These vegan cavolo nero 'sausage' rolls from @nadiashealthykitchen are really simple to make using ready rolled pastry - and sure to go down a treat if you’re entertaining guests of all ages! 💚Ingredients 1 tbsp olive oil 2 garlic cloves, crushed 1/4 onion, chopped 100g cavolo nero, central ribs removed and chopped finely 2 tbsp lemon juice, from an unwaxed lemon 2 tbsp tomato puree 5 tbsp water 1 ½ tsp paprika ½ tsp chilli powder 5 vegan sausages, cooked according to pack instructions 375g ready rolled Vegan puff pastry 💚Instructions 1. Preheat your oven to 200C/180C fan. 2. Heat the olive oil in a pan and cook the onions for 5 minutes. Add the garlic, cavolo nero, lemon juice, water, tomato puree and spices and cook for a few minutes until the cavolo nero is wilted. 3. Break up the sausages into the pan and season with salt & pepper. Mash everything up using a potato masher until everything is well combined and heated through. 4. Allow to cool before moving onto the next step. 5. Roll out the puff pastry sheet and cut into 2 even rectangles. Spoon the filling along one long edge of pastry strip. Brush the other long edge with dairy-free milk or egg wash. Roll up to enclose filling and form rolls. Cut each roll diagonally into 4 pieces. Place on a greased baking tray and brush the top with more dairy-free milk/egg wash. Sprinkle some sesame seeds on top and bake for 20-25 minutes until golden brown. 6. Ingredients: 300g boiled potatoes 🥔 250g silken tofu 🌱 50g cooked peas 🌿 250g cooked green lentils 🍃 1 tsp salt 🧂 2 tsp garam masala 🌶️ 2 tsp garlic powder 🧄 1 tsp turmeric 🌼 1 tbsp lemon juice 🍋 1 sheet dairy-free puff pastry 🥐 1 tsp plant-based milk (for sealing) 🥛 Method: 1. Preheat your oven to 190°C. 2. Mash the boiled potatoes with silken tofu until creamy. 3. Add cooked peas, lentils, salt, spices, and lemon juice. Mix thoroughly. Slice puff pastry lengthwise into two strips. Spoon filling down the centre of each strip. Fold pastry over filling, seal edges, and cut into individual rolls. 4. Arrange rolls on a lined baking tray. Bake for 30 minutes until golden and crispy. Let’s be honest- things always taste better when they are homemade 😉 🧑🏼🍳 To make these delicious Cheezy Kale & Cashew Sausage Rolls, you will need: •1 Box of cheezy cashew & kale sausages •1.5 sheets of vegan puff pastry 1/4 cup of vegan cheese •1 tablespoon of olive oil •2 tablespoons of soy milk •3 stems of thyme •2 tablespoons of sesame seeds •Salt and pepper •Tomato relish or sauce (to serve) or if you have some Syndian dips on hand, this one would taste delicious with beetroot relish 🤤 Method 👇🏽 •Preheat oven to 180 degrees •Slightly defrost sausages in microwave •Slice pastry into 1/4 squares then place a sausage on one end, sprinkle vegan cheese, salt and pepper and thyme and then roll tightly (repeat with all 6 sausages) •Place onto a baking tray with baking paper and seal the pastry with olive oil and brush with soy milk •Cook for 25 then take out and add sesame seeds on top, cook for an additional 20 minutes or until golden brown. •Slice with a sharp knife into bite size pieces and serve with dip of your choice! ☀️Perfect for enjoying outside in the sun with the fam over the long Easter weekend 💕 #vegansausagerolls #syndian #glutenfree #veganrecipe #veganfoodshare #veganbusiness

Saturday was a good day. It was @stockportmakersmarket which can only mean one thing. I collected my regular order of pies from @theveggiepiecompany then I went to @marksandspencerfood to stock up on my new favourite lasagna to have in the freezer. There was an added bonus of a vegan cheese stall at the market. I’ll make a separate post once I have given it a try. I also found an apple scented vegan shampoo, which is made by my favourite @astonishcleaners To top it off Got To Be There by Michael Jackson came on the radio as I drove home. Vegan Sausage Rolls (Using Carrot and Nuts) Ingredients: For the Filling: - 1 large carrot, grated - 1 cup mixed nuts (such as walnuts, almonds, and cashews), finely chopped or ground - 1 onion, finely chopped - 2 cloves garlic, minced - 1 tablespoon soy sauce (ensure it's vegan) - 1 teaspoon smoked paprika - 1 teaspoon dried thyme - 1/2 teaspoon ground black pepper - Salt to taste - 1 tablespoon olive oil For the Pastry: - 1 pack vegan puff pastry (thawed if frozen) - Plant-based milk for brushing Instructions: 1. Make the Filling: Heat olive oil in a pan over medium heat. Sauté onion and garlic until softened. Add grated carrot and cook for 2-3 minutes. 2. Add Nuts and Seasonings: Stir in the ground nuts, soy sauce, smoked paprika, thyme, black pepper, and salt. Cook for another 5 minutes, until the mixture is well combined and slightly browned. Let the filling cool down. 3. Preheat Oven: Preheat your oven to 400°F (200°C). 4. Prepare the Pastry: Roll out the vegan puff pastry on a lightly floured surface. Vegan sausage rolls with tofu feta and kale. I used the tofu feta recipe from @avirtualvegan. It’s so simple to make and really transforms your firm tofu to a tasty crumbly feta. Just whizz up in a food processor one block of firm tofu, nutritional yeast, ACV, lemon juice, onion powder, garlic powder, dill, salt, pepper and refined coconut oil. Saute the kale and add that to the food processor. Check the flavor is good to go then roll up in some vegan puff pastry. VEGAN LENTIL & WALNUT SAUSAGE ROLLS 🤶 These were pretty banging if I do say so myself and were very approved by work friends 😎😎😎😎 Would be PERFECT for Christmas!!!! So easy to make as well the filling took like 20 mins to make!! YOU WILL NEED: - 1 red onion - 2 tbsp minced garlic - 3 tbsp oil - 400g dry lentils - 1 vegetable stock cube - 1000ml water - 3 tbsp Tomato puree - 1tsp Salt - 1 tsp Cinnamon - 1 tsp Cumin - 1 tsp paprika - 10-15 fresh sage leaves - 1 tbsp Lemon juice - 3 tbsp Nutritional yeast - 100g walnuts chopped - vegan puff pastry (I used @jus_rol ) - Flour RECIPE: > in a pan fry onions and garlic > after a few minutes add in the lentils, stock cube, water and tomato purée > continue stirring and add more water as needed for the lentils to absorb > when the lentils are almost fully softened, add in the rest of the ingredients and then cook off until as much water as possible has evaporated as you don’t want the filling to be too wet!! > leave to cool SEE PHOTOS TO GO ALONG WITH THIS > roll out the puff pastry on a floured surface, to about 1/2cm thick > cut out rectangular size shapes of how long you want your rolls and add in a sausage shaped roll of your mixture on one side nearer to the middle > on the other half, make 2 thin slices in the pastry with a knife > fold over and then seal with some water and a fork > brush with soy milk and then bake in the oven on some oiled baking paper at 170 degrees for 20-30 mins or until golden brown on top > serve!!
