Celebrated Cinco at @bogeysbistro this evening. We were excited to finally take advantage of their Taco Tuesday menu, but unfortunately the taco flight was removed. This was a huge disappointment, but we were able to try two new menu items; Birria Quesadilla and Baja Shrimp Tacos. Both were delicious, solid choices. We also grabbed two appetizers, as there was a $5 happy hour from 4-7PM. The elote corn dip was tasty, but we could’ve done without the jalapeños. It just seemed to take away from the original flavor. We also got an order of chips and guacamole. In addition to our food, we had to try the margarita flight, which has new flavors; coconut lime, lavender blueberry, honey mango and spicy peach. I actually preferred the coconut lime because it was simple and tasted like a traditional margarita, while Matt would’ve chosen the lavender blueberry. That one was unique, but I could only drink it in moderation due to the strong floral taste. After enjoying all of the Mexican food, we opted to get a slice of chocolate chip cake. We weren’t sure what to expect, but it was definitely one of the best cakes we’ve had. Ingredients • 2 bags (12 oz each) frozen corn • 1 red onion, diced • 2+ Jalapeños, diced and seeded • ½ cup salsa • 8 oz cream cheese, softened • ½ cup mayo • 2 teaspoon sea salt • 2 teaspoon chili powder • 1 tablespoon fresh cilantro, chopped + more for garnish • 2 teaspoon cumin • 2 teaspoon paprika • 2+ teaspoon Tajín • 1 ½ cups Cotija cheese or more if desired Instructions 1. Spray slow cooker with non-stick cooking spray (or use a liner for easy clean up!) 2. Pull out and measure all the ingredients. 3. In a small bowl, combine softened cream cheese and mayo. 4. Add salt, chili powder, cilantro, cumin, paprika and Tajín 5. Stir to combine. 6. Add 1 cup of Cotija cheese. 7. Stir until blended. Set aside until needed. 8. Add corn to the slow cooker. 9. We finally got to visit @velvethippodurham and I was so glad when we went they still had up their holiday decor! The drinks we had were so good. I had a couple of seasonal fall drinks that were amazing. One was a spiced apple cider that I got with rum in this adorable puppy mug. I also got my new fave: The Martinez. H had the Spicy Girl Szn and an Old Fashioned. For food I had their Elote Dip which was fantastic and the chips for dipping, were seasoned and perfectly crunchy. I also tried their Cuban Sliders that were surprisingly filling. Guys the elote dip at @homeslicechi is impeccable. Warm and super creamy pairing perfectly with the chips that were also warm and salty. For my entree I got the Webster Salad, which also had the elote in it. Usually I wouldn’t get something that had something I just had but that elote was just really good so it was justified. The salad was made up of kale, roasted corn, cavatappi pasta, feta, tortilla chips, and an elote dressing. I ate this all up :) Overall-7/10

We went to a little holiday party tonight. I made an elote dip. This is a quick and easy recipe, made with ingredients you probably already have on hand. This is the recipe I use. 4 cups corn kernels 2 gloves garlic, minced 1 tbsp olive oil 2-3 Scallion, thinly chopped 1/3 cup mayonnaise 1/3 cup greek yogurt 1 jalapeño pepper, chopped and seeded. ( you can substitute the jalapeño with 1 small can of mild diced green chilies) Salt &pepper, Trader Joe's elote seasoning ( season with your heart) Lime juice and zest A splash of hot sauce 1/2 c crumbled queso fresco Cilantro Saute garlic and corn together. Remove from heat and allow to cool. Add mayo, yogurt, jalapeno, and remaining ingredients. Mix well. Chill at least 30 minutes before serving. Serve with tortilla chips, crackers, and veggies. This recipe is easy to modify. I use less mayonnaise than the recipe calls for. I'm not a mayonnaise fan. You can add the cilantro in the dip or use as garnish. Elote Dip 🌽 Ingredients: 2 cans of corn 2 jalapeños 1/4-1/2 cup finely chopped onion 6 Tbsp sour cream 1/4 cup Mayonnaise 1/4 cup chopped Cilantro 2 limes Ingredients: 1 can of Corn (or 3 ears of fresh corn) 1 jalapeño 1/4 red onion 3 Tbsp Greek Yogurt (or sour cream) 1 Tosp Mayonnaise 1/4 cup Cilantro 1 Lime 1-2 tsp Tajin 1/4 Cotija cheese 1/2 tsp Tajin 1/2 cup Cotija cheese Mix and cook the onion, jalapeño, and corn with some butter on medium heat. Remove and add to a bowl, mix in all other ingredients.
