They use local, organic ingredients when possible and focus on accents of fresh herbs and vegetable powders. This is what we savored: Deviled Eggs – these magical 🐔🥚-free delicacies have luscious rich, creamy, and zesty 🥚 yolks and stunningly authentic-tasting firm but tender 🥚 whites, topped with paprika and dill. Fabulous. (gluten- and nut-free) Huancaina – oven roasted potatoes, carrots, and craggy tofu topped with a nutritional yeast cream sauce. The traditional Huancaina sauce, which originated in the Huancayo region of Peru, is made with 🥛 and 🧀 from 🐮. This nutritional yeast-based version was luscious and flavorful. (gluten- and nut-free) Chacarero – this 🐮-free version of a Chilean steak and green bean sandwich has savory, seasoned, meaty house-made fried seitan, green beans, creamy smashed avocado, juicy tomato, and chive aioli. It was full of flavor and satisfying. (nut-free) Sopa – hearty pinto bean, corn, and butternut squash soup. It was warming, comforting, flavorful, and protein-packed. Once in a while I think back on the people who told me that I couldn’t do it. That going vegan would make me anemic, protein deficient, I would develop an ED or a bl**d disorder.🙄 Where would I be right now if I had listened to all of them? If I had allowed them to scare me right back into the SAD* way of eating. Instead I’m nearing 32. I’m healthy. My menstrual cramps are still a thing of the past. My brain is still free of mental fog. My blood pressure is still ✨PERFECT✨ to quote my doctor (despite my family history of everyone developing HBP by my age🤔). And I’m still free and clear of those pesky pounds that I lost when I made the switch. 🌍 Priemyselný chov dobytka má obrovský environmentálny dopad, a jedným z najalarmujúcejších aspektov je jeho príspevok ku globálnemu otepľovaniu. 🌲🌳🌿Odlesňovanie na výrobu krmiva pre dobytok je jedným z hlavných faktorov, ktoré prispievajú k tomuto problému. Každoročne milióny hektárov pralesov sú vykynožované na výsadbu sóje a kukurice určenej na kŕmenie dobytka. Táto masívna odlesňovacia činnosť nielenže ničí cenné ekosystémy a prispieva k strate biodiverzity, ale tiež má vážne dôsledky pre klímu. 🌲🌳🌿Odlesnené plochy strácajú schopnosť absorbovať oxid uhličitý z atmosféry, čím sa zvyšuje množstvo skleníkových plynov v ovzduší. Okrem toho sa pri odlesňovaní uvoľňuje veľké množstvo uhlíka, ktorý bol uložený vo vzduchu, čím sa ešte viac prispieva k globálnemu otepľovaniu. Tento cyklus odlesňovania a emisií skleníkových plynov vytvára neudržateľný trend, ktorý vážne ohrozuje stabilizáciu klímy a zhoršuje jej extrémne účinky. 🌱Presun k rastlinnej strave sa javí ako jedna z najefektívnejších odpovedí na túto problematiku. Apro il frigo e trovo un bel mazzo di asparagi 😍 ⚡️Asparagi alla griglia ⚡️ Hummus ai pomodori secchi ⚡️🤤 Tempo di preparazione 20 min. Tra l'altro con questo piatto ho inaugurato la mia nuova padella di ferro fuso di Lodge, per una cottura salutare e naturale. Il ferro è un materiale che riduce al minimo la cessione di sostanze nocive al cibo che ne viene a contatto. Questa padella è compatibile con fornelli ad induzione. I painted these pig-tailed macaques a while back, having learned about their widespread use and abuse in the Thai coconut farming industry. This past Tuesday was #WorldDayforAnimalsinLaboratories, and today I learned that these monkeys are also among the most commonly used in labs for scientific research. I just came across a post by @madeline_krasno who spent two years working at @uwmadison’sHarlow Primate Laboratory as a student animal caretaker. As a result of her time in the lab, she suffers from PTSD and has cofounded @whenwejustify, a non-profit group which supports former lab workers and advocates for a world where science does not harm humans or animals. This is an excerpt from her post on Tuesday: “There is a false notion that animal research is pumping out life-saving cures and treatments for humans with every animal it ‘sacrifices’ and that’s simply not true. …But when you critique this industry, you’re criticized for not caring enough about human suffering. [As if] exploiting and killing animals equates to human lives saved every day, when these billions of dollars would actually save human lives at more promising rate if invested directly into accessing resources that already exist, like healthcare, food, clean water, shelter, mental health services, medication, and so on … Animal research thrives in an ambiguous space where the ethical considerations of animal welfare, worker psychological well-being, financial cost, and likelihood of desired outcome, are overshadowed by the *potential* benefits of scientific progress – not the actual benefits. It is always a joy to return to all-vegan @lillapdx, which serves up delicious 🌱-based Italian cuisine including pasta dishes, pizza, and more. Their skillfully veganized versions of traditional Italian dishes are both elegant and comforting, keeping all the flavor and satisfaction while leaving animals off our plates. There are many gluten-free options.    @lillapdx is open for pickup, delivery, and on-site dining every day 11 AM – 9 PM.    This is what we savored:     Orecchiette Kale Alfredo – orecchiette pasta with kale and mushrooms plus smoky authentic-tasting 🐷-free @thrillingfoods Bakon™ in a rich, savory, creamy 🌱-based Alfredo sauce, and topped with microgreens and 🌱-based parmesan cheese. The combination of flavors was delicious and satisfying, and it was wonderful how the tiny ear-shaped orecchiette pasta cupped around the other ingredients. Gluten-free pasta is available from @rallentipasta.     Asparagus Risotto – rich, creamy, and pleasantly chewy risotto with fresh, young, tender asparagus, plus 🐷-free @thrillingfoods Bakon™, and topped with microgreens and 🌱-based parmesan cheese. Even though people used to think only white people were vegans, it's important to know that lots of Black Americans are actually choosing to go vegan. In fact, Black Americans are almost three times more likely to be vegan than most other people. As fast-food restaurants popped up in African American neighborhoods, they brought in cheap, unhealthy food with lots of calories but not much nutrition. These companies advertised a lot in the Black communities. Because of this, Black Americans went from eating lots of healthy, high-fiber foods to hardly eating any by 1996. This targeting of the community continues today, making it harder for us to get healthy food. As a result, Black Americans are experiencing more chronic diseases, disabilities, and early deaths. So, just because something is called vegan doesn't mean it's automatically good for you. And if a product says it's plant-based, it could still have meat or dairy in it! So, don't just rely on the vegan label. Always read the labels and ingredients list. If you see ingredients you don't know or can't say, it's best to skip that product. Check carefully to make sure there's no meat or dairy in the food. Why skip meat? Because it can cause inflammation in your body. While you might find studies that seem to support eating meat, remember that these studies could be funded by the meat industry. When it comes to dairy, many people of color can't digest cow's milk (75 to 80 percent are lactose intolerant). That's why avoiding dairy can be a smart choice for many. Let's ‘take back our health’ by being aware of what we eat — go beyond vegan! Creamy Miso Broccoli Soup with Spicy Chickpeas recipe Dr. Ayesha Sherzai @thebraindocs This is an easy to make, delicious soup. Posted March 28, 2024 by @thebraindocs this video has a list of ingredients only. See pictures for the list. I did my best to follow along with the video and jot down the directions. Of course, I did not follow exactly, as I don’t use oil. *I soaked 1/2 cup of cashews in boiling water for 5 minutes and set aside. *In a big soup pot, I sautéed 1/2 a diced yellow onion in some no-sodium veggie broth, then added 5 cloves pressed garlic and 1/4 tsp turmeric. I added a combination of chopped broccoli and Romesco (green) cauliflower, 4 generous cups, plus a diced carrot. After this cooked for a few minutes, I added the 5 cups of veggie broth, 2 T miso (less than recipe), 3 T nutritional yeast (more than recipe), 1 T low sodium tamari, 2 T lemon juice, 1/2 T date syrup, fresh ground pepper. I rinsed and drained a can of cannellini beans. I put half of the beans in the soup. The other half I put in my food processor with the soaked and drained cashews and a few spoonfuls of the vegie broth. I blended this until smooth, then added it to the soup. For the chickpea topping, I started with a can of rinsed and drained chickpeas, 1 T sesame seeds, 1/2 cup chopped broccoli plus a bit of diced bell pepper. I added 1 T gochujang (less than recipe), 1T sesame seeds (less than recipe) 2T low sodium tamari, 1 T date syrup and 3 T hempseed (to replace the breadcrumbs). I tossed everything in a skillet with a splash of water to prevent sticking. It took about 5 minutes to cook and sizzle. I got 8 1/2 cups of soup and about 2 cups of topper. This soup is lovely and rich. The topping adds a nice kick. I was worried 3 T of miso would be too strong, so I only added 2 T today. But I will try it with all 3 T next time (and I will try red miso). It gave the soup depth.

The uniquely delicious Sri Lankan cuisine of all-vegan and BIPOC worker-owned @mirisata keeps us coming back for more and continues to delight us. Mirisata loosely translates from Sinhala to “spicy curry.” There is indeed a range and choice of 🔥 levels, and everything is bursting with lively, vibrant flavors. For those who prefer a mild level of 🔥, they have a helpful menu guide on their website. Also, for those who avoid gluten, nuts, and/or soy, the menu items are clearly marked with respect to these.    @mirisata is open for pickup, delivery, dine-in, and covered patio seating every day: Mon – Thurs 12 – 8 PM, Fri 12 – 9 PM, Sat 10 AM – 9 PM, and Sun 10 AM – 8 PM.     This is what we savored:    Rice and Curry Meal – served on a banana leaf, this varies week to week and always has a fabulous variety of flavors and textures. It’s also always gluten-free and soy-free by default. We had them add chick’n curry, which contains gluten and soy. This one had (clockwise from top):    Deviled Potatoes – chunks of potato stir-fried in coconut oil with onions, curry leaves, mustard seeds, and green chilies.    Chickpea Curry – chickpeas simmered in a coconut gravy with onions, green chilies, mustard seeds, curry leaves, and rampe.    Takkali Sambol – refreshing salad with sliced tomatoes, onions, green chilies, and lime juice.    Tempered Carrots – stir-fried in coconut oil with onions, curry leaves, garlic, green chilies, and mustard seeds.    Dahl – masoor dahl tempered with onion, curry leaves, cumin, and mustard seeds.    Pol Sambol – fresh grated coconut mixed with chilies, curry leaves, and lime juice.    Chick’n Curry – spicy, smoky vegan 🐥 curry made with roasted spices, lemongrass, ginger, rampe, curry leaves, onions, garlic, and coconut milk (center).    Yellow Rice – basmati rice cooked with rampe, coconut oil, vegetable broth, and saffron (underneath).    Papadam - Crispy fried crackers made from lentil flour (not shown)    Enjoyed with:    Parippu Vade – crispy spicy fritters made with split pigeon peas, onions, red chilies, and curry leaves. Lemon butter pasta + Apple mango pudding from @iveganrestaurant I know carb loading is usually done before working out but I did it the other way around #sorrynotsorry 😁 I was at the gym and I kept on thinking, “I want pasta”. I found it so interesting that the dish was spicy but also light and fresh on the palate. I also liked the dessert, which made me too full 😋 I got curious about the Beetroot Pizza but it was out of stock. Will try next time, plus other recos 🌱 I’ve ordered from them years back— a breakfast burrito, then burgers for my team (I buy people vegan food to encourage them to eat plantbased). Golden ‘Milk’ with a twist! #goldenmilksmoothie First off, 🙏🏼💛you too @lisa_healthymantra for happily helping me craft it this weekend! Using only Whole Foods, some dried when I couldn’t get fresh, I created the ultimate anticancer smoothie! In a blender, here are the very unusual ingredients. Don’t worry, I didn’t know what half of them were before either! Ayurvedic medicine and Indian spices have been a major source of inspiration. The star here is Amla powder which is an Indian gooseberry, and it has almost the highest antioxidants in a food source on this Earth. The other star ingredient which you will know is Tumeric. Combined with black pepper, Tumeric is more bioavailable and known to fight cancer. This alone (with fasting) helped me shrink my tumours by 50%, (taking a dose three times per day) and quite quickly as well (21 days). I’ve switched from fresh roots to powdered for now just because I was getting tired of all the yellow staining. But I will go back to it as I believe the fresh source is always better. You will want to research these ingredients if you are healing cancer yourself, or caring for someone who is. Golden milk smoothie, in a blender, blend: Half teaspoon Amla powder Half teaspoon turkey tail mushroom mix Half teaspoon pure cocoa powder Dash of cinnamon, cloves, ground cardamom (A friend made me a mix I can just use) Because I used no milk, including the processed almond kind, I used instead Jason winters tea cooled, half an avocado, quarter banana, tablespoon almond butter. This made the smoothie creamy and liquidy, without adding too many carbohydrates as insulin regulation is a big part of this journey. I also add a scoop of IP6 inositol, which I dose two times per day. It has proven anti-cancer effects including slowing progression, stopping metastasis, and reducing tumour growth. This deluxe burger was intensely satisfying.       Chicken Caesar Salad – romaine and seasoned croutons tossed in a creamy, tangy, garlicky cashew Caesar dressing with savory, meaty, seasoned 🐥-free tofu cutlets that had crispy edges and were tender inside. Easy, 10 Minute Spinach Pasta Recipe Ami-James Deane @broccoli_mum I love a dish that comes together quickly, and this was perfect for a busy night. Ami did not specify amounts for all the ingredients, so I guessed at some quantities. Original recipe in pictures.l, or see her post from April 1. 1 bag of spinach (mine was 5 oz) 1 block of firm tofu (mine was 16 oz) Juice of a lemon (I used 2 T) 1 tsp garlic salt (I used garlic powder) 1/3 cup nutritional yeast (I used 6 T) 1/4 cup plant milk (I used soy) Favorite pasta (I used 10 oz red lentil, and could have used 13 oz) I put the spinach I boiling water for 1 minute, then added it to the food processor with everything else (except the pasta 😁). I blended until I had a lovely green sauce. I transferred the sauce to a large glass bowl, and microwaved it for 2 1-minute intervals, stirring in between to warm the sauce. I cooked the pasta, drained it, put it back in the cooking pot and stirred in the sauce. Done. I served this dish topped with almond “parm”, plus fresh veggies on the side. My husband put diced tomato and hot sauce on his. I thought this tasted nice. My husband did not like the texture of the tofu sauce. So I am eating the leftovers. I got 7 cups of food. Next time, I would try silken tofu and cashews or substitute white beans. She was due for a treat. She says Love Organic Cafe was great food and great service. And yes, unfortunately I have to mention “high protein” yet again because it was brought up by someone this week as to why they couldn’t bear to watch the videos of the animals in the factory farms. This person said it would be too hard to watch and they needed their protein, therefore they couldn’t stop eating meat. They brought up the topic and volunteered all this to me. 🤷🏼‍♀️ I mean, how many vegan athletes, vegan bodybuilders, and high protein vegan meals do I need to post? Answer: no amount will suffice. Yesterday was Earth Day and though I was celebrating our planet all month long, yesterday I was especially thankful and intentional about enjoying my home on this planet and being so aware of how incredibly blessed I am. Not only has our Earth provided my home, it has provided a home for my loved ones and friends, provided me healing food, medicine, and clothes as well as experiences that will last forever. Each of us are incredibly blessed to be here on this planet and it is important we take care of her 🥰🙏🏽. We were happy to visit all-vegetarian, mostly vegan @harlowportland to nourish and revitalize ourselves with some delicious vegan comfort food at their new location on SE Division, which has an expanded menu, more seating, a heated outdoor patio, zero proof cocktail bar, and more. The cuisine focuses on local and organic; everything is either vegan or has a vegan option; and it is all gluten-free. Topped with shredded lettuce, cilantro, and jalapeño cashew sauce. Such an impressive, innovative, and delicious way to prepare tempeh.     Our Favorite Beet Reuben Sandwich – tender, earthy, spiced and roasted beet slices, vegan 1000 island dressing, sauerkraut, and melted vegan mozzarella on a toasted gluten-free baguette. This had a satisfying mix of complementary flavors.
