Es divideix en dos i surten unes focaccies ideals. Es deixa fermentar una hora i al forn 25 min sobre els 200 graus! A glutenfree,lowcarb,Assamese style meal🤤 This is an assamese(northeast indian) "niramis" (vegetarian)meal,eggs often are included in vegetarian meals😄in Assam. On days we had egg curry and vegetables,my dad would say "oh aji nirmais khua kham?/today we are eating vegetarian food?"😄. 🍋Jika&masoor dal➡️Boiled lentils,tomato & ridgegourd flavored with turmeric,salt to taste,corriander-cumin powder,lime juice,tempered with oil cumin seeds,chopped garlic & ginger. 🫚Mustard greens/xoriyoh xaak stirfried in mustard oil, tempered with cumin seeds, garlic &ginger,salt to taste. 🫛🌿Spinach/paleng & snowpeas stirfry➡️Add oil in a pan,crackle some cumin seeds,add chopped garlic& ginger,sautée for a minute,add 1cup diced snap peas,2 stalks of spring onions/green onions mix well,add 1 tsp of lemongrass & turmeric paste, 1/2tsp each of cumin & corriander powder,a little black pepper,salt to taste.Mix well and cook until peas are soft,add 1cup chopped spinach,toss and turn off heat. Add side of boiled barley and a hard boiled egg. A delicious,nutritious,yet simple. 🍚Barley (substitute for rice) is a low glycemic grain,1/4cup is 11gm of carbs. Most Assamese meals,across the state,will often have multiple proteins in their meals.Assam /Axom state(my birth state) is in the Northeastern part of India.Assamese cuisine is characterized by very little use of spices or oil(mostly mustard oil)and preparations are rarely elaborate.Subtle,rustic flavors,very little spice,simple,soothing,delicious food. Eggplant Sambar/Thai eggplant & lentil tangy Southindian curry,Assamese style Ridgegourd/Jika(turai)sabji, Assamese style Robabtenga (pomelo)-green moong salad,cantaloupe pieces🍈. A plantbased,grainfree,glutenfree,lowcarb indian meal. Very flavorful lowoil,low spice meal.🌶🧅🧄🫚🍅 🍆Eggplant Sambar recipe: Boil toordal with turmeric & hing,aesafotida & set aside(1/2cup dal+2cups water). ➡️In a deep pot add oil,crackle some black mustard seeds,curry leaves,pinch of hing/aasafotida,add 1 cup chopped onions,sautée for a few seconds,add tiny green/thai eggplant,cut lenghtwise(i added 1/2lb or 7 eggplants),1chopped tomato.Mix well,add sambar powder(as per taste),turmeric,salt to taste,1 tbsp dhania/corriander powder,cook for a minute or 2,then,add tamarind pulp(2 tbsp or so)& water(2-3cups), cook until eggplants are a little soft.Now the cooked dal,simmer in medium heat and bring it to a boil. Temper with 1tbsp ghee/oil,black mustard seeds & curry leaves. 🌿Jika/ridgegourd sabj recipe➡️In a pan add mustard oil,crackle some cumin & blackmustard seeds,add 1tbsp each of chopped ginger,garlic,1cup chopped onions,1green chilli,cook until onions soften a bit,add 1tsp each of powdered cumin,cortiander & fennel.Mix well,add diced jika(3 medium ones),add salt cook in low heat,with lid on until jika is fork tender. 🫚Robabtenga/pomelo & green moong salad flavored with olive oil,chopped ginger,himalayan pink salt .
