November was meant for the much needed sunshine after the chilly weather in London. So to dunes, valleys, gorges and camel rides - a new country and a new continent - Morocco, Africa.😁 . We have slightly mixed opinions about Morocco. On one end you have the mysterious Atlas mountains and vast Sahara Desert and on the other you have an impoverished city with it's bustling Medina. On one end you have amazing and super helpful hosts and guides and on the other you see street fights as if it's a norm and people asking for tips for just about everything! . Nevertheless, we had a great time in Morocco. Walking in the Todra Valley amidst the gorges, exploring the Ait Ben Haddou (Village of Cinemas - GoT, Gladiator to name some), Berber Village - experiencing the hospitality of the Berber tribe and knowing about their rich culture and traditions such as painting using tea, saffron and fire and hand-made rugs, sunrise and sunset camel rides, camping in the middle of the desert, watching the magical starry night sky and spotting shooting stars (a hint of Milkyway too!), eating yummy breakfasts and making some amazing friends from across the world! #africacouscous ❤ . P.S.-Shah Rukh Khan and Bollywood are very fondly spoken about in Morocco and if people get to know that you're an Indian, you're greeted with a smiling "Namaste". Akhil was even complimented by a local saying he was looking like SRK! Some more pictures from our trip to Wales. 😁 Sharing our 3 day itinerary to Wales from London: Day 1: Arrive at Pembroke Dock by afternoon and explore the harbour. The sunset from the harbour is just beautiful! There are some nice eateries around as well. Day 2: Take the Coastal Path bus to join the Pembrokeshire Coastal Path hiking trail. Best is to start from Green Bridge and walk east. Just follow the path with the Ocean on your right. Many amazing viewpoints on the way (Elegug Stacks, Cauldron, Huntman's Leap, St. Govan's Head etc.). We hitchhiked our way back to the town. Visit Pembroke Castle. Spend about an hour here. There is a free guided tour as well. Day 3: Take the train to Tenby. Explore the harbour and enjoy in the beach! Palak Besan Chilla with raita and chutney powder. . Chilla recipe below (for 4 chillas): 6 tbsp besan 1 cup chopped palak (spinach) 1/2 onion - finely chopped 1/2 tomato - finely chopped 1 medium green chilli - finely chopped 1/4 tsp ajwain (carom seeds) Small piece ginger - finely chopped 1 tbsp chopped coriander leaves 1/4 tsp chilli powder 1/4 tsp turmeric powder Salt to taste . Mix all the above. Add about 3/4 cup water and mix it well to remove lumps. The batter should be a little runny in consistency. . Spread the batter on a frying pan as you would do for dosa/pancake and fry it until golden brown on both the sides. . Seasonal recipe alert 🥭 - 3/n Mango Phirni 🥭🥭 . Recipe: Soak about 4 tbsp of basmati rice in water for 30-45 mins. After 45 mins, strain it and let it dry for sometime. Once it is dried, blend it to a coarse consistency. Make puree of about 2 medium size mangoes. In a heavy bottom pan take 1 litre full fat milk and bring it to boil. Keep stirring. Once it is at boiling level add coarse rice to it and keep stirring. Once it starts to get thick add about 1/2 cup jaggery (can add less if mangoes are sweet). Cook it well and switch off the gas. Once it is a little cooled, add mango puree, chopped nuts, cardamom powder and mix well. Let it cool. Refrigerate for 2-3 hrs.
