Vegetarian grape leaves Also known as , mehshi  or waraa enab, is a popular Middle Eastern dish, that is made with rice and vegetables , rolled in grape leaves and cooked in a juicy lemony sauce that takes this dish to the next level. *Ingredients: 1 jar grape leaves (16 Oz )  1 tomato sliced For stuffing: 2 cups short grain rice (masri rice) 1/2 cup  finally chopped green onions  2 cups finally diced tomatoes 2 cups  finally chopped parsley 1/4 cup finally chopped fresh mint 1/3 cup olive oil 1 Tablespoon dried mint 1 teaspoon black pepper 1 teaspoon sumac 1 teaspoon salt or to taste 1/2 cup lemon juice For sauce: 3 tablespoons olive oil 1/4 cup lemon juice 1 teaspoon salt 1/2 teaspoon black pepper 4 to 5 cups water * Directions: - bring a pot filled with water to a boil  add grape leaves and boil for few minutes  - Drain  grape leaves in a colander, rinse with cold water -Combine washed rice, tomatoes, parsley, green onions, fresh mint  Season with salt  pepper  sumac , dried mint ,add 1/2 cup  lemon juice and  drizzle 1/3 cup olive oil over the mixture. The other week my GF said she wanted to go out, and I proposed go visit this new mall which had some interesting food options (I originally though of a Russian place, which we'll visit another time). Mall is quite big, 5 stories high, food court is all the way to the top, but they call it the "gastronomic passageway". After walking around the whole mall, which also has some gardens in the outside, we wanted to eat. After looking at all the options in Palacio de Hierro, we decided to eat at @alandalus_mx We ordered the Lebanese platter. Dried jocoque, hummus (chickpeas), baba ghanoush (eggplant), shanklish (regional cheese), tabule/Tabbouleh (salad), 6 stuffed grape leaves, 2 keppe/Kibbeh balls (there is also a baked variety), 2 stuffed cabbage rolls, and one beef shawarma. You get a nice portion of their bread which is like a tostada, but you can also ask for some of their soft bread. Lemon/ginger water and lemon/spearmint water to wash down the food. So far, the best Lebanese food I've had, stuffed grape leaves were insanely packed with flavor, same with the stuffed cabbage rolls. Warm, moist, very flavorful meat inside. Shawarma meat was also freshly cooked, moist, tender, very flavorful. Kibbeh was outstanding, it wasn't as big as in some other places, but it was extremely flavorful, crunchy exterior with moist meat in the inside. All the sides were also great, never had shanklish before, it reminded me a bit of the Chiapas cheese with that bit of pungent taste which is characteristic of that cheese. It serves 2, and it doesn't seem like much, but we couldn't finish it and had to get a takeout bag. 2nd place for me is the small place in Walmart Felix Cuevas, we still like that one a lot. My GF said she liked their salad better and I liked their jocoque better (mainly due to the texture). These Stuffed Grape Leaves are bursting with flavor and make the perfect appetizer for any occasion! 🍇🌿😋 Ingredients: 1 cup uncooked long-grain white rice 2 cups water 1/4 cup olive oil 1 onion, finely chopped 2 cloves garlic, minced 1/2 cup chopped fresh parsley 1/2 cup chopped fresh mint leaves 1/2 cup chopped fresh dill 1/4 cup lemon juice Salt and pepper to taste 1 (16 ounces) jar grape leaves, drained and rinsed Directions: In a saucepan, bring the rice and water to a boil. Reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender and water is absorbed. Heat olive oil in a skillet over medium heat. Add the onion and garlic, and cook until tender and fragrant, about 5 minutes. In a mixing bowl, combine the cooked rice, sautéed onion and garlic, parsley, mint, dill, lemon juice, salt, and pepper. For our dolmas we used jarred leaves. They're actually pickled. It's quite delicious. Καλό μήνα σε όλους! Happy April to everyone! Today we have dolmadakia, which means little dolma. I fill the grape leaves with ground beef, rice, onion, mint, dill & parsley. In Greece they are either served with tzatziki or avgolemono sauce which is made from the broth they are cooked it. I prefer the avgolemono. This food is popular throughout the various cultures of the Eastern Mediterranean & beyond. Delicious Homemade Dolmades Recipe Ingredients: 1 jar grape leaves, drained and rinsed 1 cup uncooked white rice 1 onion, finely chopped 1/2 cup chopped fresh parsley 1/2 cup chopped fresh mint leaves 1/2 cup olive oil 1/4 cup lemon juice 1 teaspoon salt 1/2 teaspoon ground black pepper 1/4 teaspoon ground cinnamon 1/4 teaspoon ground allspice 1/4 teaspoon ground cloves 2 cups water Directions: In a large bowl, combine the uncooked rice, chopped onion, chopped parsley, chopped mint, olive oil, lemon juice, salt, pepper, cinnamon, allspice, and cloves. Mix well to combine. Place a grape leaf shiny-side down on a flat surface. Spoon about 1 tablespoon of the rice mixture onto the center of the leaf, near the stem. Fold the bottom of the leaf over the filling, then fold in the sides, and roll into a tight cylinder. Repeat with the remaining grape leaves and rice mixture. Arrange the stuffed grape leaves in a large pot, seam-side down, packing them closely together. Pour the water over the grape leaves. Place a heatproof plate upside down over the grape leaves to weigh them down during cooking. Cover the pot and bring the water to a boil over medium-high heat. Reduce the heat to low and simmer for 45 to 50 minutes, or until the rice is tender and cooked through. Remove the plate from the pot and let the grape leaves cool slightly before serving. Stuffed Grape Leaves (Dolmades) * Ingredients: * 1 jar grape leaves in brine (about 60-70 leaves) * 1 cup short-grain rice * 1/2 pound ground beef or lamb * 1 onion, finely chopped * 2 cloves garlic, minced * 1/4 cup pine nuts, toasted * 1/4 cup currants or chopped raisins * 1/4 cup fresh dill, chopped * 1/4 cup fresh mint, chopped * 1/4 cup fresh parsley, chopped * 1 teaspoon ground allspice * 1 teaspoon ground cinnamon * Salt and pepper to taste * Juice of 2 lemons * 1/4 cup olive oil * Water, as needed Directions: * Drain the grape leaves from the jar and rinse under cold water. Separate the leaves carefully to avoid tearing and set aside. * In a large mixing bowl, combine the rice, ground meat, onion, garlic, pine nuts, currants or raisins, dill, mint, parsley, allspice, cinnamon, salt, and pepper. Mix well to combine. * Place a grape leaf flat on a clean surface, smooth side down, with the stem facing towards you. Ingredients: . 1 cup rice 1 can chickpeas 3 cups minced parsley 3 cups diced tomato’s 1 cup diced onion 1 can rinsed chickpeas 1 jar grape leaves 2t salt Dash pepper 1/4c olive oil 2T sumac 1 cup lemon juice A few slices of potato A few slices of tomato . . Wash rice, allow to soak for 15m, then drain and combine with all the diced veggies, chickpeas, spices and olive oil. Drain the liquid and save. Wrap the rice with the leaves as shown in the video. Line the bottom of the pot with couple slices of potato to keep the grape leaves from sticking. Pack all the grape leaves together semi-tightly to fill the pot. Layer with tomato slices.Then add liquid from earlier and extra water water if needed until the grape leaves are just covered. Put something heavy like a plate or a lid on the grape leaves to push them down while they cook. Bring to a boil, then simmer for about 45 minutes or until the rice is cooked through. Just take one out and taste test till they’re done. Vegan Dolmades (Stuffed Grape Leaves) Ingredients: - 1 jar (about 50) grape leaves, rinsed & drained - 1 cup uncooked short-grain rice - 2 tablespoons olive oil, plus extra for drizzling - 1 large onion, finely chopped - 3 cloves garlic, minced - 1/4 cup fresh dill, chopped - 1/4 cup fresh parsley, chopped - 2 tablespoons fresh mint, chopped - Zest of 1 lemon - 2 tablespoons lemon juice - Salt & pepper, to taste - 1/4 cup pine nuts (optional) - 1 cup vegetable broth Instructions: 1. Prepare the grape leaves by carefully unfolding them & removing any stems. Set aside. 2. Cook the rice according to package instructions until it's just underdone. It should still have a slight bite to it since it will cook further when the dolmades are steamed. Set aside to cool. 3. Heat the olive oil in a large skillet over medium heat. Add the onion & garlic, & cook until they are soft & translucent. 4. To the skillet, add the cooked rice, dill, parsley, mint, lemon zest, lemon juice, salt, pepper, & pine nuts if using. Stir well to combine & cook for another 2-3 minutes. Remove from heat & let the mixture cool slightly. 5. To assemble the dolmades, lay a grape leaf flat on a work surface, shiny side down. Place a small spoonful of the rice mixture near the stem end of the leaf. Fold the stem end over the filling, then fold in the sides & roll up tightly into a neat parcel. Repeat with the remaining leaves & filling. 6. Place the rolled dolmades seam-side down in a large pot. Drizzle with a little more olive oil & pour the vegetable broth over them. The broth should come about halfway up the sides of the dolmades. 7. Place a plate on top of the dolmades to keep them submerged, then cover the pot with a lid. Simmer gently for about 40-50 minutes, or until the grape leaves are tender & the rice filling is fully cooked. 8. Let the dolmades cool in the pot before serving. They can be served warm or at room temperature.
