SPROUTED SPRING SALADS 🍅🥑 The sun is finally here (please stay with us! ) and this sprouted mung bean salad is perfect for spring / summer! 🌻 For 2-3 portions you will need: 🥑 1 cup mung beans 🥑 1/2 an avocado 🥑 1/2 a red onion 🥑 1 spring onion 🥑 1/2 a red pepper 🥑 10-12 plum tomato’s 🥑 Seasoning: salt, black pepper, garlic granules, chilli flakes, lime juice & a handful of fresh coriander Method: 🌱 Thoroughly rinse the mung beans, removing any stones / debris 🌱 Add these to a large glass container & soak them in water for 12 hours 🌱 Rinse & drain the soaked beans & place back in the glass container, in a dark corner away from any sunshine 🌱 Leave these for 1-3 days (check them daily!) until they’ve sprouted. Crispy rice salad, lightly based on Nam Khao, a popular salad from Laos. But here I gave it a bit of a Korean twist, because I used Go Chujang to flavour the rice after cooking, but before frying. Parsley, koreander, mint, spring onions and smashed cucumber are mixed in with the crispy rice, and it's all topped with burned coco flakes, peanuts and fried onions. To keep the delicious crisp, you add the tangy and spicy dressing last, just before you serve. Serve it with crispy iceberg lettuce to wrap it in, but that's optional. Cut the asparagus spears into discs, but leave the tips whole. Saute the onion and garlic on medium heat until browned (2-3mins). Add the asparagus, salt, and pepper. Saute for 1 minute, then add 1 cup of vegetable broth and cook for 5 more minutes until the broth is gone. The asparagus should be fork tender, but do not overcook it! Boil a pot of salted water and cook the pasta until al dente per package instructions. Add half of the cooked asparagus mixture to a food processor or high speed blender with the basil, lemon juice, and lemon zest and blend until creamy. Transfer the sauce back to the skillet with the rest of the asparagus. When the pasta is al dente, add it to the pan with the sauce and mix until well combined. Add the other cup of vegetable broth to the pan to thin out the sauce. Mix well. Optionally top with fresh cracked pepper, lemon zest, and basil. Enjoy!

Radishes, cucumbers, carrots, and a buried scallion with cool buffalo dip 💚 Eat more veggies, crave more veggies 💚😋 I brought back an old friend, the stunning red radish. I kept these soaked in water so it was very mild and darn good. I made a cool buffalo dip yesterday that needed some babying because I was out of soy milk and we had a rando carton of oat milk, and let me tell ya, soy milk is the best for dressings and dips. No other simple plant milk that I've used coagulates and thickens like basic, old-school, unsweetened soy milk. Anyway, the dip was crazy thin, so I powdered 3 tbsp dried potato flakes whisking one tbsp at a time into the viscous dip, and letting it sit for an hour or so to see how much it thickened. I was happy at 3 tbsp, but I bet 4 tbsp flakes (¼ cup) converted into powder would make a decently thick dip without overcompromising the flavors. This was buffalo flavored so I didn't have a lot of delicate balance to worry about. In the end I'm very happy with this, but would love to make the dip with my usual soy to make sure the recipe doesn't need tweaking. If you're itchin' for a cool buffalo dip because 'tis the season... I added the current recipe. Louisiana hot sauce has a similar aged cayenne taste as Frank's Red Hot, but less sodium. It's not like dipping veggies in straight Buffalo sauce, it's got a spicy cool thing going on. Also, the annatto is just for color and barely did anything and could certainly be omitted.
