But not your regular, run-of-the-mill dessert pie. 🥧❌ We’re talking the perfect ratio of bold spices, juicy chicken and layers of cheesy goodness with our Green Chili Chicken Tortilla Pie. 🤩 INGREDIENTS: 1 tablespoon preferred vegetable oil 1 medium onion, diced 2 garlic cloves, minced 1 teaspoon ground cumin 3/4 teaspoon fine sea salt 1/2 teaspoon chili powder 1 15-oz can of black beans, drained and rinsed 1 10-oz package frozen corn kernels 1 can Pacific Foods Organic Cream of Chicken Condensed Soup 1 4-oz can diced hot green chiles, drained 1/2 cup of green enchilada sauce 8 7.5” corn tortillas 2 cups shredded Mexican cheese 1/4 cup crumbled cojita cheese 1/3 cup sour cream 2 tablespoons chopped cilantro INSTRUCTIONS: Preheat oven to 400°F. Spray a 9” springform pan or a regular 9” cake pan with cooking spray. In a large skillet warm oil over medium heat. Add onion and sauté until softened, 4-6 minutes. Add garlic, cumin, salt, and chili powder. Cook, stirring, 1 minute more. Add beans, corn, soup, chiles, and enchilada sauce. Cook until bubbling. Place 1 tortilla in prepared pan. Break a second tortilla in half and arrange so it covers bottom of pan. Top with 1½ cups bean mixture and ½ cup cheese. Repeat with 2 more layers, using 2 tortillas per layer as above. Top with last 2 tortillas, and sprinkle with remaining ½ cup Mexican cheese and cotija. Gently press to help layers adhere. Bake until filling is warmed through and cheese on top is bubbling, 15-20 minutes. If desired, broil briefly to brown top. Let cool 5 minutes. Run a thin knife around inside of pan. Remove pan ring and cut tortilla pie into wedges (for a regular cake pan, cut into wedges and serve right out of the pan). Garnish with sour cream and cilantro. Serve immediately.

We hope today is extra special for you! ✨ INGREDIENTS: 1/2 cup butter (use vegan butter), melted 1 1/2 cups white sugar 1/2 cup brown sugar 2 egg 1 each egg yolk 1 1/2 cups all-purpose flour 3/4 cup oat flour 2 tablespoons unsweetened cocoa powder 1 teaspoon baking soda 3/4 teaspoon salt 1 1/2 cups Pacific Foods™ Organic Oat Original Plant-Based Beverage 1 cup quick oats 1 teaspoon instant espresso powder 10 ounces dark chocolate chunks, divided 3/4 cup butter, cut up 4 1/2 cups confectioners' sugar 1/2 cup unsweetened cocoa powder 4 tablespoons to 5 Pacific Foods™ Organic Oat Original Plant-Based Beverage 1 teaspoon vanilla extract INSTRUCTIONS: STEP 1 Preheat oven to 350°F. Generously grease a 9x13-inch cake pan; set aside. STEP 2 In a stand mixer, or in a large bowl using hand held beaters, cream the melted butter, white and brown sugars for 2 to 3 minutes, or until light and fluffy. Add the eggs and egg yolk; beat well. STEP 3 In a small bowl whisk together flours, first amount of cocoa powder, the baking soda and salt; add it to the wet mixture and stir until incorporated. STEP 4 Place first amount of oat milk in a small saucepan over medium high heat. Once rapidly boiling, add oats, stir once, then remove from heat. STEP 5 Let the oat mixture stand for a few minutes, then add the oat mixture to the batter; mix well. Stir in the espresso powder and half of the chocolate chunks. Pour into prepared pan. Sprinkle the top of the cake with the rest of the bag of chocolate chunks. STEP 6 Bake for 25 to 30 minutes. Let the cake slightly cool while you're making the icing. STEP 7 In a large saucepan over medium-low heat melt the cut up butter completely. Whisk in the second amount of cocoa powder, stirring until completely combined. Remove the pan from heat and add the confectioners' sugar, second amount of oat milk, and the vanilla. STEP 8 Once the icing is at a pourable consistency, pour over the cake, spread evenly, and add any sprinkles you may be using.

Dine at @metita.akl yesterday and ordered waaaaay too much than we could eat. Thankfully we can take that away. The roasted dishes were cooked to just the right level. The meats were juicy and tender not dry. The fried pork hock was interesting. I don't think I have eaten pork hock cooked this way. They also added Lao Gan Ma sauce on the top. I like the tomato watermelon salad in particular. It's very refreshing, especially having it in between the meat dish. POT ROAST • She ain’t pretty, but she sure is DELICIOUS! I made a lower carb pot roast, similar to one I made when I was on an anti-inflammatory diet. *100% Grass-fed local beef boneless for pot roast * @pacificfoods organic low sodium beef broth * organic red radish * red onion * organic celery * fresh rosemary and thyme I seasoned the beef with salt and pepper generously and let it come to room temperature. While it was resting I chopped up all the other ingredients and got them together. After the meat was ready I heated up my @lecreuset Dutch oven and added some oil (I used olive oil because I ran out of avocado oil). I browned all the sides and then removed the beef. I then added a tad more oil and browned the veggies. Once those were done I pushed the veggies to the side of the pot and placed the beef in the middle. I added the rosemary and thyme and the beef broth. I covered it and put it in a preheated 375 degree oven for 1.5 hours. After 1.5 hours I checked the liquid (for me it was ok, but if yours needs more add more), and put it back in the oven. I lowered the temp to 350 degrees for another 1.5 hours. Once it was done I cut the string off the pot roast and shredded it up using 2 forks and served it on top of a cauliflower puree (post coming soon). It was so good. Holy cow is this soup good!! I usually skip lunch, but today my belly was pulling an Audrey 2 and telling me to feed it 😂😂😂 I found this soup at Giant. I’m a sucker for a good tomato soup, but because I’m cutting dairy out, I can’t have it. This tomato soup has no dairy - it’s made with oat milk! Only 100 calories per cup, this fits well within my diet plan. I paired it with some Goldfish crackers and seasoned it up with hot sauce, cayenne and crushed red. Maximum flavor! 😄 INGREDIENTS: 1 tablespoon olive oil 1 ¼ pounds boneless, skinless chicken breast, cut into 1-inch cubes 1 carton (32 ounces) Pacific Foods™ Organic Creamy Butternut Squash Soup 1 cup Pacific Foods™ Free Range Chicken Broth 8 ounces uncooked fettuccine pasta 1cup frozen green peas, thawed ½ cup grated Parmesan cheese INSTRUCTIONS: STEP 1 Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook for 4 minutes or until lightly browned. STEP 2 Stir in the soup, broth and fettuccine and heat to a boil. Reduce the heat to medium-low.
