fascinating bottle. Probably at the end of its “normal” drinking window. I got the feeling of dried rose petals and dehydrated strawberries with lovely acidity and an overall sense of lithe graciousness. Probably not for everybody, but i really loved it, especially as it recalled how energetic it was in its youth.
Olivier Horiot Solera NV Champagne 🍾 Last summer I was in Barcelona and we had a 28-course lunch at the #2 restaurant in the world @disfrutarbcn and boy what an experience this was. We ended up going with the winepairing but to celebrate my brother’s birthday we wanted a bottle of champagne to start. I asked the sommelier to recommend some interesting champagnes and he told us olivier horiot (the terroirist) makes some very good and interesting stuff. We went for the solera which is a zero dosage champagne made from all 7 grapes you are allowed to use in the champagne region. So 7 varietals - Arbane, Petit Meslier, Chardonnay and 4 pinots ( Blanc, Gris, Meunier & Noir) but all from one soil (kimmeridgian limestone) in the south of champagne region. This Champagne is fermented in oak barrels and blended under a solera method, hence the name. Super sharp and fresh, complex, evolving notes of apple and brioche and some tertiary notes like almonds. I’d rate this 92/100 points. Definitely recommend this. Olivier Horiot - Soléra ⭐⭐⭐⭐⭐ La claque prise en dégustant Substance de Selosse a lancé mon envie de déguster d'autres Soléra en champagne. La solera est une technique qui est née en Andalousie, et consiste à empiler les fûts les uns sur les autres. Les fûts les plus âgés sont situés en bas, tandis que plus on monte dans les étages plus les vins sont jeunes. chaque soutirage, les vins descendent d'un étage, et se mélangent au vin résiduel précédent. Technique utilisée pour les Xérès, certains whisky ou rhums, mais aussi en champagne. Autre particularité, ce champagne est issue d'une parcelle complantée (mélange de cépages sur un même terroir) en 2008 comprenant les 7 cépages champenois (arbane, petit meslier, chardonnay, pinot blanc, pinot gris, pinot meunier et pinot noir). Que dire ? Dès l'ouverture le nez est d'une complexité dingue, marqué par les fruits jaunes comme la poire, un petit côté toasté aussi. En bouche, WOW ! Quelle matière, quelle puissance ! Le vin est dense et complexe, porté par une bulle bien soutenue qui vient rafraîchir et équilibrer le tout. Longue finale salivante. C'est là vraiment mon style de champagne. Autour de la table tout le monde a été unanime. Dans un style très différent certes, cette cuvée a enterré le Gamin du Terroir dégusté juste avant. 재작년 말즈음 소개해드렸던 샹파뉴 하우스가, 이제는 해외에서 너무나 유명한 하우스가 되어버렸어요. 올리비에 오리오는 작은 소규모 아띠장 하우스로 유명합니다. 특히 비오디나믹 샹파뉴의 선구자로 불리는 이 집의 와인들은 정말 핫한 미국, 프랑스의 다이닝이나, 바 등에 리스팅 되어있고, 출시와 동시에 와이너리에서 전부 소진되는 샹파뉴를 만들지요. 거기에 가성비까지 아주 좋은 포지션을 가지고 있기에, 정말 많이 추천드리는 하우스랍니다. @bellies_no slutter ikke å imponere meg. I dag var restauranten gjort om til pizzarestaurant for one day only, og til tross for at pizzaene er helt uten ost eller andre spor av noe som har vært i live, så har jeg knapt spist bedre pizza noen gang. Kjøkkenet på Bellies har alltid vært preget av stor kreativitet og skaperglede, og slik var pizzaene i dag også. Det var tre pizzaserveringer. Først en hvit pizza spekket med grønne blader og urter og et tydelig preg av pepperrot. Pizzaen så ekstremt tiltalende ut og smakte akkurat like bra. Tydelig inspirert av at sjefskokk @edome_san tilbrakte størstedelen av 2023 bøyd over åkrene på Brimse Gård. De tre pizzaene var svært forskjellige. Nr 2 var en umamibombe med stekt sopp fra Topp Sopp og en rik soppsaus med litt varme fra Midsummer. En mektig og digg pizza med sopp i flere varianter. Den tredje pizzaen var kanskje den aller mest magiske. Svært komplekst smaksbilde og med deilig hete fra noe som smakte fullstendig som nduja men som var laget av quinoa fra Lærdal. En av de beste pizzaene jeg har smakt, og det burde ikke være mulig å frembringe de kjøttaktige smakene av kun grønnsaker og veganske råvarer. Hatten av for Edoardo og resten av teamet på kjøkkenet 🙌 Desserten var også en oppvisning i ting som ikke burde være mulig å lage. Helt fantastisk pistasjis og krem uten spor av fløte eller egg. Alt i alt en nær perfekt søndagsmiddag. @oysteinohna og teamet hadde laget en veldig fin ramme rundt arrangementet med mye barnefamilier og uformell stemning. @christofferkolumbus hadde funnet frem en rekke kule magnumer på glass til dagens pizzaer. Noe var tomt da vi kom, men Yvon Metras Moulin-a-Vent 2019 var akkurat så saftig og naturvinsaktig som denne vinen skal være. Nær perfekt drikke til pizza. Olivier Horiot sin ikke-musserende rose fra 2012 av pinot noir fra champagne var også flott. Tydelig litt modning, men samtidig enda fruktig og frisk. Veldig fint balansert. Vinmessig høydepunkt for meg var dog Domaine de las Cras sin Bourgogne 2020. Det er første gang jeg smaker denne produsenten, og jeg ble imponert. Naturvin fra Dijon by som har fått mye hype, tydeligvis med rette. Smaksnotat i kommentarene.

That was a very nice surprise. . Champagne Olivier Horiot, Envol (Deg 2022-11-22): 6.5 - very strong, almost overdone. It is interesting to drink as quite complex. But the aromatics are so strong that I was glad we were five persons - after a while it becomes too much. Is it the wood or did I sense unripe fruit there as well (green pepper)? Definitely a champagne that I recommend trying. Something special - like most of Horiot's cuvées. (Was my second time.) . Champagne Bollinger, PN AYC18 (Deg 2023-01): 7.5 - more typical Bolli (bold, round, wood) than my first try. Not as fresh and zingy as the other bottle and not as precise. Whereas the first one was made of many separated layers this was more of a blur. . Champagne Charles Heidsieck, Brut Millésimé, 2013: 8 - this bottle was very closed. Felt much leaner than normal. . Champagne Piper Heidsieck, Brut Rosé (old bottle): badly corked . Champagne Bollinger Special Cuvée: very old bottle, I think this label was only used until the early 60s? Fill level was low. . . Champagne Olivier Horiot, Ailleurs, 2018 (Deg 2022-11-22): 8 - this is superb. First time - I had the Envol before which was not as convincing at the time, but another bottle is waiting to be tested now. Now about five hours after opening it balanced out quite well and shows a lovely mix of some exotic fruit (orange peel?) and spice on the nose, but all in a very restrained way. It's a very complex mix that is appearing elegantly. Structurally it is quite broad, showing all over the palate, tongue and roof in an acid-mineral-mix. This is multilayered but never heavy though not a typical apéritif Chardonnay either. It works well on its own, but can definitely do with some food. . Another winner from a great producer that always does interesting stuff. Whereas some of it sometimes seems a bit "experimental" with the shaky results that go with it, this is focused on craftsmanship. Not that I can really judge, but that's how it feels for the sake of description. It feels absolutely solid without any risks taken and with ripe, concentrated, preserved fruit. Färgen är i vanlig ordning väldigt rödvinslik. Komplex, bärig, parfymerad och något kryddig doft. Inslag av smultron, hallon, körsbär och röda vinbär följs av tårtbotten, ek, svarta vinbär och svartpeppar. Efter hand även rabarber och lite läder. Frisk, bärig, torr och relativt lätt smak av hallon, körsbär och röda äpplen. 2010 Rosé des Riceys En Barmont Ett mycket bra vin. Fullt utvecklat, men fortfarande vid god vigör. The name is a bit misleading as Rosé Des Riceys is an appellation in the Aube region of Champagne and thus this is actually a still light red and not a rosé. En Valingrain is made from old Pinot Noir vines planted on chalky soil. The 2014 opens up with aromas of brambly red fruits and floral before evolving to reveal undergrowth after 4 hours of breathing in the bottle. Delicate, lithe and gaining more complexity and depth with air.
