper, chilli flakes and lemon juice. my latest go to breakfast or lunch (also very good with avocado on top) 🥰 ps, I use violife cream cheese for this one + basil leaves on top, but parsley or spinach works great too! . .

🌿Gnocchi in a creamy green sauce🌿 By @beferox Recipe: Creamy Green Sauce🌿 Serves 2 . Ingredients: •2 handful basil leaves •1 1/2 handful parsley •4 tbsp. (mixed) nuts or seeds e.g. pine nuts, sesame seeds, pumpkin seeds, flaxseeds etc. •1 clove of garlic, peeled •2 tbsp. olive oil •1/3 cup water •250ml soy / oat cream (e.g. soy cuisine from Alpro) •1/2 cup oat milk •1 tbsp. lemon juice •1/2 tbsp. dried oregano •1/2 tbsp. dried basil •Salt and pepper . Mini Vegan Taco Bites By @naturallyzuzu Makes 6 servings Ingredients: 1 medium onion, diced 1/2 cup of vegan minced meat. You can also use cooked brown lentils. 1 jalapeño seeded and diced 1 garlic clove, minced 1/2 cup frozen corn 1 red bell pepper diced 1 tomato seeded and diced 1/3 cup canned black beans, water drained Kosher salt, to taste 2 teaspoons chili powder 1 teaspoon ground cumin Ground black pepper, to taste 3 tbsp of Queso style dip 1 or 2 tubs of Traditional or Spicy Guacamole for serving. Green onions for garnish 6 flour tortillas 3 teaspoons olive oil 1/2 cup vegan shredded cheddar cheese. Method: Preheat the oven at 375F. Use a 3-inch cookie cutter to cut out 4 taco shells from each tortilla. Warm the tortillas for 10 to 20 seconds, covered, in a microwave, or wrap in foil and heat in a warm oven until pliable. Spray or brush the mini muffin tin pan with oil. Then tortillas into the openings of a muffin tin. Repeat with a second mini muffin tin or repeat after cooking first batch of mini taco shells, for a total of 24. Spray or brush the tortillas with oil and bake for 10 min until edges are golden brown. Meanwhile in a large cast iron pan heat 2 tbsp of oil over a medium-high heat. Add the diced onions and sauté until transparent, then add the vegan minced meat and cook for 10 min by stirring it constantly. Then add the garlic, jalapeño, bell peppers, tomatoes, corn and black beans. Continue cooking for 8 min over a medium heat. Add the seasoning, 3 tbsp of Queso dip and salt to taste. Simmer for 5 min. SPRING ROLL SALAD 🥕🥒✨by @healthygirlkitchen This salad idea is inspired by Vietnamese spring/summer rolls!! You need: - thin rice noodles - Cucumber - Purple cabbage - Carrots - Red bell pepper - Peanuts - Cilantro - Green onion - sesame seeds Peanut sauce: 1/2 cup runny natural peanut butter 3 tbsp coconut aminos 1 tbsp soy sauce 1 tbsp rice vinegar 2 tbsp hot water 1 tbsp sriracha 1 tsp garlic powder 1/2 tsp ginger 1 tbsp toasted sesame oil Cook noodles and rinse with cold water. prep veggies, chop peanuts, add to a bowl! Whisk dressing together and pour over top. Enjoy!

Well if you haven’t, then you have to, as it’s a DREAMY combo 😋 ⁣ ⁣ A tasty and nutritious snack, that only requires 5 basic ingredients! Plus they are vegan, gluten free and incredibly tasty 🤤 ⁣ ⁣ Enjoy! ⁣ ⁣ DB x ⁣ ⁣ INGREDIENTS ⁣ ⁣ ▪️200g desiccated coconut and some more for topping ⁣ ▪️1/2 cup full fat coconut milk, discard the watery part (you can use in smoothies etc)⁣ ▪️1/2 cup of raspberries ⁣ ▪️2 tbsp maple syrup/agave syrup ⁣ ▪️200g white chocolate, melted ⁣ ⁣ METHOD ⁣ ⁣ ▪️In a blender blitz the coconut, raspberries, coconut milk and maple syrup (if you don’t have a blender you could mash up the raspberries with a fork and add to ingredients) ⁣ ▪️If the mixture is too wet, slowly add more desiccated coconut. Leave the mixture for 10-20 minutes (this will help to keep the mixture stick together)⁣ ▪️Shape the mixture into balls and arrange them on a baking tray covered with parchment. Pop in freezer for 10-15 min.⁣ ▪️In the meantime melt the chocolate in the microwave. ⁣ ▪️Dip each ball into melted white chocolate and then coat with desiccated coconut:⁣ ▪️Refrigerate until set. 🟩Rendang was to me... something I dont have often as it tends to be with meat, and also very oily. Although I think the flavour profile is good! This version, came with lots of mushroom which 🥵is pulled to a mouth size for easy scooping and chewing. The spice profile is very spot on, and they went all the way on the chili! So if you can't take much spicy food, just... take note. 🤤The achar goes very well with the spicy rendang. My mouth is still... Watering from the flavour. 🛢️The only thing I have on the dish is the oil level. It's much lower than the typical rendang dish, but still too much for me. I don't think the oil adds much, since the monkeyhead is so moist on it's own. For me, the oil adds a sense of heaviness that I don't love. But I know... VEGAN PAD THAI 🇹🇭 by @fitgreenmind Veganuary Nr.8🌱 One of my go-to comfort food dishes! I learnt how to make it when I attended a cooking class in Thailand („Suwanees kitchen“ in Chiang Rai for everyone who‘s asking)😇. RECIPE (3-4 servings, 20min prep time): -200g rice noodles Soak in warm water for 10 mins. Drain and rinse. -200g tofu + 1 Tbsp corn starch Tear the tofu in chunks, dust with corn starch and fry in oil until browned. -1 onion -2 cloves garlic -1 red pepper (optional) Sauté for about 5mins. Add the rice noodles. -a handful bean sprouts and scallion greens Add to the pan. -3 Tbsp soy sauce -3 Tbsp sugar -3 Tbsp tamarind paste (check your local Asian store) Mix and add to the pan. Cook for 3-4mins on medium heat that the noodles absorb the sauce. Serve with crushed peanuts and lime

Raspberry Coconut Bars ❤️ recipe below 🫶🏻 by @georginaburgess_ One of my fave no bake treats 🙌🏻 very similar to my raspberry coconut truffles from a year ago (scroll way back on my reels!) - minimal ingredients and so quick and easy - basically like a raspberry bounty bar 😍 140g desiccated coconut 190g frozen raspberries 2 tsp vanilla extract 4 tbsp maple syrup 250g good quality dark chocolate (or chocolate of choice) Line a loaf tin with baking paper Add the coconut, raspberries, vanilla and maple syrup to a food processor and pulse for a few seconds until it starts to come together Press into the loaf tin and place in the freezer until solid (1-2 hours) - slice into bars and place back in the freezer while you melt the chocolate Coat each bar in chocolate (use 2 forks to do this!) place back in the freezer to set 🫶🏻
