Making Bok Choy Shrimp with Noodles It's wonderful to be able to cook a restaurant quality Asian dish like this at home. Made of stir-fried bok choy with seared shrimp, served on a bed of Chinese noodles, it has a savory-sweet sauce with a bit of heat. Sesame oil, oyster sauce, soy sauce, fish sauce, sugar and hot pepper oil gave the dish a lively flavor, along with stir-fried onions, garlic and carrots. Yakir and I loved it! The recipe, from Melissa's Produce, is in the first COMMENT. It is written for baby bok choy. I used bok choy leaves, which are part of Melissa's Asian Essentials line. Used extensively in Asian cooking, Bok Choy, or Chinese Cabbage is an extremely versatile vegetable, similar in taste to Swiss chard or spinach. When raw, the leaves are delicately spicy, while the stalks are deliciously mild and crunchy. Once cooked, the leaves become milder, with a delightful hint of sweetness. Prepare Bok Choy by braising, boiling, steaming, or in stir-fries, soups and sautes. I didn't have enough shrimp so I added edamame. Our Spicy Supper Yakir and I enjoyed kimchi fried rice years ago at a Korean restaurant, and when a recipe came from Melissa's Produce, I was eager to make it. I received the recipe in order to cook for Lunar New Year, which is celebrated for more than two weeks. In California, for example the festivities are continuing throughout this period. Yakir and I are glad I made it. This kimchi fried rice is delicious! It's a fast and easy dish if you have a jar of kimchi in your pantry. This staple of Korean cuisine is made of vegetables often Napa cabbage and radishes, fermented with ginger, garlic and spices. But I used homemade kimchi. To make it, I sliced napa cabbage leaves in strips, mixed them with coarse salt and let them stand for an hour. Then I rinsed them, drained them, patted them dry combined them with coarsely grated daikon radish, carrot and green onion. For the sauce, I mixed grated ginger, crushed garlic, rice vinegar, fish sauce, sugar and Sriracha hot sauce. After combining the sauce with the cabbage mixture, I added a little gochugaru (Korean red pepper). I followed the recipe for kimchi fried rice and modified the method slightly. First I heated grapeseed oil in a skillet, added beaten eggs, scrambled them over medium-high heat until they just set, and removed them from the pan. Then I added more grapeseed oil and sesame oil, briefly sauteed minced garlic and chopped onion in it and added cooked short-grain rice and some of my homemade kimchi, which I had coarsely chopped. I sauteed the mixture, stirring to separate the rice grains, and added salt, soy sauce and sugar. Happy Asian Lunar New Year from Yakir and me! The Lunar New Year is a lively celebration in China, Vietnam, Korea and much of East and Central Asia. Often it's called the Chinese New Year in the U.S. but is known as the Spring Festival in China. For this occasion Yakir and I enjoy cooking with ingredients popular in these cuisines. Using even a few Chinese seasonings gives a delicious twist to our everyday cooking. We add fresh ginger, sesame oil and soy sauce to noodles, soups, cooked vegetables, and simple main dishes like rice with lentils and vegetables. We enjoy making wontons, which are fairly easy to prepare because you can use packaged wrappers from supermarkets or Asian markets. Wontons can be made with all sorts of fillings, and can be boiled, fried or baked. In the West people think of them as appetizers but in China, except at formal banquets, "they are not usually served as a separate first course," wrote Martin Yan, author of Martin Yan's Chinatown Cooking. Instead they are served with the main course. For our plant-based Chinese-inspired appetizer, we made mushroom-filled wontons with a filling of fresh shiitake and button mushrooms flavored with gingerroot, garlic and sesame oil. We served them on a spinach salad with stir-fried mushrooms, red peppers and edamame. Boiled wontons are also delicious in soup. We like them in soups with a variety of vegetables, and enjoyed some of our mushroom wontons in a simple soup with Korean radish slices, carrots, green beans & spinach. To make serving wontons easier, you can fill them a few weeks ahead and freeze them so they are ready to cook when you want them. First freeze them on a baking sheet lined with wax paper. When frozen hard, store them in plastic zipper bags or airtight containers. Cook them while frozen. For my recipe, see the COMMENTS. It is cold and rainy in LA and this warming soup is deliciously comforting. I made this Wonton Soup for the @melissasproduce Lunar New Year Cooking Challenge. Delish! I added mushrooms and baby bok choy. RECIPE: Wonton Soup with Gai Lan 1/4 lbs. lean ground pork 1 T. water chestnuts, finely chopped 1 green onion (including top), minced 1 egg white 1-1/2 tsp. soy sauce 1/2 tsp. sesame oil 1/2 tsp. cornstarch Pinch of salt 25 Won Ton Wrappers 1 egg white, lightly beaten 6 c. chicken broth Ā½ lbs. Gai Lan (Chinese broccoli), trimmed 1/4 c. sliced water chestnuts 1/4 c. sliced bamboo shoots 1/2 tsp. sesame oil Pinch of white pepper Garnish: Thinly sliced green onions Directions: 1. Combine filling ingredients in a small bowl and mix well. 2. To fill each wonton, lay one wrapper on a clean flat surface. Place 1 heaping teaspoon filling in center of wrapper; keep remaining wrappers covered to prevent drying. 3. Brush edges of wrapper lightly with egg white. 4. Fold in half over filling to form a triangle; press edges firmly to seal. 5. Place filled wontons slightly apart on a baking sheet and cover with a damp cloth while filling remaining wrappers. 6. Bring a large pot of water to a boil over high heat. Add half of the wontons and cook until filling is no longer pink, about 2 minutes. 7. Lift wontons out with a wire strainer; place in a bowl of cold water to prevent them from sticking together. Repeat with remaining wontons. 8. In a large pot, bring broth to a boil over medium-high heat. 9. Add Chinese broccoli, water chestnuts and bamboo shoots; cook for 1 minute. 10. Add cooked wontons, sesame oil and pepper. Bring to another boil. 11. Garnish with green onion. NOTE: Read through the complete recipe before beginning. It will help you better understand the process when you actually begin cooking.
