We recently noticed some wild onion growing in our front garden bed, so today we harvested it and used it to make some wild onion cream cheese! We can’t wait to try it on our bagels tomorrow morning🥯 I love any opportunity to get in touch with nature and to show my boys that you can find food right in your yard even if you don’t have a dedicated vegetable garden yet! (The tricky part is simultaneously stressing the importance of **don’t eat random plants you find outside!**) I’ve got plenty more wild onion so give me your favorite ways to use it in cooking! It was a lovely spring day at the Watershed Nature Center in Edwardsville, Illinois with many nature sightings; including the Number 1 fav, a rather large black rat snake sunning himself on the paved walkway. Also seen: Canadian geese, red-winged black birds, blue birds, chimney swifts, downey woodpecker, black-capped chickadees, and a single butterfly too far away to identify. Despite what the conspiracy theorists say, birds are real and are a major part of our real-world curriculum. The 8/9 just spent a week at Harriman State Park, right on the edge of Yellowstone National Park. This has become such a key Field Study, that it lingers with kids for years- including having some 10/11 kids ask to be student leaders on the trip. Nathan Kolar, guest birder on the trip, talked about how, in a short time, kids can get a deep set of skills to interpret the natural world. From the car ride to wandering the woods in groups to visiting Yellowstone, they fully engage in the curriculum, returning to the valley with 70-80 species sighted (not to mention the porcupine, otters, muskrat, elk, coyote…).
