Zutaten: • 6 Hähnchenoberkeulen oder -Schenkel • ca. 1 kg Kartoffeln, geschält und geviertelt • 3 EL Mais- oder Speisestärke • 2 rote Zwiebeln, geviertelt • frischer Thymian Gewürzmarinade: • 4 EL Olivenöl • 3 EL Mais- oder Speisestärke • 1 TL geräuchertes Paprikapulver • 1 TL Chiliflocken • 2 TL Knoblauchpulver • 2 TL Oregano • je 1 TL Salz und Pfeffer Und so geht’s 👇🏻 1. Backofen auf 200° Umluft vorheizen. 2. Mische alle Zutaten für die Gewürzmischung in einer kleinen Schüssel. 3. Lege die Hähnchenteile, die Kartoffeln und die Zwiebel auf ein Backblech. Streue die Marinade darüber und „massiere“ die Mischung mit den Händen ein, bis alles gleichmäßig bedeckt ist. Dann die Zutaten möglichst in einer Schicht auf dem Backblech verteilen und mit frischem Thymian belegen. 4. In die Mitte des Ofens schieben und für 1 Stunde knusprig backen. 5. I’ve stumbled on what I think might be the best “fried” chicken thighs. I first dipped six air-chilled thighs into an egg and filtered water mixture. Then, I covered them in crumbled pork rinds. I lightly sprinkled each thigh with Tony Chachere’s Creole lite seasoning. Set oven at 400 degrees—roast convection. I then slid in the cookie sheet of thighs. 35-40 minutes. 🙌 The rinds baked crispy golden. MUSHROOM and MUSTARD SOUP makes a lovely lunch on this still quite nippy day! So flavourful and nourishing, good protein too but not heavy 😋 (I didn’t measure ingredients, so quantities are approximate! Don’t skip the mustard, it’s just the thing!) -350g chopped mushrooms -1 chopped onion or leek -1 clove chopped garlic -any of the following: small fennel, few sticks of celery, small potato, handful of celeriac or a parsnip - chopped -small glass white wine -1 rounded tbs Dijon mustard -enough stock to cover (about 500ml) -1 heaped tbs cottage cheese -handful of chopped herbs *soften the onion in splash of olive oil, add your other veg plus garlic and wine, soften for another few minutes *dry fry the mushrooms till browned/cooked *add mushrooms to veg, with mustard and stock, cover and simmer for 5-10 minutes *remove from heat, stir in cottage cheese and blitz/blend till smooth and no lumps remain *serve in a warm bowl topped with dill or parsley -mushrooms are big on flavour snd wonderful nutritional and health properties -antioxidants boost the immune system -beta glucans soluble fibre improve cholesterol and heart health -rich in B vitamins for nervous system, hormones, skin and digestion -minerals such as copper and potassium help make red blood cells, maintain bones, nerves and oxygen delivery *for more mushroom ideas snd nutrition advice, do get in touch! #mylunchtoday #mushroomsoup #favouritesoup #homemadesoup #lunchideas #whatsforlunch #nutritionhelp
