Halloumi, Broccoli and Chickpea Bake 😋 A wonderful traybake from One Pot, Pan, Planet @we_are_food 👍 Oven roasted chickpeas are one of our favorite snacks or salad ingredients. We love them so this recipe was an easy pick for today’s #rainydaybitescookbookclub . The challenge was to cook a recipe from the traybake chapter and oven roasted chickpeas caught my eye. The chickpeas are oven roasted in ras el hanout (made my own from @epicurious ), the zest and juice of an orange and some olive oil. After ten minutes a block of halloumi, broccolini and pumpkin seeds are tossed in tahini, olive oil, orange zest and juice and added to the tray of chickpeas, then broiled till the halloumi is nicely browned. The whole pan gets a garnish of pomegranate seeds, parsley and the halloumi gets a drizzle of honey! Served with flatbreads and #dinnerisserved 😋😍😋. Shrimp taco bowl for dinner last night! 🍤🍚🥭🍍🌶️🧅🥬🥑🌮🍋‍🟩🌿 We used @costco shrimp and seasoned it with salt, pepper, chili powder, and lime! We cooked it on high heat in a cast iron skillet so it got nice and crispy, and we served it with basmati rice (we used the 90 second packets from @aldiusa which made the cooking process WAY easier), @aldiusa chunky guac because we couldn’t find ripe avocadoes, homemade pineapple mango salsa (3/4 of a large ripe pineapple, 3 honey mangoes, 1 red bell pepper, juice of 2 limes, 1 jalapeño, half a red onion, and salt), homemade cabbage slaw (1 bag of broccoli slaw and 1 bag of red cabbage slaw from @wegmans mixed with lime, salt, and olive oil), @daisybrand sour cream, @wegmans roasted salsa verde, and cilantro on the side since my dad hates cilantro! Baked dhal with tamarind glazed sweet potatoes for our final recipe challenge from One Pot, Pan, Planet by @we_are_food for our #rainydaybitescookbookclub. This recipe comes from the One Tray chapter and our group could choose any recipe from this chapter to make. I actually made several recipes from this chapter and posted them this week including the brown butter double chocolate cookies, chocolate olive oil rosemary cake, sticky sesame baked cauliflower, and all were so good! I actually had another four tabbed to make, but, I ran out of time! This sweet potato dhal was absolutely gorgeous! Flavorful and hearty this is a great vegetarian main that heats up well the next day too. Picture a bed of lentils that are cooked with onions, ginger, garlic, cumin, cardamom, turmeric, chili, tomatoes, stock, and coconut milk until all the flavors come together. Then thin long slices of sweet potatoes are nestled over the top, forming a lid, and the top of the potatoes are brushed with tamarind. The skillet is then baked in the oven until the sweet potatoes soften, and almost caramelize at the edges, and the dhal softens underneath. It’s served with a squeeze of fresh lime juice and I actually liked it with a dollop of Greek yogurt too. This makes quite a bit so there were plenty of leftovers for the next day too. I can’t wait to see what you made from this chapter. This book fast became one of my favorite vegetarian cookbooks. Every single recipe was delicious, easy to make, and with a great balance of flavors. I have two of her other books and I know I need to get her other two now too. #Repost @chef_foodalhi with @use.repost ・・・ Some Stuffed Peppers Vibes 🍅💛 Made by @elavegan 👩‍🍳🌟 Ingredients 4 bell peppers 2 cups cooked rice of choice 1 cup textured soy protein or chickpeas 1/2 cup (light) coconut milk 1/2 cup chopped bell peppers (any color you like) 4 tbsp crushed tomatoes 1 medium-sized onion, chopped 2 cloves garlic, minced 2 tbsp soy sauce (wheat-free if GF) 1 tbsp oil (e.g. sesame oil or coconut oil) 1 tbsp peanut butter 1/2 tbsp curry powder 1/4 tsp smoked paprika salt and pepper to taste vegan cheese to taste chopped chives to taste Instructions 1) Cook your favorite rice according to packaging instructions. You will need 2 cups of cooked rice for this recipe 2) Soak 1 cup of textured soy protein (TVP) in a bowl with 1 cup of hot water (or vegetable broth) and set aside for 5-10 minutes (skip this step if you are going to use chickpeas). The TVP will begin to fluff and absorb all the liquid 3) With a knife, carefully remove the “lids” of the 4 bell peppers and also discard all the seeds 4) Heat oil in a skillet, add the chopped onion, minced garlic, the textured soy protein and fry for 4-5 minutes over medium heat 5) Add the chopped 1/2 cup bell peppers, crushed tomatoes, soy sauce, peanut butter, spices (curry, smoked paprika), salt/pepper to taste and coconut milk to the skillet and let simmer for about 5 minutes on low-medium heat. Stir occasionally 6) Now add the cooked rice and check if the mixture needs more salt/pepper/spices 7) Fill the 4 peppers with the rice/veggie mixture, add your favorite vegan cheese to taste, and cook in the oven at 190 degrees C (about 375 degrees F) for about 30-45 minutes. Been enjoying this Farro Halloumi Salad 🥗🥬🍒with chickpeas and kale on repeat, and you should too! It can be enjoyed either warm or cold.. with or without crispy, pan-fried halloumi. I’m just obsessed with the combination of flavors + textures! #vegetarianrecipe #salad🥗 #saladlovers💚 Inspired by some of my fave salad bar options; I added chickpeas + lentils for extra plant-protein, as well as crunchy and briny halloumi cheese! PSA: The olive-oil, lemon and honey mustard dressing is *chef’s kiss* divine and I can gulp it in industrial amounts, just pass a spoon. Recipe deets below!👇🏻 👇🏻 Ingredients Farro & Grains 1 cup whole grain farro 2 cups water, or vegetable broth or bone broth for flavor! 2 bay leaves (to cook the farro, adds depth!) 1 teaspoon sea salt, or more, to taste! 1 cup rinsed and drained canned chickpeas 1/2 cup rinsed and drained canned lentils Add-ons: 1 cup kale Handful of cilantro or parsley 1/4 cup dried cranberries or golden raisins 1 Tbsp green onions or chives Salad Dressing 1 shallot, finely minced 2-3 teaspoons runny honey 1 Tbsp Dijon mustard 3.5 Tbsp apple cider vinegar 1/2 cup extra virgin olive oil or avocado oil 1/2 teaspoon ground black pepper 1/2 teaspoon sea salt Pan-fried Halloumi Cheese 250 grams halloumi package 2 Tbsp olive or high heat avocado oil for frying Instructions 🌟🌟🌟🌟🌟 In a medium stockpot bring water or broth to a boil and add farro, sea salt, and bay leaves. Stir and reduce boil to a simmer until the liquid has been mostly absorbed and the farro looks fluffy and soft. This takes ~20-30 mins. Allow farro to cool and mix with chickpeas, lentils, kale and cilantro or parsley. Combine all dressing ingredients into a mason jar with a lid or bowl and stir and shake well, pour over salad. Top salad with cranberries, green onions and dressing. Mix well. Enjoy every bite!💚💚

Forget any other cauliflower recipe you’ve ever tried and make this sticky sesame-baked cauliflower from One Pot, Pan, Planet by @we_are_food. This is another recipe from the one tray chapter which would be great for our final #rainydaybitescookbookclub recipe challenge this weekend! Honestly, this was so tasty, that if it’s served with rice, it makes for a great vegetarian light meal. Cauliflower florets are dredged in a garlicky sesame flour coating and then baked until golden brown. The florets are then dredged in a sticky, sweet, and spicy glaze made from soy, maple syrup, sesame oil, rice vinegar, tomato puree, chili paste, garlic, ginger, and sesame seeds. It’s finished with more sesame seeds and green onion. Hot, sweet, sticky, and crunchy this was the perfect bite. I could eat like this every day! I’m excited for our weekend recipe challenges! Here's how we made it: 1 lb (454g) baby spinach, washed 1 can (540ml/19oz) navy beans, drained & rinsed (can use any bean of choice) 1/4 c sundried tomatoes, sliced (if using packed in oil, drain oil) 3 tbsp Evoo 2 cloves garlic, sliced Salt & pepper In a large deep pan, add evoo & garlic on medium heat. Do not burn garlic. When fragrant, add sundried tomatoes & spinach. Toss gently in oil & begin wilting the greens. Once wilted, add beans & toss. Season with s&p to taste. Salmon crudo mini toasts—little cutie pieces of brioche pan-fried in rendered pork belly fat, topped with labneh, chives, yuzu-marinated salmon sashimi, ikura/salmon roe, cucumbers, and dill. The darling dainty flowers are forget-me-nots. ⁣ ⁣ I’ve seen/visited a few sushi restaurants lately that have really fancy toasts on the menus. They usually involve wagyu and uni and even caviar but this is my more “budget-friendly” version of a sushi x toast mashup (and it still felt quite bougie to me)! ⁣ ⁣ I have been saving the fat that I skim off whenever I make braised pork belly and I’ve finally found an incredible use for it, which is pan-frying thick slices of plush brioche until the outsides are crispy and smell amazingly of pork. Sometimes there is nothing better than a really good cookie. A chocolate chip cookie is still one of my favorites, but make it with a chocolate base, add in brown butter, extra chunks of chocolate, and a touch of salt…then you have pure bliss in a bite. This is the brown butter double-chip cookies from One Pot, Pan, Planet by @we_are_food and it’s so good that I regret not doubling the recipe. One of the best things about this cookie is the texture. The edges are crispy, the center is almost brownie like, then you have the pools of soft melty chocolate, and the crunchy hit of salt. I really can’t think of a better cookie that I’ve had.
