We had a big Saturday, and managed to get all of the spindles in for the staircase! This project has drug on for ages, it just gets attention here and there while we are waiting on other stuff but man is it a relief to have it done! There is a bit of plywood, but a vast majority of the wood used in this project was all from a lumber mill here in Missouri! It was all rough sawn, and needed planed and squared before use. There is a ton of character in it, and we filled all the knot holes with epoxy to help accent. Don’t worry, I’ll get some pictures of our favorite knots for you all soon! White oak (Quercus alba) on the right...fresh and beautiful color like a Granny Smith apple. I can't ID the small one on the left. Eastern North America's top signature tree. The potential of this nut fruit is flat out astounding. It will produce an organism that will last upwards of five hundred years, soak up and store tons of carbon, release tons of oxygen, feed millions of organisms, produce one of the most beautiful slab wood / veneer, and shade an old man. This is a packet of true life at its utmost. Unlike red oaks It's gotta go in the ground now so as to reach those beautiful potentials. I wonder if this seed has a code fragment imbedded somewhere within its genetics that can withstand a fast moving future target of climate change. I mean I didn’t scream .. c’mon it really wasn’t scary. I had a scream - the beer. SCREAM by @anchoragebrewing is a sour ale fermented and aged in Missouri Oak finished on Alaska Haskap berries. Coming in at 7% ABV. It poured a beautiful pinot noir color. What’s a haskap Berry you ask? They’re new to me too. They are also known as a honeyberry or blue-berried honeysuckle. They are a superfruit that are beginning to increase in popularity in the US. They’ve existed in Japan for quite some time and they have been called “the Berry of long life and good vision” I’ll take about 10 more bottles of this stuff. Please and thank you. This is my absolute favorite style of beer. If you ever see this beautiful bottle, do not hesistate. Hope everybody is staying warm out there.

The body is super thick, viscous, and has a small, dark brown head when poured from the bottle. The smell has tons of coffee and dark chocolate notes, that then has some vanilla and oak to follow. The taste is full of decadent dark chocolate that's full of coffee, with vanilla creeping in along with the coffee, then a subtle oaky vanilla, then some bitterness from the dark chocolate and coffee. The mouthfeel is super rich and smooth, sweet, thick, and leaves a coffee and dark chocolate residue with some subtle vanilla. This is so good! Quality execute yet again from Anchorage. Aviceda Leuphotes from @horusagedales is an Imperial Stout aged in Missouri Oak Foedres with Chocolate, Coffee, Graham Crackers, Marshmallows, Mixed Nuts, and Vanilla. It's made in collaboration with @eqbrewery , and it's the oak aged version of a previous release. The body is dark, thick, and has a very small, dark brown head when poured from the bottle. The smell has very coffee and dark chocolate forward notes, with small graham, oak, and vanilla notes. The taste is sweet chocolate and coffee forward, that's got nice hazelnut, walnut, and graham, with a tail of light oak and vanilla. The mouthfeel is silky smooth, very sweet, and leaves a warming chocolate graham residue with light vanilla. This is quite nice! Doomed is a big purchase for 2021. Anchorage rocked the beer world with Blessed and I had to give them another shot. Doomed is the little brother to Blessed with vanilla syrup, chocolate fudge, and espresso bringing the flavor. Tough to get a good shot of this one: Blackjack oak (Quercus marylandica) I collected in February '20. The tree was growing in a glade on a granite slab, and I tried to keep it as I found it. It is a beautiful example of the few species of scrub oaks that grow at exposed elevation (by our standards) in the St. Francois Mountains. Grisette from @sideprojectbrew is their Belgian inspired Saison that's then aged in Missouri Oak Foedres. This is the 8th blend, since they have a constant evolution of their yeast cultures and wood aging process. The body is straw yellow, has mild opaqueness, and has a strong champagne head when poured from the bottle. The smell has some white grape, peach, and lemon citrus notes that's wrapped with some noble woodiness and spiciness. The taste is very peach and berry forward, with some mild oakiness, funk, and citrus notes. The mouthfeel is just silky smooth, light, a bit bubbly, and leaves a mildly funky but mostly fruity residue. Great beer!
