Mixed lentils with fenugreek greens/panch dal with methisaag,Cabbage thoran/stirfry, Assamese style pomelo salad/robab tenga.🍅🌶🧄🧅🫚🌿🥣 A simple refreshing,grainfree,glutenfree,lowcarb,vegan Indian meal. DAL RECIPE:Soak 1/4cup each of dal/lentils/legumes for about 5-6 hours.(I used masoor,toor/arhar,yellow moong,Channa dal,chole/chickpea). In a pressure cooker boil the soaked dal for 4 whistles,adding turmeric & aesafotida/hing.Set aside. ➡️In a deep pot add 1-2 tbsp oil & ghee,crackle some black mustard & cumin seeds,followed by chopped ginger,garlic,a few dried red chillies,add 1 cup red onions,chopped,adding salt to taste & turmeric,sautee until softens,then add dry spices(powdered cumin,corriander,fennel,dried mint,chilli powder or paprika),mixwell,add 2 chopped tomatoes,give it a good mix,add 1cup water(this reduces the use of oil),cook until mushy, add boiled dsl and simmer in low heat for 3-4 minutes,so spices & dal blend well.Add 4 cups of chopped fresh methi saag/fenugreek greens,mix well,adjust water & spices as per taste & desired consistency,simmer another 3-4minutes so the greens cook but not over cooked.Turn off heat,add ghee. Very nutritious,loaded with plant protein dal. 🌿Cabbage stitfry cooked in coconut oil. 🌿Pomelo salad-cucumbers,pomegranate arils, chopped ginger,greenchillies,cilantro,blackpepper & seasalt,1 tsp oliveoil,mixed together. Very flavorful lowoil,low spice meal.🌶🧅🧄🫚🍅 🍆Eggplant Sambar recipe: Boil toordal with turmeric & hing,aesafotida & set aside(1/2cup dal+2cups water). ➡️In a deep pot add oil,crackle some black mustard seeds,curry leaves,pinch of hing/aasafotida,add 1 cup chopped onions,sautée for a few seconds,add tiny green/thai eggplant,cut lenghtwise(i added 1/2lb or 7 eggplants),1chopped tomato.Mix well,add sambar powder(as per taste),turmeric,salt to taste,1 tbsp dhania/corriander powder,cook for a minute or 2,then,add tamarind pulp(2 tbsp or so)& water(2-3cups), cook until eggplants are a little soft.Now the cooked dal,simmer in medium heat and bring it to a boil. Temper with 1tbsp ghee/oil,black mustard seeds & curry leaves. 🌿Jika/ridgegourd sabj recipe➡️In a pan add mustard oil,crackle some cumin & blackmustard seeds,add 1tbsp each of chopped ginger,garlic,1cup chopped onions,1green chilli,cook until onions soften a bit,add 1tsp each of powdered cumin,cortiander & fennel.Mix well,add diced jika(3 medium ones),add salt cook in low heat,with lid on until jika is fork tender. 🫚Robabtenga/pomelo & green moong salad flavored with olive oil,chopped ginger,himalayan pink salt . Today is the first day of Durga puja festival( the 6th day of Navrtri). So making simple,traditional foods that are typically eaten during this 9 days of Navratri & Durga puja🕉. 🌿Assamese Robab tenga/Pomelo salad. Using your hands,gently remove the pomelo segments (4 cups from1pomelo),add 1cup of green moong,1cup of kala channa/tiny chickpeas,finely chopped ginger & green chillies,chopped cilantro,(pomegranate arils -optional)salt to taste,2 tbsp mustard oil(can use some lemon juice but this pomelo was sweet& sour,already) ,toss well.This is also served as prasad/offerings for Puja.My maternal grandma would make it often in autumn & winter days. 🌿Sukhe kala channa recipe by Rekha @mytastycurry (This year we are not celebrating festivals at home due to the loss of close relatives in the extended family,recently.There is no compulsion but out love & respect for loved ones). 🕉Durga puja,also known as Durgotsava or Sharodotsav, is an annual Hindu festival originating in the Indian subcontinent which reveres and pays homage to the Hindu goddess Durga,and is also celebrated because of Durga's victory over Mahishasura.It is celebrated all over the world by the Hindu community, but it is particularly popular and traditionally celebrated in the Indian state of West Bengal, and other states like Bihar, Assam, Tripura, Odisha, Jharkhand, Uttar Pradesh (eastern parts) and some other countries like Bangladesh, Nepal and Sri Lanka.
