Steak Salad 🥩🥗 by @chacekitchen Salad: 1 cup spring mix 1 cup romaine Sliced steak 1/2 avocado, sliced 1/4 pear, sliced Handful of chopped cucumber Watermelon radish, sliced Chopped mint Chopped pistachios Croutons Crumbled feta Feta vinaigrette Steak (rib eye): -Pat dry and coat each side generously in kosher salt and black pepper -Heat up a little avocado oil in a cast iron pan over medium high heat. -Once your pan is super hot, add the steak. Let it cook undisturbed for about 3 minutes. -Flip and let it cook another 3-4 minutes undisturbed (med rare). -During the last minute or so of cook time, add a little butter to your pan and baste the steak continuously. -Use a meat thermometer to check temperature and determine if it is done or needs another minute or so. For med rare, pull off once it hits 125-130 degrees. -Total cook time will depend on size of steak, so adjust accordingly. -After you remove from heat, let rest for about 5-10 minutes before slicing. Feta Vinaigrette: -1/2 cup olive oil -2 tbsp white wine vinegar -2 cloves minced garlic -1-2 tbsp hot honey -1 tbsp dijon musty -1 tbsp fresh chives, chopped -1 tbsp fresh parsley, chopped -1 tbsp fresh dill, chopped -1/2 tsp salt -little bit of pepper -1 large spoonful of feta Add all ingredients to a jar and shake

Red Velvet Oreo Cheesecake Ingredients: 24 Oreo cookies 4 tablespoons unsalted butter, melted 3 packages (24 oz total) cream cheese, softened 1 cup granulated sugar 3 large eggs 1 cup sour cream 1/4 cup buttermilk 2 teaspoons vanilla extract 2 tablespoons cocoa powder 1 ounce red food coloring 1 cup crushed Oreo cookies for topping Whipped cream for garnish (optional) Instructions: Preheat the oven to 325°F (160°C). Line a 9-inch springform pan with parchment paper and lightly grease the sides. Crush the Oreo cookies (filling included) in a food processor until fine crumbs form. Mix in the melted butter until well combined. Press the mixture evenly into the bottom of the prepared springform pan to form the crust. In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy. Add eggs one at a time, beating well after each addition. IN STYLE - Potato gratin Dauphinois by @chefsofiaa Gratin Dauphinois might sound fancy, but it’s just a side dish made of thinly sliced potatoes, cream and cheese. This French classic – with a gorgeous caramelized top – is absolutely irresistible! These potatoes are the perfect accompaniment to a special meal! They go great with Roasted Chicken or my famous Beef (osso buco) in red wine ( the recipe can be seen in the Reels feed ) This French classic shouldn’t be confused with Pommes Dauphine ( I will definitely cook the Pommes Dauphine dish next time). Although my recipe calls for (two types of) cheese, critics often insist that a true Gratin Dauphinois should not include cheese. If it included cheese, it could technically be called a Gratin Savoyard. You can make it without cheese, if you’re concerned about authenticity, but know that nowadays most chefs use cheese and still call it Dauphinois/Dauphinoise. Ingredients: -Potatoes 1 kg -Milk 350 gr -Heavy cream 150 gr -Nutmeg to taste (1/3 tsp) -Salt and pepper to taste -Thyme sprigs -3-4 cloves of garlic -A little butter to grease the pan -Hard cheese (your favorite) 100 gr and Cheese Gruyere 150 gr (you don’t have to add it, the authentic recipe doesn’t add it, but if you add it you won’t regret it) Steps to make it: -Pour milk and cream into a saucepan, add garlic cloves, grated nutmeg and thyme sprigs. Bring to a boil over low heat -Peel and thinly slice potatoes (you can use a mandolin or the slicing attachment on a food processor). Add the potatoes to the heated cream mixture. -Simmer for 6-7 mins, stirring occasionally until the potatoes arout of the pan and arrange them in the baking dish. Sprinkle over a little grated cheese -Repeat until you’ve run out of potatoes. Finish with a layer cheese -Place in the oven and bake for 25-30 minutes, until the cheese is golden. Parboiling the potatoes helps to ensure the potatoes will be fully cooked and tender after 20-25 minutes in the oven. Using raw potatoes would increase the cooking time substantially, meaning the cheese could be too brown by the time the potatoes are tender.

Red Wine Braised Short Ribs🍷🥩🔥 by @calwillcookit FULL RECIPE ⬇️ INGREDIENTS - ~3 lbs boneless chuck short ribs (bone-in works as well) - Extra virgin olive oil - Seasonings: Salt, pepper and garlic powder - Beef tallow (can use any high smoke point oil or fat) - 1.5-2 cups celery chopped - 1.5-2 cups carrots chopped - 1 white onion (medium diced) - 4-6 tbsp fresh minced garlic - 2 tbsp tomato paste - 1 750 ml bottle of red wine (cabernet) - 3-4 cups beef broth - 4-5 springs of fresh thyme - 3 springs of fresh rosemary - 1 dried bay leaf - Chopped parsley (for garnish) Garlic-Parm Potato Purée (Full recipe is in the comments) Note(s): Measurements are estimated, adjust ingredients to your liking. DIRECTIONS 1. Pat the short ribs dry, coat in olive oil and season generously on all sides with salt, pepper and garlic powder. 2. Get a large greased skillet going over medium high heat and sear the short ribs on all sides until you get a nice crust. Once done, set aside. 3. Get a dutch oven or any large oven-safe pan/pot going over medium heat. Add in some olive followed by your celery, carrots, onions and garlic. Season with salt and pepper then mix. Let sauté for a few minutes then clear a spot in the middle and add in the tomato paste. Mix that in tell everything is well combined then place your short ribs on top. Pour in the wine and beef broth untill the liquid covering the top of the short ribs. Add in the thyme, rosemary and bay leaf. Place the lid on and pop it in the oven at 325 for 2.5-3 hours or until the short ribs are fall apart tender. 4. Once the short ribs are done, turn off the oven & leave them in there while you make the garlic-parm potato puree. 5. Plate it up & ENJOY! 🙌🏻 Optional: Remove the short ribs, strain out the veggies & reduce the broth to make a sauce.

In another dish, whisk together eggs and milk. Dredge each cube steak in the flour mixture, then dip into the egg mixture, and again coat with flour mixture. Heat vegetable oil in a large skillet over medium-high heat. Fry the coated steaks in the hot oil until golden brown on both sides, about 4-5 minutes per side. Drain on paper towels. MEDITERRANEAN ROASTED CARROTS by @shredhappens This is one of of those dishes that will make you fall in love with eating your veggies. If you’re super lowcarb, feel free to use squash. And if you aren’t watching carbs too closely, this would be amazing with sweet potatoes, too. You can serve this as an appetizer, as a warm salad of sorts, or even devour it as a main. You do you. . Here is how I made it: . 1.Start by washing and peeling 6-8 medium carrots. Cut them into thirds, then cut those in half. Add to a bowl. . 2.Drizzle about 2 tbsp olive oil over the carrots. Season with a couple pinches salt, pepper, 1 tbsp paprika, 1/2 tbsp garlic powder, 1 tbsp thyme (or oregano), and 1 tsp cumin. Mix well. . 3.Lay the carrots out on a baking tray or dish, making sure they are not overly crowded. Optional: drizzle with a little more olive oil. . 4.Roast in the oven at 400F for 35-40 mins. Time carries by oven, so keep an eye on it. You can flip them at the end and roast the other side for another 5 mins. . 5.To make the yogurt feta sauce, grab a mixing bowl. Add 1 cup thick plain yogurt, crumble about 1.5 to 2 ounces feta, drizzle with 1 tbsp olive oil, add 1 tsp Aleppo pepper, and season with salt. Mix, taste, and adjust. . 6.Spread the sauce on the bottom of a serving plate. Top with carrots, and top with 1/2 cubed avocado, a handful of finely chopped pistachios, 2 tbsp fresh finely chopped parsley, 1 tbsp fresh finely chopped mint, some Aleppo pepper flakes, feta crumbles, then squeeze some lime juice. .
